A collation of harvests from fine vineyards in Puglia, are crafted by the Pasqua team into a fruit forward style that's lined with supple tannins while being pleasingly dry. Sangiovese is harvested from good sites in Puglia, husbanded by dedicated growers at complete ripeness, bunches are gently crushed to avoid harsh tannins and cold settled for optimal extractions. Ferments are vinified to dry and treated to a month of natural, spontaneous malolactic, followed by assemblage into the finished wine and bottling for a term of bottle age before release.

Ruby red colour. Ripe berry aromas, cassis, smoked meat and tar notes, cherries and blueberry fruit. A luscious blackberry palate, made savoury by black olive characters, garniture and leaf. Graeme's Blend is the Passing Cloud flagship. Eponymously labelled after the proprietor winemaker, Graeme's Blend has consistently delivered a cornucopia of breathtaking Bendigo fruit every year since inaugural vintage 1980. The unirrigated Passing Clouds property produces meagre yields these days and grapes are called upon from outstanding vineyards between Bendigo and Heathcote. Parcels of Cabernet and Shiraz grown to eminent Bendigo sites are assembled around the backbone of estate grown fruit to create a complex, more powerful wine.

The story began in 1973 when Graeme Leith and Sue Mackinnon decided that they wanted to brave the elements, face the challenges of the land and pursue the holy grail of making the best wine in the world. Sheltered by hills of ironbark forest, the Passing Clouds valley offers an ideal mesoclime for red varietals. Low rainfall and deep, well drained soils produce small harvests of intensely flavoured fruit. Cabernet and Shiraz grapes are hand picked and vinified in open fermenters, hand plunged, treated to malolactic and matured in a selection of seasoned and new, French and American oak hogsheads and barriques for a year. Alcohol 14.0%

Dark Japanese plum colour, an indication of its power. Complex aromas of dark fruits are interwoven by vanilla , aniseed and spice. Rich complex aromas of blackberry, blackcurrant and spice follow through onto the palate, lined by a veneer of gentle oak. A superb balance of tannin and acidity complemented by lingering fruit, beautifully balanced on a length of fine chalky tannins.

For decades the Paxton family have nurtured their prized McLaren Vale vineyards, some are over a hundred years old. David Paxton believes that the science of viticulture is just as critical as the fine art of vinification. It's this level of care and passion for the soil that has produced extraordinary fruit and stellar wines. Harvested at the optimum ripeness for this wine style, Shiraz from five premium parcels, the Grenache from three, all fermented separately and assembled into a deep red wine of vigorous flavours and sleek, velvetine tannins.

$1999each $239DOZEN EACH DOZEN Gateway Vineyard is the source of the Shiraz component, grown to an inhospitable mixture of limestone and mudstone rubble. The vines are restricted in their growth and produce tiny yields of intensely concentrated fruit. Vines on the Jones Block are an average age of forty five years. Hand pruning and thinning of individual bunches combined with minimal irrigation ensures the low and uniform yield required for the production of super premium Shiraz. Quandong Farm, Nineteenth and Landcross Farm Vineyard are the sources of Grenache, from carefully hand tended bush vines. Paxton was matured eighteen months in a combination of new and used American and French 225 litres oak barriques.

Medium intensity ruby red with purple hues. Attractive complex aromatics, lifted red berry fragrances including spiced mulberry. Beautifully perfumed, it leads on to a palate of peppery berries, prunes, firm smooth tannins and smokey anise flavours. From a single row of the Iberian Graciano, grafted on to mature Chardonnay rootstock on the auspicious Paxton Thomas Block at McLaren Vale. Fruit is treated to a fortnight of cool ferments, plunging and pumpovers, followed by a gentle press into French oak barriques for nine months maturation. A deliciously food friendly wine of lithe spice and herb aromatics, raspberries and lavender, gently seasoned with a touch of white pepper. Adorably elegant tannins lie in support of juicy raspberry fruits, its supple savouryness making the perfect accompaniement to cutlets and all Mediterranean fare.
