Wines are meant to complement life's experiences, to express the quality of good fruit without being overworked by the maker. To this end, Pitchfork is fashioned to an approachable modern styling. Cabernet and Merlot grapes are destemmed and fermented separately in open vessels with extensive pump over cap management to aid colour and flavour extraction, as well as optimize tannin development. The aim is to construct a wine with loads of fruit flavours and background tannin, providing structure without astringency. Components are pressed off skins and matured in a selection of new and seasoned French oak barriques, developing complexity and softening the tannins without dominating the fruit.
 
Youthful red hue, excellent depth of colour. The bouquet speaks of ripe berry fruits and chocolate mints which are the hallmark of Margaret River Cabernet. Good concentration of ripe plum, mocha and licorice with elements of blackberry, violets and cherry, all serving to form an impressive, fruit filled, fleshy middle palate. A soft round mouthfeel with ripe tannins to complete the finish.

A long and impressive history of the most memorable West Australian vintages, including tenures at the eminent Madfish and Howard Park, contributed to the success of Hay Shed Hill. The site itself is fortuitously positioned at the heart of Willyabrup, amongst some of the most renowned estates, where the first vines were planted and the great tradition of Margaret River was born. Pitchfork is an immediately approachable, generously proportioned Shiraz with light oak and gentle tannins, bearing the inimitable stamp of Margaret River.

If you want to make good wine you must start with good fruit from a good vineyard. The right varieties need to be planted in the right place. Shiraz is selected from premier Margaret River sites selected on the basis of quality and consistency, the objective being to produce an elegant wine with complex aromas and characters, fine textures and a solid structure. Fruit is vinified in open fermenters and pumped over twice daily, aiding the extraction of varietal expression and tannin development. Maturation in a combination of new and seasoned French oak barriques for a year has achieved a wine of sophistication, completely integrating the fruit, oak and tannins while contributing structure and complexity.
 
Vibrant, youthful appearance, a good depth of colour. Ripe cherry and plum fruits with chocolatey notes and exciting spice the bouquet. The palate displays good depth of fruit concentration, ripe, sweet fleshiness in the middle palate and an extension of good varietal flavours. The Redgate property is one of the southernmost vineyards on Margaret River, situated just three kilometres from the Indian Ocean. The family owned and operated wineworks at Redgate create impressive red wines endowed with the characteristic nose and flavour of Margaret River. Bin 588 was first made in 1988 and has always included harvests of grapes sourced from good local vineyards. This stylish cepage of Merlot with Cabernet Sauvignon is medium bodied with a delicious burst of of ripe dark fruits, plum and blackberry aromas.

Redgate was planted in 1977 by the Ullinger family, it remains family owned and operated to this day. Redgate's vines are grown on a ridge of ancient soils less than three kilometres from the Indian Ocean. This unique combination of soil and maritime clime enable Redgate to nurture fifty acres of vine for the production of true boutique wines. Crafted around a backbone of estate grown fruit, components of Bin 588 are vinified separately to drynesss, followed by transfer to a mix of one and two year old French and American oak barrels for completion of malolactic and a year's maturation. Barrels are treated to rigorous fining trials to achieve the finest balance and determine the final assemblage.
 
Deep ruby colour with purple hues. Black fruits and plum, blueberries and sweet spice dominate the nose, a delicious burst of ripe dark fruits and mulbery seasoned by subtle spice. Blackcurrant, jubes and fruit pastilles drive a palate that's framed by savoury oak and soft velvety tannins. There's plenty of action to Bin 588, a combination of fine texture and fresh bright fruits, worthy of ageing while ultimately fashioned for immediate drinking.

Sandalford Margaret River Shiraz
Margaret River
Margaret River is realizing it's potential as one of the world's great Shiraz producing regions. Sandalford have lead the way in premium Margaret River wines for over 150 years, fine tuning their regimens from vintage to vintage. The changes reflect modern practices, yet maintain the tradition and mystique behind the winemaking process. A mostly Shiraz wine with a portion of Viognier for aromaticness and complexity, Sandalford still practice small batch processing of all fruit, while insisting on maturation in nothing but the finest selection of oak.

