Houghton Thomas Yule Shiraz

Three British Army officers, in their capacity as agents of the East India Company, established one of Western Australia's first agricultural enterprises in 1836. Named after Captain Richmond Houghton, it was not until Thomas Yule's stewardship that vines were planted and the first vintage of Houghton wine flowed in 1859. Thomas Yule now sources fruit from the eminent Justin Vineyard in Frankland River, a dark ruby Shiraz of lifted liquorice and intense brambleberry, seasoned by piquant pepper notes and supported by a length of exceptionally fine tannins.

Grapes are all hand harvested and hand sorted, crushed into traditional small open top fermenters and treated to three days of cold soak. Batches are vinified to wild indigenous yeasts, upon completion to dryness, ferments are pressed and filled into a selection of Burgundy coopered French oak barriques for secondary malolactic and fourteen months maturation before assemblage. The inclusion of Malbec rounds out the palate and introduces wonderful complexity.
 
Dark ruby red. Bright, lifted blueberry and raspberry fruits, hints of black pepper and liquorice with nuances of spicy vanillin oak rounding off the bouquet. The palate is medium to full bodied, filled with an intensity of lozenge fruit flavours. A firm tannin structure with a soft acid balance frame a richly proportioned Shiraz, a long, sustained finish.

Leston Vineyard was Howard Park's first Margaret River property, established 1996 to a bucolic sheep farm which bords Wilyabrup Creek. This is the heart of Margaret River viticulture, a place of salubrious sandy soils and temperate, maritime climes. Hand picked Shiraz from Blocks 4 and 17 are treated to completion of ferments and eighteen months maturation in a high proportion of new French oak puncheons, hogsheads and barriques. An opulent style, seasoned by ginger, anise and tradewind spice, dressed in a lycra of chewy, liquorice tannins.

Howard Park Scotsdale Shiraz

Scotsdale was acquired by Howard Park as a pastoral property, specifically chosen and planted to make a single vineyard wine. Shiraz is harvested according to flavour with little regard for analytical data. Fruit is vinified in open top fermenters and gently hand plunged, integral to tannin development and flavour extraction, gently basket pressed to French oak barriques for completion of ferment, followed by extended maturation. Scotsdale 2000 was crowned by trophy at the Divine State of Origin, vintage 2004 claimed gold at the prestigious Great Australian Shiraz Challenge.

Margaret River makes famously intense, deeply stylish Shiraz, somewhat more sanguine and evocative than its distant relations from winegrowing regions further afield. The balmy maritime breezes and cooler nights produce a Shiraz wine that conjures up impressions of the prevailing mistral winds of Valley Rhone. Slightly more forward drinking than the estate flagships, Sibling is endowed with layers of radiant olive/plum fruit characters and piquant spice characters, supported by excellent length of the most graceful tannins.

Leeuwin Estate was at the very apex of Margaret River viticulture. Originally a cattle farm, it was developed under the auspices of American wine industry legend Robert Mondavi. The property was deeply ploughed and deep ripped, emptied of stone, pegged and planted by hand in the 1970s. Leeuwin enjoyed its first commercial vintage in 1979 and was thrust into the international spotlight when UK Decanter gave its highest recommendation to the Art Series Chardonnay in an international blind tasting. Leeuwin now maintains a team of highly skilled and dedicated winemakers, still under management of the resourceful Mondavi family.
 
A brilliant deep ruby/ violet hue. Bouquet displays black pepper with nuances of spicy clove wrapped around blackberry and satsuma plum fruit which is further strengthened by spicy French oak. A medium weight wine showing an increasing intensity of flavour with dark raspberries and satsuma plums on the palate. Extremely soft and approachable through the middle with fine grain tannins contributing to an excellent wine of elegance, balance and power.

According to local folklore, the tranquillity of Mad Fish Bay is broken when two tides meet, driving schools of small fish to go quite completely bonkers, as they jump about to avoid being gobbled up by the incoming tide of larger, hungry fish. Exquisitly balanced, highly polished, affable and quaffable, a delicious red wine that's mouthfilling, approachable and complete, fashioned from fruit grown to a corner of Australia that does Shiraz so very well.

A key to the quality of Howard Park and Madfish wines, is an uncompromising respect for the sanctity of the soil and health of the vine. Fruit is sourced from good vineyards in Margaret River, Great Southern and Geographe, all of which have become highly conspicuous throughout the world of wine for the quality of Shiraz. Following harvest and the crush, the fermenting musts are treated to a course of traditional pumpovers for optimal extraction of colour, flavour and tannin. Batches are pressed directly to French barriques for a year's maturation, achieving a wine packed full of ripe fruit flavours, supported by fine, savoury tannins and rich, toasted vanillin oak notes. Bright dark crimson red colour. The wine jumps from the glass with aromatic black cherry, blueberry and chocolate bouquets. A long and impressive history of the most memorable West Australian vintages, including tenures at the eminent Madfish and Howard Park, contributed to the success of Hay Shed Hill. The site itself is fortuitously positioned at the heart of Willyabrup, amongst some of the most renowned estates, where the first vines were planted and the great tradition of Margaret River was born. Pitchfork is an immediately approachable, generously proportioned Shiraz with light oak and gentle tannins, bearing the inimitable stamp of Margaret River.

If you want to make good wine you must start with good fruit from a good vineyard. The right varieties need to be planted in the right place. Shiraz is selected from premier Margaret River sites selected on the basis of quality and consistency, the objective being to produce an elegant wine with complex aromas and characters, fine textures and a solid structure. Fruit is vinified in open fermenters and pumped over twice daily, aiding the extraction of varietal expression and tannin development. Maturation in a combination of new and seasoned French oak barriques for a year has achieved a wine of sophistication, completely integrating the fruit, oak and tannins while contributing structure and complexity.
 
Vibrant, youthful appearance, a good depth of colour. Ripe cherry and plum fruits with chocolatey notes and exciting spice the bouquet. The palate displays good depth of fruit concentration, ripe, sweet fleshiness in the middle palate and an extension of good varietal flavours. A ripe, fruit driven expression of Margaret River Shiraz wine to accompany scotch fillet or blue cheese and fruits.
