A predominantly Syrah wine with a de rigueur inclusion of good Viognier, all picked off a superior low yielding Adelaide Hills vineyard. An outstanding and engaging new world articulation of the timeless Rhone Valley style, elegant and refined, an underlying sense of power and depth of flavour, a delight to share alongside appropriately five star cuisine.

$3399each $407DOZEN EACH DOZEN From a choice site in Adelaide Hills near Echunga, off vines planted to well drained, granitic soils, 410 metres above sea level. Fruit is completely hand harvested and placed into small, traditional open top fermenters. A component of whole bunches is introduced, vintage permitting, to initiate partial carbonic maceration, extract fine stem tannins and enhance complexity. Temperatures are kept between a wide range of 15C and 34C throughout a fortnight of vinification, while treating the ferments to cap management regimens of hand plunging and pumpovers. The finished wine is treated to a extended term in a selection of seasoned and new, large format French barrels and smaller oak puncheons.

Deep purple red colour. Highly perfumed, vibrant and complex, floral notes of violet and dried herb, red currants and hints of black liquorice. Juicy black fruits with a measure of peppery spice over gently integrated dry, earthy tannins.

Stephen Pannell is one of Australia's most decorated winemakers, Jimmy Watson and twice Max Schubert Trophy winner, London International Winemaker of Year and Chairman National Wine Show. He found time in between tours of duty at Wirra Wirra, Tintara and BRL Hardy, to do vintage in Burgundy, at the illustrious Mouton Rothschild and amongst the grand old vines of Barolo. A choice parcel picked off a propitious block along Field Street has been cossetted from the artifice of winemaking, to eloquently articulate the scope and refinement of McLaren Vale Shiraz.

$3099each $371DOZEN EACH DOZEN A single vineyard wine, from parcels of Shiraz picked off fully mature blocks around the Pannell cellar works at Olivers Road. The west facing vines were originally established in the 1970s and are stimulated by the invigorating Mediterranean winds off Gulf St Vincent. Fruit is treated to a fortnight's vinification on skins in tradtional fermenters, followed by eleven months maturation in a selection of seasoned and new, large format, 2800 Litres French oak vats.

Bright garnet red. Animated nose of violets and dark fleshy fruit, currants and festive cake, peppery plums and punnets of ripe fresh berries. A generous palate that's all about fruit, pastorals and aromatic earth, pliant, licorice textures over a length of yielding, ethereal tannins. The McLaren Vale of choice to accompany game recipes, wild birds and lamb.

A mostly Old Vines Grenache, redolent with lifted aromatics and dulcet fruit flavours over a length of refined, sandy tannins. Shiraz contributes red berries, spices and palate weight, Touriga brings pungency, plum pudding, dried herb and floral notes. Mataro adds textural tannin structure and the perfumes of Provence. SC Pannell GSTM is so much more than the sum of parts, a complex and edifying old world recipe of grapes, fashioned to a style which will enthuse and delight all true red wine zealouts.

$3299each $395DOZEN EACH DOZEN A rich McLaren Vale cépage, two thirds Grenache, a fifth of Shiraz, the balance in Touriga and Mataro. All parcels are hand harvested, crushed and traditionally vinified in small open top vessels to optimise flavour, colour and tannin extraction. Temperatures are kept between 15C and 35° over the course of a fortnight, as fermenting caps are treated to a course of hand plunging and pumpovers. Upon completion of ferments and malolactic, batches are transferred to a selection of well seasoned 500L French oak puncheons for several months of age.

Dark ruby colour. Lifted fruit notes of cranberry and cherries, interwoven with lovely dried spice, cumin, lavender and graphite. A highly flavoursome, medium bodied wine, its silky palate of ripe berry, dark olive and sweet fruit flavours is supported by a fine length of integrated tannins, culminating on a balanced, lingering finish. A splendid synergy with good food.
