Parcels of grapes are selected from the choicest blocks with a view to creating a fully integrated Chardonnay wine with the requisite balance and optimum flavour profile. The traditional approach to winemaking at Howling Wolves is facilitated by state of the art technology. Chardonnay is harvested throughout the cool of night and immediately treated to a gentle press. Juices are vinified with a small proportion of solids to improve texture and mouthfeel. Upon completion, the wine is cold stabilised, filtered and promptly bottled to retain freshness and vibrancy, completely unoaked to articulate varietal regionality.

Pale straw colour. Peaches and cream nose with lifted pear and tropical fruits. Medium to full bodied, a fully flavoured, well rounded palate, rich and soft, highlighted by ripe tropical flavours before a warm lingering finish. Brilliant, youthful green straw hue. A vibrant and expressive nose, characterised by a classical fruit profile, nashi pear and lime curd, ripe white peach and quince. Nuances of flint and sweet cinnamon feature in the background. On the palate, a gentle and restrained entry shows great poise. Purity and clarity of fruit is underpinned by lively pear, grapefruit and lime flesh. The middle palate is textural with a slight creaminess, generous with concentrated fruit.

Winemaking however is an art as well as a science and it is here where the skills of the staff combine with technology. Broadly following European old world practices, Leeuwin remain focused on achieving complexity, balance and longevity in their wines. Strict temperature controls, Bucher pneumatic presses and a cellar of imported French oak are at the disposal of the winemaker to ensure that the fruit is transformed into the finest Margaret River Chardonnay. Enhanced by a regimen of lees stirring over the course of many months, Prelude achieves the ultimate balance while maturing in a selection of fine French oak barriques. Alcohol 13.5%

Brilliant straw green hue. A bright and vibrant bouquet portraying beurre bosc, fresh lime wedge and ripe fig. Complex and layered palate, features a delicate lemon, pear and lime fruit spectrum at the forefront. Mealy notes, gunflint and subtleties of nougat, fragrant jasmine and sweet spice provide breadth to an elegant nose. Delicately textured with vibrant grapefruit and freshly cut lime, width and complexity enhanced by fluffy nougat notes.

Moss Wood include parcels of exposed grapes with no leaves, others without leaf removal. The former is a more complex style of Chardonnay with accentuated malty and roasted nut characters while the latter tends to retain citrus, honeysuckle and peach blossom aromatics whilst looking prettier. Before assembling, there are extensive tastings to check on the choice of barrel and to compare the different levels of exposure. The results are fascinating, a grand total of just a few hundred cases are made each year, Moss Wood Chardonnay is always beaut.

$6599each $791DOZEN EACH DOZEN Chardonnay is hand picked and whole bunch pressed, the free run juice and pressings are kept separate, cold settled for a couple of days and fined to remove excess phenolics. Batches are transferred to fermenters, a small percentage of lighter settling solids is included, warmed and inoculated with pure yeast cultures. After a day of activity, the ferments are racked to a selection of seasoned and new 225 litre French oak barriques, vinified to dryness, assembled and treated to full malolactic. The winery air conditioning system is adjusted to keep ferments at lower temperatures between 8âC and 20âC. A total of twenty months in oak is followed by bentonite fining and sterile filtration.

Medium straw hue. Lifted and complex, nectarine and blossoms, lemon marmalade and lime, long term barrel aging adds malt, roast nut and cinnamon notes. The front palate shows generous ripe fruits, full body and smooth texture. Generous peach, marmalade and roast almond flavours, a balanced astringency that builds the mouthfeel but doesn't impinge on the texture, giving a long, sweet, round feel.

Picardy is a traditional Burgundian style of Chardonnay with impressive aromatics and profound fruit character. The wine possesses all requisite floral and fine grassy sour sob/ oxalis grass characters expected in a young Burgundy. Picardy offers great texture and solid structure with high acid and extraordinarily low pH whilst retaining perfect balance. Crafted from grapes grown to four clones of vine imported from France, selected over a decade of trials out of a field of several hundred, grown to some of the most illustrious vineyards in Burgundy.

$5199each $623DOZEN EACH DOZEN The history of Chardonnay at Picardy began when Bill and Sandra Pannell were fortunate enough to meet M. Vincent LeFlaive of the famous Puligny Montrachet, during his visit in 1989. Believing that Pemberton was ideal for the most refined styles of Chardonnay, Pannell decided to research the situation with respect to clones. Several hundred were trialled in Burgundy and four were selected, 76 and 95, 96 and 277, on the basis of the quality as opposed to yield. Twenty cuttings of each were imported into Western Australia, held in quarantine for the growing season of 1993 to 1994, replanted into the Picardy property the following spring. Picardy now has in excess of a thousand vines of each.

Bejewelled yellow colour. Bright and fresh, redolent with nectarine, while the oak adds a hint of spice and grilled nuts, very elegant, exhibiting minerally flavours, with the refinement and length of the great Burgundies, finishing on a note of citrus. The highlight is a purity of fine chardonnay fruit flavours, Picardy appeals as the quality of West Australian fruit shines within a fine Chablis styling.
