This uniquely Australian style is fashioned in the tradition of the great Cabernet Merlot accords which have made Coonawarra renowned for red wine throughout the world. So named after the leather tanning pits on the original Hollick property in Coonawarra.

$2299each $275DOZEN EACH DOZEN The combination of old vines, relatively cool climate and unique Terra rossa soils underneath the Hollick vineyard produce intense Cabernet and Merlot fruit, the grapes showing good ripeness, excellent colours and a soft tannin profile. The long and cool, dry growing seasons that prevail in the cigar shaped Coonawarra provide the ideal conditions for grapes to accumulate intense flavours and fine tannins. Following the harvest, bunches are minimally handled to retain the intense fruit flavours of the vineyard. Partial barrel fermentation, followed by eighteen months maturation in a combination of French and American oak barrels, infuses elegance, structure and a long finish to the stately palate.

Bright ruby red with purple hues. Varietal Cabernet aromas of blackcurrant and mulberry are complimented by the softer Merlot notes of violet, dark chocolates and plum. A seamless and complex Coonawarra, showing blackberry and cassis, choc mint and plums woven with finely integrated oak. The finish is long with a soft texture and silky tannin structure. A fabulous wine to accompany roast lamb and crisp rosemary potato.

A rich cepage of the requisite Bordeaux varietals which have found a new home amongst the silty, alluvial clays and sands between Bibbona and Bolgheri in Tuscany's west. The wine industry press have been unanimous in their enthusiasm for Pino di Biserno, which improves remarkably with each new vintage.

$11999each $1439DOZEN EACH DOZEN Grapes yielding a mere 1½ bottles are selectively hand picked off vines grown to very special soils, complex silts, alluvial sands, a high percentage of clay and a conglomerate rich in minerals, unique influences of terroir which are recognizable in the finished wines, all very similar to those found in Bordeaux. Berries are further sorted upon arrival to the Biserno wineworks, de-stemmed, gently crushed and vinified for three to four weeks at 28C before being treated to full malolactic in a combination of barrels and fermenters. Matured twelve months in a selection of French oak barriques and vats, before the final assemblage, bottling and a further six months ageing under the Biserno cellars before release. Alcohol 14.5%

Deep bright ruby red in colour. Intense nose with ripe berries, dark chocolate and spicy oak. The concentration of fruit is supported by fine, ripe tannins, lending structure and balance for a harmonious wine with a splendid, generous middle palate before along and elegant finish.

From fruit grown to three different plots, west of the road that joins Bibbona to Bolgheri. Soils are sandier and climes slightly warmer during the summer months, conditions which are ideal for growing Syrah, which accounts for a third of Insoglio del Cinghiale. An intense ruby red colour, the nose is powerfully fruit driven with hints of liquorice and spiced oak. The palate is exquisitely balanced, harmonious, richness of fruit supported ripe, round tannins. Its peppery character makes it perfect with game, such as the local wild boar after which it is named.

$6999each $839DOZEN EACH DOZEN The entry level wine from Campo di Sasso at Bibbona, part of the greater Tenuta di Biserno estate which stretches between Bibbona and Bolgheri in Tuscany's west. All harvesting is selectively done by hand into small 15 kg crates. Grapes are strictly sorted again upon arrival to the Biserna wineworks, de-stemmed and gently crushed. The musts are vinified over a course of three weeks at 28C. A tenth of the batches are treated to malolactic in oak barrels, the remainder in fermenters. Components are matured four months in a selection of new and second use French oak barriques, followed by the final assemblage, botttling and a further three months ageing before release.

Juniper Estate was established 1973 within a picturesque setting near Wilyabrup Creek along Harmans Road. The fully mature vines are grown to auspiciously gravel loam soils which have been essential to the production of Margaret River's stellar Cabernet wines. The propitious terroir and balmy maritime climes are heaven sent for the signet Bordeaux varietals. Juniper's viticultural team assemble parcels of Cabernet and Franc, Malbec and Petit Verdot, to fashion an elegantly aromatic and soundly structured wine, in engaging, new world Medoc styling.

$5999each $719DOZEN EACH DOZEN An exclusive, dry grown, single vineyard wine from a mix of grapes which articulate the uniqueness of a resplendent site. The rich cepage of Cabernet Sauvignon and Malbec, Petit Verdot and Cabernet Franc, is hand picked in small batches off vines trellised to vertical shoot positioning. Fruit is de-stemmed and chilled into open fermenters for a natural and inoculated vinification, cold soaked for several days and treated to a regimen of plunging and pumpovers once or twice daily for optimal extraction of colour and tannins. The ferments spend up to thirty days on skins before transfer to a combination of new and seasoned French oak barrels for completion of malolactic and eighteen months maturation.

Dense red in colour. Concentrated and powerful nose with an abundance of dark fruit, cherries and plum, blueberries and cassis backed by complimenting cedary spiced vanillin oak. The palate is seamless and silky smooth, a Cabernet of controlled concentration, rich ripe fruit characters over a length of fine grain tannins, before a long, long finely textured finish.

The Moppa district was a flourishing settlement of pioneering farmers and gold miners. When the Kalleske vineyard was established in 1853, there were few schools in the region, so local parents established the Moppa Public School to provide their children with a formal education. Located right on the Kalleske property, generations attended this school until its closure in 1935. Sourced entirely off the Kalleske Certified Organic Moppa Vineyard, a trace of Viognier and Petit Verdot are added to Shiraz, achieving a stylish and contemporary edge.

