Fruit for the White Label is sourced from splendid Langhorne Creek vines which can trace a heritage back to the original plantings of 1891. In its day, originally crafted by the current winemaker's forebears, the century old block at Metala Creek still contributes grapes. A mostly Shiraz mix with a third of Cabernet Sauvignon, the famous Metala label stands as an icon of the Australian wine industry, still crafted by the same geneology, mostly from the same old vines. After careful harvesting to achieve perfect ripeness, fruit is crushed into traditional open fermenters and macerated for optimal extraction of flavour, colour and tannins. Upon completion of ferments, Metala is pressed and racked before being transferred into a selection of French and American and French oak barrels for extended maturation. A careful assessment of each barrel is carried out, the finest are assembled into the finished wine.

Dense, dark brooding colour. An enticing nose of sweet herbs, ruby red berries, ground black pepper and mint. Intense plum, cherry and blackcurrant fruit scents are supported by hints of eucalyptus and licorice which characterize Langhorne Creek. On the palate, Metala is full bodied and rich with wonderful, dense blackberry fruit coupled by substantial but tender tannins. Choice parcels of Shiraz exhibiting a concentration of flavour are assembled, red berries and rich plums, savoury notes and ripe tannins. Crafted to a combination of traditional old world winemaking methods and modern vinification techniques, fruit is treated to a course of maceration for optimal extraction of tannins and colour, followed by a week or two of ferment and transfer to a selection of French and American oak barrels for malolactic and fifteen months maturation. The individual components are separately aged and the candidate barrels are determined through a staged selection process.

Rich red colour with dark purple rim. Nose of rich concentrated red and blue fruits, dark chocolate and rich mocha notes with hints of spice and cedary oak. The palate is rich and plush with good structure, a concentrated layer of berry fruit flavours and judicious oak, balanced by fine tannins to give length and power while finishing soft and full of flavour.

The wines remain on the property from picking to bottling under exclusive control of the dedicated team. Temple Bruer has long held to the philosophy that responsible farmers, of which winegrowers are merely one example, should aim to minimize chemical inputs into the environment. Additives-free vinification is applied to Cabernet Sauvignon, Merlot and a component of Cabernet Franc grown to the Temple Bruer estate vineyard. Treated to an open fermentation, gentle pressing and maturation in French oak casks. At bottling, Temple Bruer was filtered to ensure long lived quality.

Deep red colour. Opens with sweet bouquets of cassis, gumleaf and cocoa, mulberries, red forest berries and mint, regional characters of earth and musk. The palate is full of flavour, beautifully balanced and well supported by fine, mouth coating tannins. Temple Bruer finishes dry on a note of lingering earth and cedar characters.

The palate is full and fruit driven, layered of a length of firm, fine tannins, lingering at the finish on an exciting complexity of ripe forest berries over vanilla oak.
