A prolific trophy winner, Shadowfax are a refreshing new wave, vigorously fruit driven, livelier than her Victorian siblings, characterised by slatey, flavoursome acidity, a touch of lees complexity and judicious dryness. A modern style that's perfect for cosmopolitan fare, offering excellent palate weight and solid structure, to accompany fresh fried flatheads or grilled and marinated spatchcock.

Skillogalee means classically structured Gewurztraminer, solidly built, aromatic and spicey with notes of hazel and honeysuckle, balanced between drying minerality and floral fruits. Favourable climes at Skillogalee combine with those cool autumn nights which make Clare Valley such a great place to grow aromatic white grapes. Gewurztraminer is encouraged through attentive viticulture, hand pruning and close vineyard management, to realize parcels of the finest fruit. The best of traditional and modern technologies are employed during vinification, to preserve the complex aromaticness and punctuated fruit flavours of Gewurztraminer. Hygiene programs are meticulous and great focus is placed on a gentle handling throughout the winemaking process. Grapes are fermented with light grape solids present, to achieve a wine of silky textures and engaging complexity.
 
Light, bright straw hues. Dominated by floral, rose petal bouquets, citrus and hazelnut oil, banana and hints of nougat, spicy lychee and lime marmalade aromas. On the palate alight flavours of peaches and mango, all the requisite flavours of Traminer, oranges and passionfruit, lychees and spice. The finish is clean and crisp with plenty of refreshing, zesty acidity.

Kevin McCarthy and Kathleen Quealy pioneered the development of Pinot Grigio and Pinot Gris wines on the Mornington Peninsula in the late 1980s. Pinot Grigio and Gris are the same grape, how they are grown and handled throughout the vinification determines their caste into the French or Italianate styling. T'Gallant are well versed at both, the maestros of Mornington. Italian have a tendency to pick grapes earlier for a racy, savoury style. The French wait for riper flavours, developing richer palates that are complex, fuller and fatter.

T'Gallant's style is expressive of Mornington, deft of handling and highly polished, devout in viticulture and the purity of fruit. Each batch of Pinot Gris is assessed regularly on its journey to bottle, integrity of the wine is paramount. Sometimes the destiny of an individual block has been planned many years in advance. Juices are pressed right out with no fining. Vineyard parcels are all kept separate as a wild ferment ensues without the introduction of any yeasts. Natural warm fermentations achieve lively fruit character and gossamer yeast aromas. Upon completion, parcels are assembled and the finished wine bottled unfiltered nor fined. Time spent on sedimentery lees adds texture and complexity.
 
Pale gold colour. A generous and weighty Pinot Gris, potent and true to style. The nose is ripe and very complex with floral notes and touches of tropical fruit. Honey and pears, dusty and spicy aromas precede a long, tangy, lemony palate, soft with nut and nougat character. A wine of succulence, generous with palate weight and richness.

Mid straw hues. Evolved citrus nose, ginger snap and dried pineapple, honeysuckle and fragrant mineral notes. A rich yet surprisingly fresh, butter lozenge palate, piquant with aromatic lime and textural with the creamy acidity of lemon pulp. Tahbilk was originally established with cuttings of the more charismatic varietals from Valley Rhone, bequeathing a legacy of the nation's most venerable Marsanne. It should be no surprise that the indigenous Rhone Valley white varietals, planted by Tahbilk's founders, have performed so well within the temperate climes of Goulburn and Nagambie. An exciting cépage of Roussanne, Marsanne and Viognier, in true Cotes du Rhône styling, seamlessly assembled into a beautiful drink of charming perfumes and dulcet flavours.

The stately wineworks, beautiful gardens and scenic finger lakes of Tahbilk, would not look out of place amongst the great vineyards of the old world. Bundles of Viognier cuttings from the distinguished Rhone Valley appellation of Condrieu, were amongst the first vines established at Tahbilk in the 1860s. They continue to outperform, yielding an absorbing white wine with an exquisite mix of nutty, mineral characters, the accompaniement of choice, to match all mussel and shellfish recipes, succulent baked pork with apple dressing or artisanal white meat terrines.
