Yabby Lake are well positioned to produce the most generously proportioned styles of new world Pinot Noir, vinified to traditional Burgundian techniques. Significant resources have been devoted to developing Yabby Lake's vineyard to the highest possible standard. An assemblage of Pinot Noir clones MV6 and G5V15, clones 114, Pommard and Abel for structure and complexity, the inclusion of a parcel clone 115 imparts layers of elegance, rich fragrant aromas and a long silky palate.

$3099each $371DOZEN EACH DOZEN Every aspect of Yabby Lake vineyard's establishment was fundamenal to the success of its wines many years later, from soil mapping to climate analysis to vine layout. Selection of site was the priority, the vineyard was planted from the ground up to the most exacting requirements. Pruned and closely managed vines, yield limited harvests of intense flavour, translating into well balanced wines. A mixture of destemmed and whole bunch fruit are filled into open fermenters for three days of cold soak. A week or more of ferments is followed by transfer to a selection of French 500 litres oak puncheons for ten months maturation, a final racking and assemblage into the finished wne.

Deep crimson in colour. The aromas are dominated by cherry, strawberry and dark berry fruits complemented by a touch of spice and underlying French oak. The palate has a lovely soft and velvety texture, with powerful flavours of dark fruits and a finely structured finish. Have it with duck or venison, game dishes and washed rind cheese.

An exciting cépage which may vary slightly from year to year, mostly a Shiraz wine sourced off younger Heathcote plantings, a tenth of Mourverdre and small percentage of Riesling. Mourverdre contributes plummy fruit to the nose, juciness and flesh to the palate. Riesling adds an aromatic lift within a slightly spiced floral perfume. An engagingly aromatic, satisfyingly proportioned and generously flavoured wine, to match with rare breast of duck dressed in rhubarb or charred scotch filet under mushroom jus.

$2599each $311DOZEN EACH DOZEN Red Edge are crafted with minimal intervention, allowing the vinification to proceed through it's natural course, ensuring it retains the full expression of terroir. Partial whole bunch maceration, wild yeast fermentations, hand plunging in small open top fermenters, basket pressing, partial barrel fermentations and racking by gravity without any fining or filtrations, are employed to achieve a wine with a sense of place, season and time. The vines are all dry grown, hand pruned and hand picked, they yield less than 2½ tonnes per hectare. The finished wine is treated to a year's maturation in a selection of prior use, two to five year old French oak barriques.

Dark red colour. Licorice and spice bouquet, with red berry fruit aromatics. Full, juicy flavours on the palate, with soft round tannin structure. A little brother to the magnificent Red Edge Heathcote Shiraz, but no shrinking violet when it comes to raw ripe power! Offers immediate appeal, fruit forward, drinking very well upon release and will continue to mellow.

Heathcote specialist Peter Dredge has worked alongside Hoddle Creek Estate's Franco d'Anna and McLaren Vale's eminent Ben Riggs at nearby Sanguine Estate. Planted in 1971 to ancient Cambrian soils, the unirrigated single parcel of mature vines at Red Edge yields a scant one to 1½ tons of fruit per acre. A multi layered, rich and powerful palate, yet elegant with fine grained tannins, splendid structure and superior length. In 1980 it was acquired by Laurie Williams and John Flynn who produced the highly acclaimed 1981 and 1982 vintages of Flynn and Williams. Viniculture at the tiny, a few hundred cases, estate is true to the boutique vineyard operator's minimalist, traditional principles. Small batch open fermentations using wild indigenous yeast, inclusion of some whole bunches, and neither fining nor filtration at bottling, achieve a wine exhibiting real individuality and a true expression of Heathcote terroir. Maturation twelve months in a combination of new and used French oak barrels.

Deep, dark red in colour. Sweet rich upfront fruit expected of Heathcote Shiraz. Sweet powerful intense fruit, still quite tight with spicy acidity, and fine grained charry tannins. An unctuous palate, demanding another mouthful. Juicy sweet berry fruit leading to a flavourful firm tannin finish.

