Doug Balnaves was a shearer of Merino sheep, recording his count in the tally book to be paid by the number he had sheared. He now counts down the days until vintage, as with all releases of Tally Cabernet Sauvignon, it is the harmony and fine balance which are the outstanding features. A perfectly perfumed Coonawarra bouquet, brambleberry and dark cassis, elderberry, violets and mint. Its unbridled elegance and extraordinary length of palate, fragrant of coffee and oreo oak, supported by the finest grain tannins. Opulent yet refined, be advised, decant the Tally and breathe before service.

After spells of winemaking at Mountadam, Lindemans, Leo Buring, Pipers Brook and Wynns, winemaking supremo Peter Bissell teamed up with Doug Balnaves, one of the Coonawarra's most experienced viticulturalists. Doug Balnave has been involved in various industry bodies including the SA Wine & Brandy Association, Limestone Coast Wine Industry Council and Coonawarra Vignerons Association. The Tally is assembled from grapes hand picked off Dead Morris Vineyard. The finest bunches are set aside for twenty six days maceration on skins. The Tally was matured sixteen months in completely new Taransaud and Seguin Moreau Chateau barriques before a light egg fining and bottling under procork.

Distinguished Langtons Classification. One of Australia's finest Pinot Noir, from low yielding vineyards on the maritime influenced terroirs near Geelong, by a winemaker wholly committed to Burgundian vinification techniques. Aromatic with dark cherry and spicy vanilla oak, a velvety palate of pastoral and plum. A wine of concentration, power and structure, with unmistakable varietal charm, more muscular and rich than it's euro antecedants, exhibiting piquant stalkyness as well as a Bourgogne gameyness, rarely found in Australian Pinot.

French influences abound at Bannockburn, where the experience has contributed richly to the style of Pinot Noir. Nineteen hectares of vine are mostly dense planted on low fertility clay based soils beside the Moorabool River where yields are very low. Ripening is cool and late. Pinot Noir grapes are whole bunch fermented by wild indigenous yeasts in four tonnes open fermenters, saturated with CO2 and sealed. After ten days, batches are treated to a daily pigeage over four weeks of ferment. Upon completion, musts are pressed into a selection of seasoned and new oak hogsheads for a year, followed by rack and returned to older barriques for a further eight months, to be bottled without fining or filtration.
 
Ruby red colour, a wine of brilliance and clarity. Lifted nose with earthy forest notes and rhubarb, five spice and toasted oak. Characters carry through to the palate, which is of medium weight - fresh, light ethereal yet with good flavour intensity. Great balance and mouthfeel, as the palate is still quite youthful and restrained, silky textured and elegantly structured. A long, smooth, fine tannin finish.

From a picturesque planting of Pinot Noir at Lower Barrington, overlooking Don Valley towards mighty Bass Strait, within the maritime crotch of Tasmania's north. At 276 metres above the sea, vines enjoy a perfectly mild growing season, the longest days of sunshine on the apple isle, followed by a cool maritime autumn which infuses grapes with a sensational level of velvetine richness. Expressing winsome violets and vanilla, cherries and chai, giving way to earthy underbrush, elegantly structured, its brightly lit fruit and gentle tannins, seasoned by dustings of savoury spice.
