Australian Tawny is renowned throughout the world of wine for its engaging richness and remarkable complexity. Assembled from the last remaining barrels of old fortified Grenache, Touriga and Shiraz, McWilliams Show Reserve represents an indulgence in slow aged rancio flavours, raisins, dark chocolate and evocatively perfumed festive cakes. Twenty five years maturation means that the angels are constantly taking their share, as the extravagantly aged barrels are topped up every year by even more stocks of the most luscious Tawny wine.

$7199each $863DOZEN EACH DOZEN Parcels of Grenache, Touriga and Shiraz are harvested at suitably high levels of natural fruit sugar 15° to 16° Baume. Grapes are crushed and destemmed, pumped into open fermenters and vinified on skins for optimal extraction of colour and tannins. A neutral grape Brandy spirit is added to arrest ferments and retain a measure of palate sweetness. Batches are drained and pressed, settled, racked off solids and stabilised before filtering into French oak. As older wines are summoned, new wines are filled for ageing up to thirty years. Upon completion, individual barrels are assessed for inclusion, assembled with the best of the best, to create a fine Old Tawny that's second to none. Alcohol 18.5%

Deep brown amber, khaki hues. Lifted intense rancio and walnut spice, pistachio and vanilla oak characters exhibiting the excellence of a decades barrel aged Tawny. Extremely rich and full palate, viscous, raisins, dark chocolate and festive pudding, round and luscious, long fine tannins balanced by the ambrosial sweetness, resolving on a dry, savoury finish.

Fashioned from the pick of parcels, a collation of deep, dry farmed old vines grown to deep Blewitt Spring sands, conjoined with harvests from the balmy Biscay clays on the coast of Gulf St Vincent. Grenache plays the leading role, a dark cherry lift with a seductive mid palate, Shiraz contributes juicy mouth feel, dark fruits and earthy olive tapenade characters. Sagrantino, adds beautiful dry earth, cigar box-like savoury lift with those signature tannins giving a drying, snappy finish.

$3299each $395DOZEN EACH DOZEN Grenache is picked off parcels of gnarly bush vines at Blewitt Springs in the the northern Vale, Shiraz and Sagrantino parcels are sourced further south from the eminent Lopresti Vineyard, just east of Port Willunga. Varietal components are separately handled, destemmed without crushing and pumped over daily throughout a course of cool temperature ferments, aimed at optimal extractions of flavour and tannin, while preserving the dominance of fruit. Batches are filled to a selection of seasoned French oak barrels for completion of malolactic and eighteen months maturation before assemblage. The final inclusion of Lopresti Vineyard Sagrantino, contributing structure and enhancing complexity.

Bright ruby/purple. Bramble herbs and cracked black pepper, underpinned by earthy, dark fruit characters, satsuma plum, black cherries and liquorice. Lifted anise, nutmeg and dark fruit palate, crushed pepper and mixed spice, a dense and multilayered wine that retains freshness, while articulating the savouryness of the mix, richness and vibrant fruit.

The fifth generation of the Morris family continue to make the most memorable Rutherglen Tawny wines. A sublime, oak matured Grenache Shiraz Mourverdre, evolving marvelous complexity after many years under the estate cellars. Grapes are allowed to remain on the vine until high sugar levels and an intense concentration of flavour develop. After crushing, ferments and pressing, the young wine is fortified with a low strength spirit, as opposed to other styles which are fortified with a higher alcoholic spirit, infuse greater complexity and encouraging opulent palate richness.

Fortified from the classic Australian Tawny varietals, predominately Shiraz and Grenache, Morris of Rutherglen's historical, quarantined old vines yield some of the nation's most precious parcels of fruit. A profound, multi layered structure of mature fruit flavours, with aged oak/rancio expressions and almond creamyness, balanced by a deep spirit dryness, continuing on a long and persistent, flavoursome and textural finish. The classic, rich and full Australian style, offering tremendous length, ribald complexity and satiating palate warmth.

Shiraz and Grenache grapes are encouraged to ripen fully before harvesting. Following the crush, a partial fermentation is initiated before pressing. A specially selected low strength spirit (alcohol with character) is added to arrest fermentations and fortify the young wine, followed by transfer into a selection of old, seasoned oak barrels and casks for several years to develop the inimitable aged rancio tawny characters. Only the best casks, some as old as forty to fifty years of age will find their way into Old Premium.

Established 1971, Mount Mary is a single vineyard estate, one of the first to be planted during the resurgence of interest in Yarra Valley wines. John and Marli Middleton became obsessed with the great French growths after visits to Burgundy and Bordeaux. They resolved to find a very special Yarra Valley site with a view to emulating the statuesque French styles. The topical cépage of Grenache and Mourverdre, Cinsault and Shiraz, matured sixteen months in an eclectic mix of good French oak, a slightly more fruit forward, earlier drinking style of Mt Mary.
