Forest Hill Estate Riesling

Forest Hill's experience with Riesling dates back forty years to when the first two acres of vine anywhere within the Great Southern region were established. One of the most precious sites planted to the superior terrains around Denmark, it was selected by Dr John Gladstone, one of the pioneers of West Australian viticulture, later acquired by Robert Holmes à Court. Nothing short of exquisite, a fine acid structure will see it evolve beautifully, clean varietal fruit and softness make it a perfect match today alongside Thai prawns in ginger, chilli and lime.

Riesling is harvested early in the morning to ensure the coldest possible fruit temperature. A key aim of the winemaking process is to preserve the very delicate flavours and aromas. Fruit is immediately pressed without enzyme for a gentle and quick extraction. Only the first portion of free run juice with the freshest flavour and the lowest concentration of phenolics is transferred to tank. Juices are cold settled, racked and left to ferment with wild yeast at 14C to 16C. Wild fermentation of the juice although risky for such a fragile variety adds complexity of flavour and increases palate texture. Upon completion the wine is fined, filtered and bottled as soon as possible to preserve the vibrant flavours and aromas.
 
Brilliant pale straw. Lifted aromas of citrus blossom, zest of lemon, green apple, underlined with floral notes, citrus zest and rose petal evolve in the glass, waxy lemon leaf and lime, complex floral notes feature. The natural acidity is very well balanced and integrated, lifting the freshness of flavours and lengthening the fleshy mouthfeel as it evolves on the palate. Flint stone characters linger, persisting into a crisp mineral finish.
Forester Estate Sauvignon Blanc

Margaret River does the Sauvignon Blanc so very well, some of the smaller boutique winemakers dotting the coast seem to have the magic touch with this rich and aromatic style of wine. Forester Estate focus more specifically on unique vineyard sites with exceptional terroir to construct the essential Margaret River Sauvignon Blanc. They have increased palate structure and complexity through partial barrel fermentation and storage on lees. A vigorously fruit driven wine, subtley oaked, eminently suited to creamy pastas and the freshest seafood.

An assemblage of fruit from the labour intensive, open lyre trellis Home Block on Wildwood Road and other good vineyards at Yallingup. An east west row orientation limits afternoon sunlight on the berries. Moderate sugar levels and good natural acidity ensure the superb varietal characters are well preserved. Hand picked grapes are held in cold storage overnight after the fruit has been passed through the crusher, to eliminate the need for must chilling, increase palate weight and contribute texture. A cool vinification through the action of choice yeasts ensues, half the components are sent to a selection of seasoned French oak barriques for several months on light solids. Alcohol 13.0%
 
Pale green/ straw colour. A slightly more serious style showing clean and focused characters of citrus, nettles, dried herbs and flint, with a touch of smoke adding complexity from partial barrel fermentation in one year old oak barriques. A fuller palate that offers great texture and freshness with dried herbs and citrus at the forefront. The wine finishes long and clean with lingering herbaceous characters and mineral acidity.
Forester Estate Sauvignon Semillon

The classically dry Margaret River style, though pleasingly not completely dry, Forester Estate is saturated with fully ripe, rich fruit, unfettered by any oak. Semillon and Sauvignon Blanc is sourced from neighbouring properties in the northern Yallingup sub region of Margaret River. Direct input from Forester's viticulturist ensures well balanced canopies and crops are grown for this ripe and judiciously unwooded white. A highly regional, vital white wine that goes down easy with seafood, approachable and satisfying, innately suited to good Al fresco cuisine.

A splendid component of Semillon gives this wine plenty of strong regional citrus and herbaceous characters. Modern white winemaking techniques are employed, temperature control is considered critical from the moment the fruit reaches the winery. Grapes are destemmed and crushed, then must chilled and pressed off skins in a very short space of time. The must is cold settled for two to three days before being racked and clarified into fermenters, a range of specially selected yeasts are employed. A small portion of oak barrel ferments and maturation are employed to add texture and complexity, achieving a flavoursome young white in the inimitable Forester style. Alcohol 13.0%

Frankland Estate Isolation Ridge Riesling

A profound construct of West Australian Riesling, from fruit grown to a fastidiously managed site at Frankland River, one of the most isolated vineyards in the world, the product of uncompromising standards in viticulture. The vineyard is planted to Geisenheim and Rhine Riesling clones, into ironstone gravel over loam and clay subsoils, on an undulating northeast facing slope. Isolation Ridge slowly opens up in the glass, exhibiting purity of flavour, exceptional balance and a refined natural acidity, which carries the wine today and well into the future.