Pinot Noir has been the shining star of Mornington for decades. Red Hill take the pick of crop, assembling a variety of clones from several choice vineyards across the finer precincts of the Peninsula. Red Hill drinks very well at a young age and is best consumed quite soon after release, if you prefer the vibrant cherry, plum and strawberry fruit flavours in their prime. Red Hill also walks on the wilder side of Pinot Noir, treat her to a spell of breathing to develop the funky country game characters and piquant pastoral savouryness.

A sub regional assembly of fruit from Tuerong and Merricks North, Red Hill and Main Ridge, achieving a wine of complexity and depth. Bunches are destemmed for a cold maceration, gently pressed and allowed to finish primary fermentation before racking off gross lees. Further seeded for malolactic and transferred to a mix of new and prior use French oak barriques for a year, a component is held on skins for a few days prior to pressing. This selective handling maximizes the delicate and subtle Pinot Noir fruit characters, aromas and texture.

Deep, bright garnet red. Delicately perfumed lift, red and black berry spectrum, sweet spice and floral notes. A long fine palate with a strong juicy core of cherry, raspberry and a touch of blackberry supported by fine tannins, elegant levels of spice, subtle oak and balanced acidity. Primary fruit flavours will predominate when young with savoury, gamey, forest floor characters continuing to evolve.

Redbank retain some of the best vineyards in the higher altitudes of Victoria's bountiful northern winegrowing districts. Sites planted to cooler climes offer slower ripening conditions which translate into the full development of flavours. Long Paddock is fashioned from the finest harvests of Merlot on offer, the finely grained tannins, gentle palate and aromatic qualities can make any further ageing unnecessary. A forward drinking wine, redolent with plum and cherry characters and like all good Merlot, scrumptuous with fine food.

Batches of fruit sourced from warmer sites lower down the valley floors contribute richness and complexity to the finished wine. To control vigorous growth, the vineyards are carefully managed at every phase throughout the season. Growers implement a canopy management and crop thinning program to ensure the vines deliver high quality fruit with good colour and a concentration of flavours. Several months in a selection of seasoned French oak barriques, achieves a fully integrated wine with soft supportive tannins.

Deep dark red. Aromas of ripe berries and plum, showing secondary notes of cedar, briar and violets, nicely wrapped within a subtle oak framework. A medium to full bodied wine, the fleshy plum fruits and velvet textures deliver a wine of quality and structure. Fine grained tannins complement the fruit and support the length of palate all the way to a pleasant, lasting finish.

Long Paddock sources the best possible Shiraz from some of the finest Victorian vineyards, but relies on a few unique sites to form the backbone of fruit, vines of superior quality which have been supplying Redbank since inaugural vintage. Parcels from warmer climes conrtibute edifying plum and cherry flavours, cooler climes yield fruit that's deeply saturated in colour, bristling with piquant spice notes, framed by firm and supportive, mouth filling tannins.

Further harvests of Shiraz from slightly warmer climes contribute complexity. Fruit is inoculated in a combination of large static and rotary fermenters. Warm temperatures at the onset of vinification and an average of three to five days post ferment maceration have extracted soft fleshy tannins and formed a solid palate structure. Maturation in a combination of prior use American and French oak barriques has integrated the wine and softened the tannins, achieving a generous Shiraz style.

The Redgate property is one of the southernmost vineyards on Margaret River, situated just three kilometres from the Indian Ocean. The family owned and operated wineworks at Redgate create impressive red wines endowed with the characteristic nose and flavour of Margaret River. Bin 588 was first made in 1988 and has always included harvests of grapes sourced from good local vineyards. This stylish cepage of Merlot with Cabernet Sauvignon is medium bodied with a delicious burst of of ripe dark fruits, plum and blackberry aromas.

Redgate's vines are grown on a ridge of ancient soils less than three kilometres from the Indian Ocean. This unique combination of soil and maritime clime enable Redgate to nurture fifty acres of vine for the production of true boutique wines. Crafted around a backbone of estate grown fruit, components of Bin 588 are vinified separately to drynesss, followed by transfer to a mix of one and two year old French and American oak barrels for completion of malolactic and a year's maturation. Barrels are treated to rigorous fining trials to achieve the finest balance and determine the final assemblage.

