From the home of the 2007 Jimmy Watson, the fruit of McLaren Vale's illustrious Block 3 has also claimed Winestate Shiraz of Year and hotly contested VISY Great Australian Shiraz Challenge. Estate founder Domenico Scarpantoni established a peerless reputation as vitculturalist during distinguished tours of duty at Seaview and Thomas Hardy Tintara. Block 3 sets the benchmark in McLaren Vale Shiraz, vinified from grapes hand picked off gnarled and parched, dry grown old vines, seventy years and more of age.

Scarpantoni pride themselves on making wine from fruit grown to their own vineyards. The sites are scattered around McLaren Vale, all enjoy their own soil profiles, aspects and exposure, factors which influence the grapes, ultimately defining the character of the finished wines. Scarpantoni's vineyards were planted by the family themselves, except for one. Block 3 was established in the 1940s, now source to a pure, single vineyard wine. Block 3 runs along the right hand side of the Scarpantoni wineworks, on a patch of sandy soil which retains moisture at lower depths, ensuring natural nourishment for the deep rooted vines throughout the most severe of droughts. It yields a harvest of the most remarkable quality Shiraz.
 
Inky purple/ black in colour. Exquisite bouquet of ripe, aromatic blackcurrant, liquorice and nutty, toasted oak. The palate is full and rich with coffee, cassis and spice characters balanced by fine tannins and elegant acidity. Ripe blackberries, licorice, cinnamon and mocha are the hallmark Block 3 characters. To accompany slowly braised osso bucco or middle eastern seasoned lamb stew and couscous.

After thirty years of pioneer farming in the harsh South Australian Mallee, Ben Schild had a vision of settling down to a property which was better suited to viticulture. Schild purchased Three Springs Farm in the 1950s, a promising site which already included a block of productive vines. Hand harvested to exacting timetables and at optimum ripeness, batches of Grenache, Mourvèdre and Shiraz are picked off the heirloom Three Springs, Kleemans and Angus Brae vineyards at Lyndoch in Rowland Flat. Batches are pressed and treated to a traditional course of open fermentations, bottled early with minimal filtration but without any exposure to oak, achieving a wine that's complex and beguiling yet fresh.
 
Bright crimson purple. Intense spiced red cherry compote bouquet. Old vine Grenache fruit presents itself on the front palate with a juicy red berry intensity, Mourvèdre and Shiraz add blueberries, ripe lush tannins and a vibrant mineral structure. Hints of white pepper and spice over a soft tannin framework, followed by a long and supple, dynamic finish.

One of the new world's most exclusive, ancient vineyard wines, awaited annually by the most discerning Shiraz enthusiasts around the globe. Only ever bottled in the finest vintages, fruit is sourced from the superior Ahrens Vineyard at Lyndoch and the historic Moorooroo site at Jacobs Creek, which for more than 120 years, ended up with Orlando. Moorooroo is made from the four remaining rows of the original William Jacob Shiraz plantings, saved from the government sponsored vine pull schemes of the 1980s by estate patriarch Ed Schild.

In 1846 William Jacob accompanied Colonel William Light on the Seven Special Surveys expedition to open up Adelaide's north. Jacob and his brother John claimed the rich alluvial junction of Jacob's Creek and the North Para River for future farming opportunities, which they established shortly after. Moorooroo has been produced from the remaining four rows of original Shiraz plantings, saved from the vine pull of the mid 1980s by Ed Schild. Grapes are crushed and open fermented until dry. Moorooroo is matured twenty four months in a mix of new and prior use French oak hogsheads, followed by a minimal filtration and bottle ageing under the Schild cellars for a further two years.
 
Dark purple colour, almost black. Brooding bouquet of dark berry fruits, mocha and chocolate notes. An opulently rich style, showing cherries and subtle oak, vibrant floral fruit flavours evolve, a lovely palate borne perfume. Moorooroo defines power with balance in control, supported by fine, firm tannins before finishing integrated and immeasurably long.

Sevenhill conjures up visions of Clare Valley idyll, serene pastoral vistas and ancient cellars full of patiently maturing Shiraz wines. One of our nation's great viticultural endowments, Sevenhill were the first ever cellars to be established in Valley Clare. Winemaking is still carried out under the direction of the Jesuitical Manresa Society, sacramental altar wine still accounts for a third of the estate's production. Inigo is an intense yet balanced Shiraz with the requisite character and charm to articulate the grace of vines up to 140 years of age.

Sevenhill retain some of the Clare Valley's most distinguished sites, the viticultural team are devoted to the nurture of the precious vines. There are several open top fermenting vats at Sevenhill, made from large slate slabs around a century ago, mined from the nearby town of Mintaro, they are irreplaceable. The size of these old world vats is perfect for Shiraz, a large surface area of wine in contact with the fermenting skins gives the best extraction of colour and flavour, while permitting the heat of ferments to escape. Each batch is plunged by hand and manually basket pressed, followed by maturation in a selection of seasoned and new French and American oak barrels. Alcohol 15.2%
 
Dense, purple black colour. An aromatically spiced, pepper and pencil oak nose, elegant perfumes of cedar, menthol and mint. The palate shows a generous expression of fleshy, ripe plum fruit flavours, dark cherry and cassis. Full bodied, the finish resolves on a length of firm, soft tannins, seasoned by delicate fragrant, spicy notes.
