A collation of the chocest fruit from good vineyards is assembled to realize more complex and interesting wines. Cabernet Sauvignon is sourced from vineyards at the northern end of Margaret River. All care is taken throughout a very gentle handling and vinification to preserve the vigorous Margaret River fruit character. Soft extractions and cool fermentation temperatures achieve a soft, fleshy wine with lovely aromatics. The finished wine is treated to a year's maturation in a selection of seasoned French oak barrels before fining and filtration.

Bright scarlet colour. Blackberry and briar fruits aromas all combine with subtle vanillin oak. Blackberries, plums and dark cherry fruits extend on to the palate where the rich fruit characters merge with subtle oak and gentle tannins to form a lovely medium bodied Cabernet wine, fashioned to a soft, unpretentious and easy drinking style. The Flametree wineworks are located on the picturesque shores of Geographe Bay, whence some of the new world's finest Cabernet wines originate. Flametree can lay claim to retaining some of Margaret River's most auspicious vines. Parcels of Cabernet and Merlot grapes are placed into open pot fermenters for several days of cold soak. Fruit is treated to a wild indigenous yeast vinification with gentle plunges and pumpovers, followed by a course of malolactic and a year's maturation in a mixture of seasoned and new French oak barrels.

The vineyard is located in Mount Barker and the vines date back to original plantings made in 1965. This makes Forest Hill the oldest cool climate winery in Western Australia. Warm daylight hours coupled with the cool nights of the Great Southern harness ideal conditions for the production of slowly ripened wine styles. Harvests of Cabernet Sauvignon, picked of the superior Block 5, are destemmed and crushed into eight tonnes, open fermenters, inoculated and pumped over thrice daily at 25C. Batches are transferred to oak barrel for completion of malolactic and eighteen months maturation.

A deep scarlet colour. Expressions of dark berries, tobacco leaf and subtle earthy notes carry through from the bouquet onto the palate with lingering dark chocolate characters. A long and generous mouthfeel is well supported by a very dense structure of chalky tannins. Approachable now, Block 5 will continue to soften and integrate as it develops into a longer and more complex, mouthfilling wine.

$3199each $383DOZEN EACH DOZEN Forest Hill's timeline with Cabernet Sauvignon goes back to the original two hectares of planting in 1965, when the earliest batches of fruit were vinified at Houghton's. Forest Hill choose to dry grow their vines, believing it to be a major contributor to vine health and concentration of fruit flavour. As the vineyard developed and more vines were planted, Forest Hill began to be recognised throughout Australia as a producer of very high quality fruit and the backbone behind some of WA's most famous wines. The unique attributes of the region were recognised by the late Robert Holmes à Court who, in 1989 purchased Forest Hill as the oldest vineyard in the Great Southern to complement his ownership of Vasse Felix.

Deep red, purple hue. Lifted aromas of dark berries with hints of dry tobacco leaf, earthy undertones and savoury notes add complexity, subtle spices evolve. Medium bodied palate with a firm rich mouthfeel, a wine of considerable intensity and concentration, flavours of black and mulberry, tobacco leaf and subtle earth characters carry through onto the palate. Slightly dusty, chewy tannins, well integrated with good middle palate richness and definition.

A complex cepage of mostly Cabernet Sauvignon with a balance of Merlot, totted up by smaller portions Petit Verdot and Cabernet Franc, sourced from neighbouring properties at Yallingup, the northernmost district of Margaret River. Particular attention is paid to inclusion of fruit from auspicious gravelly soils. Fashioned to retain youthfulness and fruit integrity, even after an extended ageing in French oak, a medium bodied, contemporarily styled Margaret River claret style to be enjoyed alongside meats with rich sauces or ripe, pungent cheese.

Varieties come off in an orderly manner and the winemakers are rewarded by harvests of the finest quality. Each parcel is gently crushed into small open fermenters with traditional heading down boards under strictly controlled temperatures. Gentle extractions, always the priority at Forester, are achieved by daily drainings away from the skins and returning back. Chilled to 8C for cold soaking into closed fermenters, designed with a one-to-one ratio of height and length, just great for colour and flavour extraction. The ferments are pumped over daily using a turbopiguer. On skins for ten days, tasted regularly to monitor tannin, before pressing off skins through an airbag tank press. Pumped to French oak barriques from a number of Bordeaux cooperages for malolactic, barrels are racked twice over ten months maturation and development. Treated to fining trials for essessment of the final balance, Fraser Gallop is bottled unfined after a cross flow filtration.

Bright crimson, ruby hues. A nose of red fruits and plum, mulberry and cranberry, floral notes and violet, the trademark Wilyabrup Cabernet dustiness over subtle oak adds complexity. The palate is soft and approachable with juicy plum and pomegranate flavours. Consistent, grainy tannins not unlike the astringency of cranberry juice. The wine was pumped over daily using a turbopiguer, allowing better homogenisation and extraction without damaging the berries. One batch is pressed off skins early to complete fermentation in oak, another is pressed off just after fermentation, a further component is pressed off just after fermentation and treated to macro oxidation for five days, another is left on skins for thirty five days. Each technique contributes something unique. The wines are transferred to French oak for malolactic and racked twice over the next year and a half, topped up every four weeks before assemblage.

After an exhaustive search to isolate the finest site for Margaret River viticulture, John Evans and John Tate planted vines on a piece of land along the northern bank of Wilyabrup River. One of Evans & Tate's most enduring labels, drawing fruit from across all of West Australia's premier winegrowing precincts, Gnangara have consistently delivered opulent, mouth filling red wines which are charged with the definitive west coast style and charm. Cuisine? Match Gnangara with a cut of yearling beef and dressed in porcini and wine sauce.

Merlot is picked between midnight and early morning to ensure it reaches the winery as cold as possible. Fruit is gently destemmed into fermenters for a few days of cold soak, infusing aromatics, good colour and tannin structure. Cabernet Sauvignon is picked during the day for immediate vinification. Each parcel is fermented for several days, thoroughly aerated every eight hours along with seed removal. Upon completion, batches are pressed and racked off yeast lees, a choice component is filled to a selection of French oak barrels for a term of maturation, followed by assemblage into the final wine.

Dense purple colour, bright red, purple rim. Lifted ripe plums and red berry fruit notes on the bouquet, complimented by hints of clove and vanilla bean spice. Supple fruit core of juicy dark plum and bright red berry fruit notes dominate, held together by a lovely acid line and supporting oak. The tannins are just there, velvety, the palate extends itself with persistence, to a long dry finish.

The enduring Evans & Tate were at the forefront of Margaret River's rise to international recognition, to this day they are endowed with some of the region's most bountiful Cabernet vineyards. Their viticultural team have trained the resplendent sites to bestow perennially upon the winemakers, vintages of increasing excellence. The best parcels are selected and vinified to a mix of old and new world techniques, to achieve a Cabernet wine with an intensity of flavour in compelling, Margaret River styling.

Prior to picking, grapes are tasted twice weekly to monitor flavour, colour and tannin development. Bunches are harvested throughout the cool of night and early morning, gently destemmed, transferred to static fermenter and cold soaked for several days. Parcels are fermented at 22C to 24C as seeds are carefully extracted and batches thoroughly aerated every eight hours. Upon completion, components are pressed to tank and racked clean off yeast lees, a third of Gnangara is matured in French oak.

Deep purple red colour. Pure Cabernet nose exhibiting briar, fresh blackberry and blueberry aromas ahead of a leafy menthol/spearmint lift. French oak maturation has infused delicate cedar and subtle spice notes.