Deep ruby colour with purple hues. Black fruits and plum, blueberries and sweet spice dominate the nose, a delicious burst of ripe dark fruits and mulbery seasoned by subtle spice. Blackcurrant, jubes and fruit pastilles drive a palate that's framed by savoury oak and soft velvety tannins. There's plenty of action to Bin 588, a combination of fine texture and fresh bright fruits, worthy of ageing while ultimately fashioned for immediate drinking.

Redman, red estate, red soil and red wine, the four Rs which comprise the family coat of arms, working in harmony to produce the famous Cabernet of Coonawarra. The Redmans have been actively involved in all major developments involving Coonawarra viticulture since establishment in 1908. After joint ventures with Penfolds and Mildara, Dr Lindeman purchased the Redman property and renamed it Rouge Homme. Owen Redman ultimately returned to the family estate, eventually acquiring the land on which the winery stands today.

A traditionaly crafted red wine, made from grapes grown to hand managed vines a half century of age, planted to rich, red Terra rossa soils. One of the nation's most enduring Cabernet wines, the Redman family can trace its heritage of Coonawarra viticulture to forty acres purchased by Bill Redman in 1908. A consistent effort with every vintage release, Redman defines the timeless Coonawarra Cabernet style, rich ripe tannin and excellent varietal berry fruit characters are the foundation, the finish is long in flavour, firm and dry.

Matured for a year and a half, a third of components are run off into new French oak hogsheads for completion of ferments, the balance finishes its course on skins before racking to oak.

Dark red in colour. Rich concentrated berry and cassis fruit with cedar notes, a touch of mint and vanilla oak. The palate exhibits ripe berry fruit with firm tannins which combine to give a balanced and complex structure, before a long dry flavoursome finish. The classic Coonawarra, exhibiting elegance with generous blackberry flavour and solid structure.

Redman's Coonawarra are still made by the Redman brothers from fruit grown to the original family parcels established in 1908. The association began circa 1901 when Bill Redman at the tender age of fourteen, arrived in South Australia to work amongst the vines. He quickly formed an affiliation with the area and six years later encouraged the rest of his family to join him. Grown to some of the best sites on Coonawarra's Terra rosa, this well appointed wine offers commodius fruit flavours, subdued oak and the most hospitable tannins.

Oak maturation has played an important role at Redman, a five year life cycle for each barrel means that the influence of oak will always be secondary to the quality of fruit. Aged a year in a mix of new and prior use American and French oak barrels.

Purple red in the glass. Dark, dense and spicey, with broodiing bouquets of currant and chocolate, cola, ferrous soils and mint, aromas that are clean and intense, freshly ground pepper, subdued vanilla oak, red cherries and plum. The mid weight palate shows spicey fruit, firm tannins and balanced acidity. The bright finish is clean with lingering flavour.

The Reilly's philosophy is to produce low volumes of characterful, hand made wines. Clare Valley Cabernet is picked off closely husbanded vineyards at optimal ripeness to be given a good old fashioned vinification and hand plunging in open vats. The moniker may sound a bit bonkers but the Barking Mads are extremely well made wines, very enjoyable in their early years, they offer the quality of fruit and vigor of tannin to richly reward those with patience, but why wait? Hugh Reilly established his homestead here in 1856, it is still headquarters to Reilly Wines. Cabernet Sauvignon is sourced from splendid, dry grown blocks on the St Clare Vineyard at Leasingham, fasidiously cropped to a lean 2.0T/acre. Terroir and climes are ideal, long hot summer days and cool nights serve to fully ripen the grapes while the skins develop fine tannins. Grapes are hand picked, inoculated to AWRI 796 yeasts and treated to a traditional vinification in open fermenters for ten days. The completed wine is matured eighteen months in a selection of fine French oak hogsheads.

Bright scarlet red. Rich aromas of blackcurrants and cherry. The palate shows juicy dark fruits with a hint of vanilla followed by mints and dark chocolate. Rich sweet summer fruit flavours, overtones of sweet oak and a full mouthfeel which lingers effortlessly. Velvety textures are followed by generous tannins on a lingering finish.
