Parker Estate was built from the ground up in the right way, with the intention of producing precisely this style of wine. Established in 1985 by an old hand within the industry, quality winemaking was the only priority and commercial constraints played no part in the development. A mostly Cabernet wine with small portions of Merlot and Petit Verdot, grown to an exceptional site, ranking as one of South Australia's finest. The fruit is characterised by very dark colours, super ripe flavours, excellent complexity with good alcohol, density and structure.

$3399each $407DOZEN EACH DOZEN Vinified from fruit picked off fully mature vines which produce a limited yield of 1½ tonnes/ acre, planted to the Parker Estate's Terra rossa over limestone Coonawarra property. Integral to the style and quality of the finished wine are unique soils and mesoclimes, so favourable to the noble cepage of Cabernet Sauvignon, Merlot and Petit Verdot. Following a warm fermentation, a little over half the grapes are treated to a long maceration of thirty days, the balance receive a shorter ten day maceration. Parcels are matured in a combination of new and prior use 228 litre French oak barriques for twenty two months. The final wine is assembled and returned to oak before an egg white fining and bottling.

Deep red tint. Intense deep dark fruit with some dark chocolate, prunes and charry vanillan and coffee oak aromas. The palate is rich and dense with a solid core of dark fruit running along the entire length. Impressively dense and solid structure, but also showing some faint leafy Cabernet notes typical of southern Coonawarra vineyards. To be decanted before service and savoured alongside the finest meats.

In 1960 Bill Redman persuaded Max Schubert to acquire a parcel of Coonawarra Terra rossa soil and the Bin 128 experience was born. It was originally labelled as Claret, and whilst the quality of Shiraz has increased immeasurably ever since, very little has changed about how Bin 128 is made, it's vinification follows the traditional Penfolds house style. One of the few Penfold wines which are sourced exclusively from a specific region, Bin 128 reflects the uniqueness of Coonawarra and the elegant, stylish expressions of cooler climate Terra rossa Shiraz.

Crimson colour, deep red core. Delicately scented with fragrances of lavender/, rosemary and rose petal. Well absorbed oak, cedar and a suggestion of regional artefact, spearmint and blackcurrant pastille. Subtle background scents of fruit mince, sage and brown butter cautiously seep in to fill any aromatic void. A linear, defined palate, alluring flavours, prominent grainy tannins, French oak in balance, stylishly understated, finishing firm.

Penfold's mastery at formulating superlative Shiraz and Cabernet accords is due in great part to the excellence of their vineyards, achieved through the assemblage of components into a wine which delivers true stylishness in the enduring and timeless Penfolds way. Great attention is paid to the ripeness of fruit that goes into Bin 8, making the wine fuller in style and sounder in structure. Pointedly named for the distinction of its maturation in a selection of pre loved oak barrels which have held vintages of Bin 28, Bin 128 and Bin 389.

Shiraz has taken well to Coonawarra, where the cooler growing conditions yield a slightly more supple, finer boned style than warmer climes. $2099each $251DOZEN EACH DOZEN A direct descendant of two great winemaking dynasties, the Penfolds and the Tolleys, Kym continues to employ the best of traditional and modern winemaking techniques. Kym trains his Coonawarra Shiraz blocks, to yield vibrant red wines with plenty of flavour, suited for early drinking while possessing the substance to age gracefully. The objective with Atlas is to create a youthful, rich and mellow wine of gentle tannins and supple oak, fashioned to articulate the excellence of Coonawarra Shiraz and offer plenty of flavour. Fruit is treated to an open vinification in traditional heading down fermenters and matured in a mix of seasoned and new French oak barrels for eighteen months.

Deep red colour with faint purple hue. Fresh black cherry and blueberries on the nose, nuances of vanilla and smoke, mocha and chocolates curl. The youthful palate exhibits tight structure with good natural acidity, fleshy with a diverse flavour profile of berries, black olive, spices and smokey oak. The young tannins are quite dry, will soften and become more opulent, offering enough softness to be enjoyed immediately upon release.

The history of Penley dates back to 1858 when The Phoenix Winemaking and Distilling Company was established at Stepney. During 1888 the company name was changed to Tolley Scott Tolley and remained with the family until 1960. Tolley's great grandson Kym re established T.S.Tolley as Penley in 1988. Phoenix is a reference to the re emergence of Tolley winemaking traditions and enduring Coonawarra vineyards. Dominated by Cabernet fruit characters, bramble and cassis, Phoenix offers a generosity and structure that's distinctly Coonawarra.

Tolley who was a purveyor of oak barrels and winemaking gear in 1908, where he gained access to the wines of Coonawarra. To quote from early Tolley records, Coonawarra wines were distinctly different, dark purple in colour, they exuded a lovely perfume whilst fermenting. Nothing has changed. Phoenix is an early drinking Coonawarra Cabernet treated to an open fermentation in traditional heading down vessels, followed by a regimen of barrel ferments to achieve balance and integration. The completed wine are treated to an extended maturation in a selection of new and prior use French oak barriques.

Bright crimson with dark purple hues. Fragrant aromas of violet, black currant leaf, ripe wild berry and varietal Cabernet spice over complex, well integrated oak fragrances. Mulberry and blackberry dominate the tight palate, enhanced by silky grape tannin and elegant complex cedar oak. A very generous middle palate scented with hints of liquorice and chocolate linger long on the finish, made to enjoy in its youth.

This enduring flagship wine can boast twenty trophys and over seventy gold medals throughout its illustrious history. Penley Steyning captures and enhances the excellence in first growth Coonawarra Cabernet Sauvignon, highlighted by rich berry tones, superior length and layers of intense flavour, a wine which achieves perfect harmony between massive intensity of fruit, mouth filling grape tannins and elegant acids. The extended time in new French oak is a key factor to the integration and development. Flavour, depth and length dominate the style.

$6499each $779DOZEN EACH DOZEN Ten blocks of Cabernet Sauvignon are grown at Penley, the best from each block will make it into the final cut, to construct a complex, traditional style of Coonawarra Cabernet. Striking the perfect balance is a key consideration for the Penley team. Components of various clonal selection, soil type, canopy management, yield and irrigation all contribute to the wine. Careful ageing in oak are the final touches to enhance the quality of fruit. Cabernet Sauvignon off fully mature vines yielding a mere 2 t/A are treated to a temperature controlled, open vinification in headed down fermenters, followed by a lavish twenty months maturation in exclusively new, mostly Troncais French oak barriques.