Dry grown Geisenheim and Rhine Riesling vines, established in 1988 and trained to Scott Henry vertical shoot trellis, planted to organically managed, rich ironstone gravels over loam and clay sub soils. The long slow ripening periods of Frankland River encourage maximum development of flavour while maintaining the distinctive racy acidity and dry finish for which Riesling is renowned. Grapes are pressed immediately and juices settled overnight, before being racked, aiming to minimise intervention, capturing the purest and finest expression of fruit grown to Isolation Ridge. The organically grown Riesling is treated to a cool vinification in a mix of fermenters and neutral oak at low temperatures of less than 14C
 
Light green straw colour. Intense aromatics of ironstone flintiness, lashings of lime with lifted floral notes. Fine and elegant, yet fills the mouth with a concentrated mix of juicy lime and citrus notes followed by a core of spicy ironstone minerality. A generous mouth filling texture but with an underlying tightness showing length, balance and focus giving the wine personality and direction.

Fraser Gallop Semillon Sauvignon

Fraser Gallop aim to create a wine which has true elegance, fine texture and ample complexity as well as lively, fresh fruit character. Semillon is sourced from Wilyabrup where it can mature past the green, herbal notes to the riper spectrum of flavours such as lemongrass and quince. Sauvignon Blanc comes from the cooler sub region of Karridale, an area which produces finer, more elegant berries with fresher flavours. The classic Margaret River white style, eminently drinkable upon release, a wine which is more than just simple fruit flavours.

Semillon and Sauvignon Blanc are harvested in the cool hours of morning and delivered promptly to the crush pad. Grapes are de-stemmed, crushed and gently pumped through a chiller on way to the Bucher XPF 80 press to get the must down to 8C. Juices are settled at 8C, racked off gross lees and warmed to 16C for fermentation. The juices are fermented in tank with two different yeasts to maintain freshness, bright fruit flavours and aromatics. A small proportion is fermented in new and one year old French oak barriques which adds to the complexity, structure and length of flavour. Sulphites are added upon completion to deter malolactic. The wine was protein and cold stabilised and cross flow filtered.
 
Pale straw with green hues. Gooseberries and passionfruit, lemongrass and fruit jube bouquets, rich bubblegum esters fade away to reveal a mineral edged wine. The palate is chalky as the fresh crispness of acidity sits well with supple sweetness. Lime and juniper berries make for a very delicious style. A well balanced wine with lingering flavours, a nice complexity that keeps you coming back for more.

Gnangara Sauvignon Blanc
Manjimup Pemberton
Gnangara, pronounced nan-gara, is a reference to the underground spring which nourishes much of the fertile region surrounding the original Evans & Tate wineworks. The perpetually replenished vines yield grapes with great flavour intensity and natural acidity, particularly from sites around Manjimup and Pemberton. The freshness of lime zest comes from Manjimup, Pemberton contributes vital slatey and grassy characters.

Sauvignon Blanc, principally from Manjimup and Pemberton, a pure varietal wine of intensity and concentration. The cool maritime nights and favourable ripening seasons stimulate the vines to develop pungent characters and electrifying acids in the fruit. Grapes are picked throughout the cool of night and lightly pressed. Juices are cold settled in tank at 10C for two days before being racked, warmed to 17C and inoculated to choice strains of yeast for a cool fermentation. Upon completion, portions are kept on light, fresh yeast lees for up to three months. Components are assembled and lightly fined, stabilised and filtered, minimal handling retains the attractive primary fruit qualities of the Gnangara style.
 
Brilliant pale yellow hue. Intensely varietal with layers of lime zest, fig, passionfruits and cut grass. Dry and beautifully refreshing, especially when slightly chilled. The freshness of lime zest comes from the Manjimup component, Pemberton contributes slatey, grassy flavours. Hay Shed Hill Block 1 Semillon Sauvignon

Block 1 is a steep gravelly slope of old, dry grown Semillon Sauvignon vines, amongst the first ever planted in Margaret River, yielding a very small crop of the most articulate Semillon and Sauvignon Blanc with a depth of flavour and intensity rarely seen. Only the purest free run juice are treated to a rich course of barrel ferments in seasoned French oak, followed by a term of eight months maturation. Lemony mineral, mesmerizingly complex with underlying toastyness, an amazing palate extension of gooseberries and lychee lingering to a clean ultra dry finish.

Hay Shed Hill Block 6 Chardonnay

Established 1975 to Gin Gin Mendoza clone Chardonnay, Block 6 is a steep south facing slope of reduced sunlight in the heart of Wilyabrup Valley. The precious dry grown vines yield a meagre harvest of distinctive, refined minerality. The purest free run juices are treated to vinification in a high proportion of French oak barriques and ten months maturation. Pears and apple dominate, suppleness of struck match, the savouryness of flint, the intense palate depth of old vines fruit contributes penetrating, mouth filling flavours and texturally refined, satin richness.
