Elegant, fine and complex Chardonnay wines set Margaret River apart, the fruit when at its best, rivalling anything in the world. Recognised as one of Margaret River's most eminent winemaking estates, Devil's Lair construct the most profound regional efforts. Situated at the southern end of Leeuwin Peninsula, the Devils Lair vineyards enjoy a combination of geology, geography and climate which contribute to some of the finest harvests of Margaret River Chardonnay. Exclusively estate grown fruit is picked over a range of ripeness levels to attain complexity whilst retaining characteristic finesse and elegance. Devil's Lair is matured up to a year in a combination of new and prior use French oak barriques.
 
Pale straw with green hues. A nose that is both complex yet subtle and evolving with notes of pear, pink grapefruit and nuttier tones of cashew, hazelnut and spice. A highly textured palate of great length and persistence, layers of flavour ranging from stonefruit to golden, developed characters. Oak offers great support to the vigorous fruit, vanilla and creme brulee achieve an inspiring complexity.

Chardonnay vines fare exceptionally well in Margaret River, as appropriate shading yields intensely flavoured fruit with excellent natural acidity. The afternoon sea breezes typical of the region, cap the daytime temperatures and produce cool summer nights for which Margaret River is renowned. The balmy climes encourage ripening of the white varieties as flavour ripeness is achieved at lower Baumes with excellent acid retention. Grapes must be picked from midnight to 7am and are processed separately without delay to preserve quality and freshness.

Chardonnay is selectively hand picked across separate blocks on different dates, over the course of two or three hours as flavours peak. Parcels are chilled to 5C and passed through an airbag press into new French oak 500L oak puncheons, only the finest quality pressings are retained. Barrels are vinified through the action of wild indigenous yeast, imparting great depth of flavour and aromatic complexity. Upon completion, barrels are topped up and treated to a term of maturation, regularly lees stirred to develop mouthfeel and texture. The best barrels are identified and assembled into the final wine, followed by an extended term of bottle age under the Evans & Tate cellars before release.
 
Mid golden straw hue. A pure expression of Margaret River, delicate layers of complexity that slowly build and evolve, lemons and lime, white peach and melon aromas provide primary fruit intensity with savoury elements of toast, slate and dried herb. Citrus flavours provide great freshness with stonefruit and melon flavours imparting concentration and fruit intensity. The barrel ferments achieve lovely textures and complex savoury notes.

Choice grapes from exceptional sites have been vinified into a profound wine of oak barrel ferment richness and fragrant custard spice, grapefruits and fig over a framework of delicately integrated quality French oak.

Flametree is a highly meritorious winemaking estate that works very closely with the most dedicated growers. A commitment to excellence is the driving force which sees the quality of wine gain stature with every vintage. The aim is to make wines that express the high quality of fruit and which strike the balance between flavour and structure. A balance of semi turbid and very turbid juices are wild fermented in a mix of seasoned and new French oak puncheons and barriques, followed by ten months repose in barrel.
 
Pale golden hues. Dried pear, grapefruit, honeydew melon and fig characters are well supported by subtle French oak. The palate is textured, yet savoury, from the exciting wild ferments and turbid juices, a perfect balance of fruit flavours and tight structures, very much in line with the new wave of modern Australian Chardonnay.

At the core of Forest Hill's elite range of single block editions, are the original estate plantings of the 1960s and 1970s. These gnarly old vines are deep rooted and dry grown, defined by their low vigor and scant harvest of tiny berries, conspicuous for an intenity of flavour and wonderful crystalline textures. These are the earliest and most precious parcels of Chardonnay in all Great Southern, yielding a graceful yellow wine, brimming with golden peach and grapefruit characters, florals, almonds and flint, its powerful mineral finish driven by juicy, ripe stonefruit acidity.

Forest Hill is a Great Southern of class and distinction, a Chardonnay of elegance and controlled intensity. Aromas of ripe peach and apricot are complemented by light citrus, hints of vanilla, dry fig and perfumed lifted Burgundian oak introduce a style with rich intense full palate backed by pleasant hints of roasted almonds and butterscotch. The product of choice fruit from a great vineyard, the recommended match to salt & pepper squid, a combination that will amalgamate its savoury notes with the fine acid structure and complexity of such a vibrant wine.

All grapes are hand picked in pristine condition, refrigerated overnight and treated to a gentle whole bunch pressing. Juices are transferred directly into Burgundian oak barrels under strict temperature controls to ensure a slow fermentation, allowing for the development of more complex flavours and seamless integration with oak. Upon completion, without any exposure to malolactic, lees are stirred gently once a week until the perfect balance between oak, lees and fruit is achieved. Components are matured ten months in a selection of new and prior use French oak barriques by François Freres, Seguin Moreau, Damy and Marsannay.
 
Brilliant medium straw. Lifted aromas of fresh white nectarine, apricot with lemon rind notes as underlying nutty aromas develop in the glass. Vibrant stonefruit and delicate citrus flavours, subtle hints of roasted nut, the mouthfeel is fleshy with intense fruit characters yet medium in weight and beautifully structured. The oak is perfectly integrated within the lingering spicy finish, ideally alongside garlic butter seafood over lemon dill risotto.