Sandalford's vineyards go from strength to strength with each passing year. Shiraz is harvested throughout the cool of night, bunches are destemmed and crushed to ten and twenty- tonne static fermenters. Musts are inoculated with strains of yeast chosen for their excellent affinity to Viognier and Shiraz. Varietals are co fermented to a course of rack and returns with daily pumpovers for optimal extraction and cap management. Vinification proceeds at an even pace for a fortnight until complete dryness. Batches are pressed off skins to barrel for completion of malolactic and a term of age in a selection of French oak prior to assemblage and clarification.
 
Classic dark cherry red with solid magenta hue. Beautiful big, lifted perfumed nose filled with floral accents, spice and liquorice notes. All that is on the nose comes through to the palate. Dark cherry flavours reminiscent of black forest gateaux. Spices comes through the primary fruit character, the texture and structure are seamless. A powerfully fruit driven wine, complex enough to satisfy the most ardent Shiraz enthusiast.

Sandalford Reserve Cabernet Sauvignon

Another compelling edition in the splendid succession of tremendous vintages Margaret River Cabernet Sauvignon, redesigned and relaunched after Sandalford returned to vinifying nothing but their own, exclusively estate grown fruit. These dry grown, forty year old vines are extremely low yielding, translating into wines of power and finesse. It may come as no surprise that leading Margaret River brands buy their finest parcels of Cabernet Sauvignon grapes from Sandalford.

The warm sunny days and crisp, cool nights at Sandalford make for ideal ripening conditions. The growing seasons achieve harvests of disease free fruit, flavour and acidity levels always at optimal levels. After crushing and destemming, fruit is vinified in small ten tonnes static fermenters. A traditional regimen of pumpovers are employed to optimise colour, flavour and tannin extraction. Upon completion, batches are rested for a fortnight on sedimentery soilds, the musts are returned to the free runs and inoculated for malolactic with select bacteria. Components are racked into a selection of new and one year old French oak barrels for a year's maturation and the final assemblage.
 
Dark cherry with a magenta hue. Classic Margaret River nose with savoury notes of bay leaf, rosemary and sage. Primary fruit of violet and blackcurrant can be sensed along with seamless cedar/ vanillin oak nuances poking through. A magnificent full bodied wine with silky tannins and bags of dark briary fruit flavours, toasty oak elements woven through the mix. Long, persistent finish, subtle oak, the quality is outstanding.
Stella Bella Cabernet Merlot

Margaret River is Australia's premier Cabernet appellation and Cabernet Sauvignon is without doubt Margaret River's great vinous endowment. Fine Cabernet should be perfumed yet poised, and meticulous site selection is critical to achieving these qualities. Stella Bella is a mostly Cabernet wine with a third of Merlot, all sourced from several select vineyard sites located centrally around the township of Margaret River and north to Cowaramup, in an endeavour to capture ripe fruit flavours yet retain the distinctive perfume of Margaret River Cabernet.

The key selection criteria are all about soil, the best sites consist of lateritic gravels over a clay loam base. The flagship Isa vineyard, just south of Margaret River provides the backbone of fruit. It's signature perfume is ever present in the wine, year in and year out. All the individual vineyard parcels are vinified separately. Following fermentation on skins and completion of malolactic, Stella Bella is treated to a luxurious selection of French tonnellerie's barriques for extended maturation. The length of time ageing is important for the complete integration of oak, fruit and tannins in the final wine. Bottling occurs in May of the second year, followed by several more months of bottle age.
 
Dark ruby. Young, powerful and deliciously ripe Cabernet aromas of cassis and mint with a touch of mocha and toasted oak spice. A rich, lush palate of abundant fruits over hearty tannins, currants and mulberry, blueberries and cassis, the savouryness of dried herb and and a long lingering finish of smoked meat complexity, cinnamons and clove, all supported by an inseparable length of the finest French oak.

Streicker's Bridgeland property yields harvests of the finest Shiraz. Crafted to traditional winemaking techniques, a regimen of old fashioned plungings and open ferments, into a pure, single vineyard Rhone style Syrah. A mere 250 cases produced each year, vintage 2009 claimed top trophy at illustrious VISY Great Australian Shiraz Challenge, the first time ever for Margaret River.
