Throughout the ripening period and harvest, vines are closely managed to yield grapes exhibiting a concentration of flavours, good colour and lovely ripe tannins. Fruit is sourced from vines up to twenty five years of age and de-stemmed into open fermenters. Parcels are inoculated and vinified at temperatures between 26ËšC and 30ËšC, treated to a careful plunging for the gentlest extraction of colour, flavour and tannins. Pressed and fermented to dryness before transfer to barrel for malolactic. Components are matured in exclusively French oak barriques for over a year, before being racked, assembled and lightly fined.
 
Dark crimson red with scarlet hue. Aromas of blackcurrant and mulberry spice are complemented by hints of classic Margaret River bay leaf and dried herbs. A rich, supple red wine displaying flavours of cassis and mulberry fruit with an underlying sweet oak spice. The palate persists with its great length of fruit characters, generous and completely integrated, finishing beautifully rounded with fine, powdery tannins.

The Daisy Hill district thrived throughout the 1850s, due to its location along the main route to and from gold fields. The Amherst property sits atop old alluvial tailings, ancient diggings can still be seen around the property dressed in rich quartz soils. The highly sought wines pay tribute to the heritage surrounding the vineyard. Amherst distinguishes its exceptional vintages, naming them after regional folklore, such as an escaped convict who was the first to cultivate local land, or the ancient Chinese market gardens, which dispensed fresh produce to the gold fields of yesteryear.

Positioned half way between Avoca and Ballarat, the modestly sized Amherst have only ten acres under vine. The small yields translate into extraordinarily structured, powerfully intense wines, brimming with fine aromatics and lined with silky tannins. Local folklore has it that a shepherd discovered gold at Daisy Hill in 1848, the region flourished and suitably arable parcels were planted to vine in the 1850s. The enduring, full bodied Aussie Claret style, supple and soft after fan extended maturation in quality oak barriques, thoroughly approachable as a youthful wine.

Vinified from parcels grown to splendid Pyrenees vineyards, fashioned to be a generously proportioned wine with generous weight of fruit and firm, meaty tannins. Grapes are all hand picked, destemmed and inoculated for several days of ferment, basket pressed into a selection of new and seasoned oaks for an extended term of age. Enticingly perfumed of violets and morello cherry, a palate entry of blackberries and plum, spiced chocolates and prune over a fine structure of dutch chocolate tannins, a fully fragrant finish of blueberries and bramble over refined vanilla pencil oak.

Samuel Dunn was an early Amherst resident, one of the first settlers to plant grapes in the Pyreness. His land was exploited for sheep grazing, until diggers found the locality alive with gold. The property was returned to viticulture in the 1990s and has since earned a reputation for limited releases of the finest Pyrenees wines. As with all vintages of Amherst, the amount of oak and alcohol are kept in check to ensure that the wine remains in perfect balance, the tannin structure is soft and very fine. An attractive prospect alongside well marbled beef and the finest haute cuisine.

Amherst is a town rich with colourful history and local folklore, site of the first official gold find in 1851, it launched a mining rush which expanded throughout central Victoria. The district's long association with viticulture is also prolific and colourful. Vines were planted here in the earliest days of settlement, many of the miners turned their efforts to winegrowing or constructing cellars for the burgeoning wine industry. A superior single site Shiraz from fruit grown to elite parcels, a mere hundred dozen, bottled with minimal fining and filtration to preserve the integrity of a great vineyard.

Hand picked fruit and a measure of whole bunch clusters, barely crushed and cold soaked for a wild indigenous yeast ferment, gently plunged and delicately pumped over, to extract gross solids while preserving textural integrity, followed by an extended soak up of optimal tannins and ten months maturation in good French oak. Youthful aromatic expressions of sweet red cherries, mulberries and plum, a fully complex and lingering palate, the oak is light and subtle to complement the fine grained tannins, juicy winegum flavours and savoury, morello acidity.

A single magnificent parcel of Pinot Noir vines, planted to the gravelly Lochar soils of a rocky knoll on Amisfield Block in Central Otago 1. The parched plantings send their roots deep into the inhospitable terrains, struggling for water and yielding meagre harvests of the most intensely flavoured fruit.

Grapes are all hand picked, some whole bunches are included and a component of the wine begins its ferment amongst the vines. A month of cold macerations and natural indigenous yeast vinification is followed by a gentle press into a selection of seasoned and new French oak barriques for completion of malolactic, a judicious term of age, rack and return, before bottling, unfiltered and unfined.
 
Deep dark beetrot red. Complex bouquets, layers of dark berries and red fruit intertwine with delicate spice. The palate exhibits marvelous power and restraint, a lineal backbone of vibrant acidity in support of a broad mouthfilling, textural canopy of savoury varietal fruits, fine black velvet tannins in support, simply an action packed palate before a lengthy, undulating finish.
