Tim Adams Cabernet Sauvignon Malbec

Cabernet Sauvignon has long been recognised as a stellar performer in the highly favourable climes of Valley Clare. A small addition of Malbec adds to the complexity, contributing violets, mulberry and richness, bringing the finished wine forward, making Tim Adams slightly more approachable in its youth. Twenty four months in French oak enhances the style, full bodied and unstabilized before bottling, a harmless crust may form with time.

The secret of Tim Adams success is as attributable to his selection of vineyards and growers as it is to his considerable flair for winemaking, and wealth of experience in the industry. Parcels of Cabernet Sauvignon with a component of Malbec from the Sheoaks (Grant Crawley & partners, Tim Adams and Pam Goldsack) and Fairfield property, all in Valley Clare. All components are fermented on skins for several days to dryness, followed by a return of pressings to the wines. Tim Adams reposes two years in a selection of new and second use French oak barriques under the state cellars before the final assemblage and a light fining.
 
Deep, dark garnet colour. A generous presentation of Clare Valley Cabernet, dominated by violet, fresh blackcurrant and oak aromas and flavours, a portion of Malbec dampens the tannins, contributing spice and achieving balance. A full bodied wine with concentration of fruit over generous chalky tannins, which has not been cold stabilised before bottling, a harmless crust may form over time. Tim Adams recommends decanting a few hours before service.

The Tim Adams label was born out of a venture to make small oak casks and limited amounts of wine. After three decades of consistently superb vintage releases, Adams is counted as one of the leading winemakers in Valley Clare. Fergus was a neighbour who was kind enough to sell his Grenache to Tim in 1993 during a desperate shortage. Tim quickly realized that what had been achieved through a serendipity of logistics was to have real potential as a full bodied, soft style with immediate approachability and splendid compatibility to good food.

A collation of harvests Tempranillo and Grenache, sourced from the Ladera, Sheoak and Mahons vineyards in Valley Clare, a choice parcel of Malbec is added for complexity. Grenache remains on the vine until fully mature, grapes are harvested late and crushed on to batches of drained Tempranillo skins for a week of vinification. The fermenters are topped and closed for another week prior to pressing. Components are racked several times before filtration and transfer to seasoned French and American oak hogsheads for an extravagant two years. Components are assembled and bottled without cold stabilizing, which may forn a harmless crystalline deposit.
 
Dark scarlet purple hue. Ripe berry and cherry fragrances, licorice and garden spearmint over spiced oak notes. Lifted red berry flavours, complexed by Grenache spice and given extra back palate astringency by virtue of the other more tannic grapes. A mouth filling wine that will go nicely with turkey and duck, gamey meats and lamb.

Excellent Langtons Classification. Vasse Felix are known for their profound and compelling vintages of Cabernet Sauvignon, performing well whatever the vagaries of growing season, by virtue of auspicious soils and propitious clime. Intense, yet elegantly structured, the first red wine ever released from within the nascent Margaret River, it remains to this day, the elder statesman of the region. Fruit is sourced from the best vineyards in Wilyabrup. Cabernet is a robust variety, ideally suited to Margaret River's balmy maritime climate and superb, well drained soils.

The finest Cabernet Sauvignon available to Vasse Felix hails from the northern end of Margaret River, off vines planted to gravel loam soils within eight kilometres of the coast. Individual vineyard sections are fermented as separate parcels, many are left on skins to macerate for up to thirty days. Tannin influence is controlled through traditional oxidative handling, creating a deeply coloured wine with great structure and length. The Cabernet backbone of blackcurrant and herbal nuances with long, dry sinewy tannins is lifted to glorious heights by smaller portions of Merlot and Malbec. The finished wine is aged eighteen months in a selection of new and seasoned, exclusively French oak barriques.
 
Deep red with crimson hue. Rich, concentrated blackcurrant, violets, bay leaf and dried twigs with hints of mocha, menthol and graphite, all perfectly framed by subtle spicy, vanillin French oak. Enters the mouth rich and seductive, with a mixture of blackcurrant, bay leaf and chocolate dust, then bursts to life with an explosion of tangy, bright acidity. Finishes fragrant, over a lingering length of finely structured, dry tannins.

The great structural elements of Cabernet Sauvignon are embraced with the dark fruit of Malbec, a collation of superior harvests from the northern parts of Margaret River, the pick of elite blocks, whence optimal ripeness is assured with each and every vintage. The weighty structure and determinedly drying tannins of Cabernet are mellowed by the softness of Malbec, bringing the whole assemblage forward, making Filius, ripe and ready for those anxious aspirants who adore the Margaret River style but are unable to await the distance.

Parcels are separately crushed into fermenters, Cabernet Sauvignon is treated to a term of maceration for development of fine structural tannins and optimal extraction of black currant fruit characters. The balance is is cold soaked and pressed early off skins to preserve soft luscious mouthfeel. Batches are handled to a traditional oxidative regimen, aimed at softening the palate and rounding out tannins, while infusing perfume richness and introducing layers of complexity. Upon completion of primary ferments and a course of malolactic, components are matured for a year in a selection of the finest, mostly well seasoned French oak barriques.
 
