The philosophy at Bress is that good fruit should be treated with respect, to let the wine make itself on its own time in its own way, with a minimal of intervention. A collation of superb Yarra Valley vineyards, grapes are gently whole bunch pressed to a mix of fermenters and seasoned French oak hogsheads for an exclusively wild yeast vinification, followed by six months lees stirring battonage. A fruit filled Chablis style, redolent of white peach, grapefruits and nectarine, exquiste balance throughout, an intensely savoury mid palate richness.

It was the compelling efforts of the artisanal Giaconda which placed Beechworth on the map for world class Chardonnay. Indigo Vineyard is a close neighbour, younger in age and slightly different in terms of aspect and clime, it yields a quality of Chardonnay which lends itself to a more modern style of winemaking. A measure of old world practices are nevertheless employed, wild ferments in new French oak and a judicious term of age, the objective is to encourage fruit to unlock its potential, while retaining natural eloquence and sense of place.

It was not until a decade of red wine vintages had passed before the Brokenwood team turned their hands to varietal whites. Now representing a major part of Brokenwood's production every year, good sites further afield have been husbanded for the construct of the bigger boned, more solidly structured styles of white wine not easily realized from within Hunter Valley. Different soils and aspect, clones and age of vines at Indigo, paint a picture of a region which demands to express itself. Parcels of Indigo Vineyard Chardonnay are whole bunch pressed into a high proportion of new French oak barrels from choice cooperages, for a wild, indigenous yeast vinification and term of maturation.
 
Vibrant yellow green hues. Pear and citrus notes over a background of mealy oak, wild ferment edges of struck flint. Tannin and French oak sweetness on the finely textured palate, bright citrus flavours and luscious tropical acidity, a little fuller with flavour towards the back and middle, finishing clean and lingering on a length of grapefruit nougat notes.

A compilation of the finest parcels Chardonnay available to the Brown Brothers winemaking team, hand picked and whole bunch pressed into a selection of seasoned and new French oak barriques for a rich course of ferments and completion of full malolactic, a year's maturation and the luxury of regular lees stirring battonage for textural opulence and intriguing complexity. Stone fruits and cashew, citrus and pear, elegant with crystalline minerality and struck match complexity, a long lingering palate, structured and seamless, resplendent and refined.

Gary Farr established Chardonnay vines on his house block at Bannockburn in 1994. The quality of fruit, picked off a mix of Dijon clones and Penfolds 58, grown to a northerly slope of rich, friable red loam over limestone soils, clearly shows through in the finished wine. Grapes are all hand picked, inspected for health and whole bunch pressed, solids are collected and chilled before filling to a mix of seasoned and new French oak barrels. A naturally occuring wild fermentation, initiated by ambient wild yeasts, at cooler temperatures is followed by a course of lees stirring and the completion of malolactic. Barrels are racked, fined and lightly filtered for botling, normally at eleven months after vintage.
 
Light straw green hues. Varietal stonefruit and melon nose, complexed by nutty oak and spice notes. Generously layered palate showing tinned peaches and nectarine, preserved lemon and creamy autolysis. A wine of power and length, framed by toasty, richly textural yet mineral and refined, a seemingly endless finish.

Hillcrest Road was established to one and a half hectares I10V clone Chardonnay in 1993, with a view to creating a limited release, flagship Mornington sparkling Cuvée. Over two decades later, the cosseted vines are yielding a harvest of the most exquisitely balanced fruit, intensely tropical in nature, invigorate by the most refined chalky acidity. Treated to the luxury of full Methode traditioneele, an extravagant three years bottle maturation and remuage on yeast lees, brimming with the finest mousse and articulating the opulence of autolysis richness.

Painstakingly husbanded to excruciating standards of viticulture, Hillcrest Road Vineyard is dry grown and closely cropped at less than two tonnes per acre, for vintages of extremely limited yields. It is a small, pampered site which affords the Circe team a rare indulgement of attending to each vine as an individual, focusing on every detail and maintaining a meticulous vigil on the soils. The quality of fruit speaks for itself, as there are no substitutes for footprints in the vineyard. Those parcels of hand picked and hand sorted Chardonnay, which merit inclusion into a pure varietal wine, are treated to an old world style of vinification, extended exposure to gross sedimentery lees and luxurious French oak treatments.

With well in excess of a hundred hectares under vine, completely estate owned and operated, Coldstream Hills can exercise their options to source grapes from a litany of Upper Yarra as well as Lower Yarra Valley vineyards, ensuring that only the best quality fruit is included into their profound Chardonnays. In lesser years, Coldstream does not release a Reserve, directing all their finest parcels into this very wine. The classically cool climate style of Chardonnay, with excellent intensity of fruit, rejuvenating acids and tightly reined in, well controlled oak.

The Yarra Valley's cooler, slow ripening climes yield the most distinctive wines. Chardonnay typifies the Coldstream Hills style, with good varietal expression foremost on the bouquet and palate. There is an emphasis placed on showcasing the fruit and deriving length of flavour. The aim is to construct a wine characterised by elegance and finesse, enhanced by subtle oak complexity. Grapes are selected on the basis of heightened flavour profiles, good balance between natural sugar and acid. Barrel fermented and matured in a combination of new and seasoned French oak barriques, puncheons and vats with occasional lees stirring, completed without any malolactic to remain an essentially fruit driven style.
 
Pale straw green in colour. The nose shows attractive characters of citrus, nectarine and quince with underlying toasty oak. White peach, nectarine and lemon characters dominate the palate, nougat and cashew nut barrel ferment characters, toasty French oak and slatey minerality providing additional complexity.

The pinnacle of cool climate Chardonnay viticulture, an intensely flavoured wine in full bloom, made from a very strict selection of the finest parcels, assembled around a backbone of the highly prestigious, low yielding House Block. Produced only in years where the quality is deemed to be exceptional, Coldstream Reserve displays attractive cool climate characters of stonefruit and citrus. Oak plays an important role, but does not dominate. Secondary characters of barrel ferments and soil grape solids impart minerality, adding further layers of complexity.

The culmination of a strict selection process, where the quality of wine is without peer. In addition to the twenty year old House and G Blocks, Briarston Vineyard provides an outstanding resource of French Bernard clone, which adds elegance and length. Gentle handling practices, including whole bunch pressings are carried out, every parcel is treated to a course of barrel ferments which adds richness, texture and layers of complexity. Upon completion, components are matured ten months in a selection of seasoned and new French oak barrels, without any malolactic to maintain natural acidity, before assembling into the finished wine.
 
Pale straw, green hue. The nose shows attractive white peach, quince and citrus notes with underlying toasty oak and minerality. A tightly structured wine with fine acid line and good length. The palate exhibits attractive stonefruit and citrus combined with cashew nut barrel ferment characters. Flinty, minerally notes are evident in the background and will continue to develop as the wine ages.
