Harvests of physiologically ripe grapes are essential, the luxury of extended maturation in a high proportion of new oak augments the fruit and beatifies the tannins.

Frustrated at not being in control of their own fruit as they watched it trucked away to other wineries, Norm Doole and Drew Dowie opened a bottle of red over breakfast and decided to form a partnership, the purpose of which was to take complete charge of their grapes and to make their own wines. Five tonnes parcels of McLaren Vale Shiraz are picked at healthy levels of ripeness and treated to a few days of cold soak, batches are crushed and vinified for up to three weeks in traditional fat boy fermenters. An extended term of skin contact is followed by pressing into French oak barrels for completion of malolactic and several rackings over the course of eighteen months maturation.
 
Bright, dark crimson hue. Spicy, sweet plum and black cherry fruits on the nose, some white pepper and cloves with hints of dark chocolate and fruitcake overlaying creamy, vanilla oak. The palate is rich and fulll with layers of flavours of dark plum, ripe black cherry, dark chocolate and spices before a long, rounded, sweet fruited, spicy finish. A match with rib eye and bone marrow sauce.

The most highly coke addled marketing executive couldn't have come up with a brand like Dowie Doole, but fast forward and the label now enjoys a growing reputation for profound Shiraz wines in Australia and overseas. Small crops of extraordinary quality fruit are grown to some enduring Mclaren Vale vines, to be fermented and matured at the Boar's Rock wineworks.

The small 74 Block was the first parcel to be replanted on Norm Doole's California Road Vineyard in 1974, it produces fruit of unique concentration and complexity. Shiraz is harvested throughout the night to take advantage of cooler temperatures. Fruit is crushed into a small static fermenter for vinification on skins over a period of eight days while being treated to pumpovers thrice daily. At 2 baume the must is pressed straight to a selection of completely new French oak hogsheads for twenty four months maturation and a course of several rack and returns. Upon completion, the assembled Dowie Doole is given a coarse filtration before bottling.
 
Intense deep purple colour. A complex nose of dark fruits and leather, spices and dark chocolate. The full bodied palate is rich and generous, it follows on from the bouquet with blackberry and plums, spices and dark chocolate. A complex wine with excellent tannin structure, length and weight, marzipan and liquorice linger right through and onto the very long smooth aftertaste.

Grapes are destemmed and crushed into wax lined, seven and four tonnes, open top concrete fermenters. The batches are tasted thrice daily and the temperatures are adjusted at each tasting to maximise flavour, keeping the tannin in balance with the intensity of fruit. When the tannin and fruit balance are extracted to the desired level, the wines are basket pressed, settled and racked into a combination of the finest 225L French oak barriques. Components are tasted regularly throughout maturation, racked and returned as required. After twenty months, the very finest barrels are set aside for inclusion into the final assemblage.
 
Vivid garnet, deep purple hues. Highly complex aromas of allspice, chocolate, olive, fresh blueberry and persimmon flesh complemented by underlying spicy French oak and savoury, smoky notes. Layers of dark chocolate, rhubarb and plum, ripe blueberries sit in harmonious balance over subtle French oak and fine silky tannins. Very concentrated and very long, exhibiting tremendous finesse, the intense flavours culminate in a long, persistent finish.

Fox Creek's vineyards are hand pruned to control vigor, maintaining cropping levels quite low to yield small berries full of concentrated flavour and colour. Native flora and fauna are encouraged as they are excellent pest control and deter parasites. The winemakers sample the grapes regularly to determine optimum picking time as judged by flavour development and baume. Grapes are delivered promptly to the winery. Each batch is open fermented for seven to eight days on skins with low intensity pumpovers conducted to preserve primary fruit flavours. The wine is pressed off to finish fermentation and maturation, mostly in a selection of older French and American oak barrels.
 
Vibrant purple. Intense aromas of mulberry, blackberries, plum and cherries, interwoven with nutmeg, cinnamon and clove. Fresh juicy red berries, plums and black cherries lead into a vanilla custard mid palate with hints of toast, coffee and mocha. The youthful tannins complete the experience with an injection of fresh toasty oak on the finish. The perfect accompaniment to richly sauced meats.

Shiraz is sourced from the choicest blocks of McLaren Vale vineyards endowed with a range of terroir contributing structural and flavour complexity. Soils include bay of biscay, grey loam, and red gravels. Grapes are harvested when fruit flavours, tannins and acids are in perfect harmony. Vinified on skins for eight to ten days, all components complete ferments in barrel, developing texture while integrating oak and tannins. Matured twenty one months in a combination of specialized oaks by a range of French, American and Australian coopers. Barrel by barrel selection throughout all stages of fermentation and maturation ensures that only the outstanding parcels are included in the final wine.
 
Intense dark garnet colour. Red cherries, plums and a hint of herbaceous spearmint lift, meld with the complex aromas of cinnamon, nutmeg and roasted chestnuts. The palate is rich and full showing lashings of plums and cherries, with earthy nutty notes rounding out the mid palate. Power, richness and complexity, the structure is thick and rich, characterised by vibrant textural tannins which soften as the wine evolves, it finishes lingering and long.

The vines on Short Row block are planted for optimal light exposure, translating into yields of the most flavoursome Shiraz grapes. Fruit is vinified on skins for seven to ten days in open fermenters prior to pressing, the majority is treated to a spell of oak barrel fermentation. Parcels are matured in varying proportions of new and one year old French and American oak barrels for eighteen months. Components are selected for inclusion based on fruit intensity and richness, structure and refined integration of oak. While made to drink well upon release, like all good wine, Short Row rewards the enthusiast who will take the time to decant and set aside for breathing.
 
Deep purple/ crimson hue. Ethereal perfume of nutmeg and musk, cinnamon and vanilla, intertwined with aromas of plum and raspberries, strawberries and red cherry, all sitting on a layer of dusty, smoky toast. Rich fruit driven front and mid palate crammed full of cherries and plum, strawberries and cream. This ball of richness is a hallmark of the style, youthful grape tannins provide a gritty texture and length that will continue to soften and integrate.

Ernest Allan Rivers was a highly gifted agriculturalist who possessed an uncanny understanding of the soil, seasons and harvest. The Gemtree viticutural team have assembled parcels of Shiraz from a number of elite blocks, picked to a schedule holistically determined by the vagaries of vintage for optimal flavour and tannin ripeness, naturally fermented on skins for a fortnight, pressed and drained into French oak barriques for aging on gross lees over the course of twenty months. Hands off winemaking, purity of fruit, unfined and unfiltered, a raw gem, the uncut version. In 1980 Paul and Jill Buttery purchased their first property on Tatachilla Road, a 38-acre vineyard of Cabernet and Shiraz with a limited supply of mains water. Over the years some of the original site was grafted to white varietals and has since been converted back to various clones of Shiraz. The incredibly low yields across the Uncut blocks have translated into an amazingly powerful wine. Minimally pruned vines, open ferments, gentle pressing and minimal fining and filtration, these are the maxims. A dozen or so Wiltipole sheep amongst the vines help reduce weeds and keep the grass mown around the place.
 
Deep crimson, purple hues. Satsuma plums, licorice, white pepper, black jubes, mocha, red cherry, hints of cinnamon and savoury oak. A complex web of flavours that traverse the palate.