Bright red brick maroon. Deep, savoury Cabernet nose of blackcurrants and dark cherry, damp earth and cedar, the spiced complexity of Malbec. Luscious and juicy upfront, dark berry fruits are complemented by the savouryness of beef and dried woody herbs, a wonderful length of flavour as the palate transitions to a fine, textural and dusty drying finish in classical Cabernet style.

Vasse Felix construct a vigorous Shiraz of considerable depth, concentration and solid structure whilst retaining elegance and finesse. Careful fruit selection and an astute use of oak achieve balance and complexity. One of the most satisfying examples of West Australian Shiraz, stylish and distinctively regional. Vasse Felix has the oldest Shiraz vines on the cape, while several slightly younger blocks provide an understated finesse and elegance that is so often lost in the rush to create a Margaret River Shiraz of opulence and power.

The oldest vines in Margaret River contribute the backbone of fruit. Small batch fermentation ensures the character of these precious old vines is preserved in the final wine. Grapes are crushed into fermentation vessels, vinification, macerations and aeration are combined in a way to ensure the gentlest extraction of colour, tannins and true expression of fruit. Each parcel is separately handled and matured. After sixteen months in a selection of new and seasoned French oak barriques, each barrel is rigorously appraised to identify the best of the best. In some years, Malbec is assembled into the final wine to contribute pristine blackberry fruit, exotic spice and structural complexity.
 
Deep red with purple hue. Layers of stunning plum and blackberry fruit support intriguing notes of roasted peppercorn, musk and smoke. Gentle oak provides subtle hints of toasty vanilla and toffee. Rich and fleshy, with wonderful fruit and fresh acidity. Intense blueberry and blackberry combines with creamy vanillan oak, soft powdery tannins and zesty acidity to create an opulent and invigorating wine of great purity.

Established 1967, the Vasse Felix property is planted at the heart of Wilyabrup, within the nucleus of premium Margaret River viticulture. Low yielding, dry grown vines planted on some of the world's oldest soils enjoy long, warm growing seasons and cooling summer breezes from the nearby Indian and Southern Oceans. This moderating effect yields grapes of exceptional concentration and intensity, whilst retaining elegance and finesse. Heytesbury is a selection of the best barrels from the best batches. Cabernet Sauvignon, Malbec and Petit Verdot are separately treated to small fermenters, basket pressed and sent to a selection of the finest French oak barriques for nineteen months maturation.

Established 1864 with a view to crafting fine distillates, Bodegas Vega Sicilia sourced eighteen thousand plantings of Cabernet, Merlot and Malbec from Bordeaux, to be used in the making of brandy and Ratafia. In 1876 Vega Sicilia won an appointment to the Spanish royal family, further awarded in 1880 with Grand Cross of Isabel for services to Spain, decades before the birth of the Tempranillo wine which was to make Vega Sicilia so famous.

Vega Sicilia own and operate 250 hectares of the most splendid winegrowing terroir on the Ribero Del Duero. The exacting standards involved in making Valbuena begins with the husbanding of vines, which are controlled down to each detail. Vega Sicilia have established limits to the production of the estate's vines, all are dry grown and hand pruned, yielding less than two kilos each. Valbuena is a cepage of varying proportions, according to vintage, Tempranillo and Malbec, Merlot and Cabernet Sauvignon, Vega Sicilia Valbuena is treated to maturation in a selection of new and seasoned, French and American oak casks and larger format oak vats for up to three years, followed by two in the bottle before release.

Virgin Hills Cabernet Shiraz Merlot

Established 1968 by the legendary Melbourne restaurateur Tom Lazar, Virgin Hills is the gem of the Macedon Ranges, one of Australia's iconic vineyards. He planted Cabernet Sauvignon and Shiraz, Malbec, Merlot and Pinot Noir, with a view to creating an Australian first growth to rival the great Bordeaux he had grown to love while working as a sculptor in Paris. Only one wine is bottled under the Virgin Hills label each year. From inaugural release, the cepage of varietals has varied subtly each vintage, adding to the mystique and complexity of Virgin Hills.

The Virgin Hills property suffers from frosts and occasional snow at both ends of the season, budburst and harvest time. The site has always delivered low yields of half to 1½ tonnes per acre, due to the tough climactic conditions and dry grown grapes. To this day, it bears the viticultural classification of marginal vineyard. After spending a vintage in the Coonawarra with Owen Redman, Tommy Lazar produced the first Virgin Hills vintage. A blend of all his varieties, it stood out among Australian wines as being uncharacteristically subtle. Cabernet Sauvignon and Shiraz, Merlot and Malbec grapes are picked off vines over forty years of age, to be vinified and aged in a selection of exclusively French oak barrels.
 
Dark red with a cherry hue. Blackcurrant, chocolate, black cherries and sweet French oak on the bouquet. Red and black berry fruit flavours on the palate, layered over aged mocha and tobacco characters. Subtle cool climate mint and eucalyptus. Spicy oak imparting soft, velvety tannins. A long lived wine, remarkably approachable on release.