$3099each $371DOZEN EACH DOZEN Shiraz is harvested off low yielding vines planted to shallow, sandy loam over deep red clays. A component of Viognier is picked and set aside for co vinification. Petit Verdot is a late ripener and remains on the vine slightly longer. All batches are given a warm vinification in open top fermenters while being treated to a course of manual pumpovers twice daily. After a week or two on skins, ferments are traditionally pressed and transferred to a selection of new and seasoned French and American and Hungarian oak hogsheads. After thirteen months maturation, a small portion of Petit Verdot and Viognier are assembled into the final wine for added complexity before bottling without fining or filtration.

Dense purple indigo colour. Dark cherry niotes, blond tobacco, fruit cake and blueberry, anise and a hint of cinnamon. The palate is a burst of pure fruit complimented by subtle background oak. Dark, rich and full bodied yet elegant and sophisticated. Layers of fleshy red and black fruits together with floral notes, balanced by fine, slightly minerally tannins adding a seamless structured backbone. A very lengthy finish completes this generous wine.

Named for the Chapel district of Lenton in Nottingham, Brae is Scottish for a small hill, which is what the Lenton Brae vineyard is situated on. Fortuitously placed within the very epicenter for superior Margaret River Cabernet, the site was planted after advisement from the proprietors of nearby Moss Wood, with which it shares a similar terroir and microclime. The inaugural vintage of Cabernet won Lenton Brae a place in the pantheon of great Margaret River estates when it claimed two trophies, including best of show, at the WA winemakers exhibition.

$2599each $311DOZEN EACH DOZEN The gravelly loams under the Lenton Brae site at Wilyabrup facilitate water drainage without supporting any excessive vigour. The clay base retains moisture and encourages root penetration. A cepage of roughly equal proportions Cabernet Sauvignon and Merlot with a tot of Petit Verdot. In crafting the wine, an emphasis is placed on minimal tannin extraction to produce a style rich in flavour with a softness to allow the wine to be enjoyed immediately upon release. Vinification techniques such as cooler fermentation temperatures and an earlier removal of juices from seeds and skins have facilitated the construction of a gentle, palatable wine whilst avoiding the extraction of bitter, green tannins.

Bright scarlet colour. Aromatically disposed, fruit cake and spice, brambleberry perfumes, plums and cassis, the lightly floral notes of Petit Verdot. On the palate, the structure and tannin of Cabernet Sauvignon compliments the mid palate sweetness and fleshy mouthfeel of Merlot. Lenton Brae mates beautifully with lamb but would also compliment any red meats.

One of the more profound Margaret River constructs of the complex Bordeaux blend, a cépage of Merlot and Malbec, Cabernet and Petit Verdot. Combines the blueberry and blackcurrant fruit characters of Yallingup with the perfumed violets and toothsome red currants of Cowaramup, generous fruit depth with soft oak influence, in fine support with a toasty, spiced background. Full body and sweet round flavours of cherry and other dark fruits, as well as melted chocolate, make Amy instantly appealing and oh so easy to enjoy.

$3499each $419DOZEN EACH DOZEN Bunches are destemmed into open fermenters and the juices seeded with pure yeast culture. Temperatures kept to a maximum of 30C and ferments hand plunged up to four times daily. As each batch reaches dryness it is tasted daily for tannin balance and pressed when the optimum has been reached. Skin contact ensues for a period of ten to fifteen days.Wines are racked to tank and allowed to settle before being racked off gross lees and seeded for malolactic. Upon completion all batches are racked, assembled and returned to barrel. After fifteen months maturation in a selection of new and seasoned French oaks, the wine is treated to a light skim milk fining, sterile filtered and bottled.

Deep brick red. The classic ripe fruit aromas of each variety in the cepage, Cabernet shows blueberry and cedar, Petit Verdot is dark jube and confectionery, Malbec contributes ripe plum and earth. A very light oak background to exude a perfumed, lifted nose, juicy, sweet red and dark fruit flavours. Firm tannins along the palate to a suitably balanced finish, malt biscuit and spicy oak flavours arise, a palate of balance and great length.

Moss Wood were destined from their very genesis to be one of the new world's great marques in Cabernet Sauvignon. Excellence is the estate's raison d'etre, all work amongst the vines and throughout the vinification demands a no expense spared production, aimed at crafting the most statuesque vintages of Cabernet Sauvignon. Malbec contributes rich red currant notes, Petit Verdot adds confection, Merlot is all cherries and summer pudding. Luxury oak in support with toasty, coffee bean flavours and vanilla tannin for gentle, flattering grip.

Exceptional Langtons Classification. The low yielding, unirrigated vines at Mount Mary Vineyard are planted to grey sandy clay loams over broken shale soils. The percentage of each varietal included into Quintet every year is determined largely by the vagaries of vintage, factors such as fruit set and quality of harvest. An extravagantly rich cepage of Cabernet and Merlot, Malbec, Verdot and Cabernet Franc, Quintet exhibits an uncanny balance which drinks beautifully, a slight alcohol lift on finish will see it through for many years to come.

$16699each $2003DOZEN EACH DOZEN Grapes are hand picked and lightly crushed, destemmed and vinified in a mix of closed and open top fermenters for up to ten days while being treated to frequent pumpovers. Upon completion of malolactic and lees settling, the wine is transferred into a selection of new and seasoned oak barriques and larger format 1500L oak casks for a year, followed by a racking into seasoned barriques for a further ten months.

Deeply coloured, dark purple red. Lots of bright fruit, complex, a tighter, more savoury wine, earthy aromas and cedar are punctuated by raspberry notes. The palate is structured and linear, offering good weight of fruit, ripe red berry flavours and tobacco characters. A Yarra Valley of richness and length, firm tannins but very much in balance.
