Robert Strangways Wigley was an eccentric South Australian cricketer who established Wirra Wirra in 1894. He produced a highly prized Shiraz which was exported to England and the Empire until he passed away in 1925. The cellars fell into disuse after the 1936 vintage and remained inoperable until Greg and Roger Trott rebuilt the ironstone winery by hand in 1969. Tradition has it that the ¾ tonne Angelus bell which sits atop Wirra Wirra was rung thrice daily from the Jesuit Church at Norwood, calling the faithful to prayer.

$6499each $779DOZEN EACH DOZEN McLaren Vale, as well as being home to some of the oldest Shiraz vines in the world, is blessed with soils and climes which are ideal. Vineyards contributing fruit to Angelus are up to sixty five years of age, typically low in vigor, producing modest yields of intensely flavoured berries. Parcels are picked in small batches from superior sites at Seaview and Blewitt Springs, Onkaparinga Hills and McLaren Flat. Grapes are treated to a cold soak, inoculation and cap management throughout the ferments, followed by a traditional basket press to oak for completion of malolactic. Each batch is matured fourteen months in a mix of seasoned and new French oak barriques, rack and returned, before the final assemblage.

Deep violet purple. Fresh and exceptionally varietal with lifted blackcurrant leaf and cedar notes integrated with some toasty oak. The palate is refined and elegant, mouthfilling with plums and mulberry, black cherry fruits and long, persistent fine grained tannins. Aromatic cedary oak with anise and dark chocolate adds layers to the fleshy red fruit. A wine of balance, power and style, to be served alongside the finest gourmandize.

Named after a set of medieval leg pillories which remain preserved as a museum piece in Oxfordshire. The team at Woodstock consider themselves lucky to be caring for some of the oldest McLaren Vale vines. Fruit for inclusion into The Stocks is sourced from thirty one rows of ancient McLaren Vale vines, planted circa 1900 on a sandy north slope at the Woodstock property, only the most exceptional barrels of aged Shiraz are selected. The palate is plush with an intensity and complexity of flavour that will continue to evolve and mellow in the glass.

The vineyard is dry grown and yields are deliberately kept low, achieving harvests of true intensity and concentration of flavour. Shiraz is picked throughout the cool of night to preserve character and complexity. Grapes are crushed and cold soaked for a day in small open fermenters, inoculated, vinified over the course of a week and hand plunged twice daily. Batches are transferred to a mix of French and American oak barrels for completion of ferments and a term of maturation. Only the finest are selected for inclusion into The Stocks. Alcohol 15.5%

Deep and dark, indigo hues. Traces of cigar box, choc mint, meaty and earthy tones on the bouquet. The palate is plush and complex, loaded with a myriad of dark berries and spice. Good intensity of flavour and savoury tannins in balance, ripe, sweet fruit, a complex chocolate berry heart, lovely structure, good middle palate richness which lingers. A Shiraz of splendid fruit concentration, yet a touch elegant, Woodstock recommend thirty minutes breathing followed by decanting.

Outstanding Langtons Classification. Octavius has established a reputation as one of Australia's Shiraz icons. In addition to being sourced from a number of very old Barossa vineyards, Octavius is treated to an extended period in American oak octaves of ninety litres capacity, the only red wine in the world to be matured in such small barrels. The secret of the wine not becoming overpowered by oak lies in the wood itself, which is open air seasoned at Yalumba's own cooperage for eight years before the octaves are coopered and put to use.

$13999each $1679DOZEN EACH DOZEN Grapes are all hand picked from heirloom vineyards, bush vines planted between late 19th and early 20th century, the oldest dates back to 1854. Fruit is crushed into eight or six tonnes fermenters, the wild yeasts present on grape skins initiate fermentation. Vinification and cap skin management in open and static potter fermenters is controlled by the Yalumba designed cap plunger. The result is a wine with excellent depth of colour, richness and complexity. Matured twenty months in a high proportion of new French, American and Hungarian oak hogsheads, octaves and barriques. Yalumba are one of the few wineries in the world who retain their own coopers practising the ancient craft of barrel making.

Deep bold red purple. Exotic fig and plum sauce, mocha and black liquorice notes on the bouquet. Dense and brooding, showing sweet Shiraz fruit concentration and fine seamless tannins. Long and lush through the finish, exhibiting great integration, elegance and style.
