Chardonnay is hand picked and whole bunch pressed, conserving the delicacy of fruit, adding rich soft textures and palate roundness, lingering flavours and superior length. Components are barrel fermented in new and seasoned French oak puncheons and hogsheads, essential for integrating the subtle flavours and textural tannins. Choice components are treated to wild indigenous yeast vinification and a course of malolactic. Barrels are matured several months on gross yeast lees, stirred regularly to maintain yeast in suspension, enriching the palate while protecting against oxidaization.

Medium yellow with hues of grapey green. Melon and fresh citrus bouquet, a hint of biscuit and nutty complexity achieved by aging on yeast lees in quality French oak. As stewards of some of the nation's most precious soils, an important aspect of the sustainable viticulture practises is the elimination of all synthetic and chemical insecticides. Sustainable vineyard management is generally a medium between organic and conventional viticulture, which ensures fertile soil, healthy vines and well balanced, flavoursome grapes. Fruit grown to Rymill's terra rosa soils are bottled imediately after vinification to capture the crisp expression of Coonawarra Sauvignon Blanc.

This rejuvenating climes ensure a long ripening period that slowly builds up the intensity of flavours in the grape. The Riesling fruit here makes a wine exhibiting richness, intensity and depth of flavour with an excellent capacity for longevity. Wynns Coonawarra Estate constructs a Riesling that captures as much varietal character as possible in a fresh, light bodied, easy drinking wine. The fruit is harvested and inoculated with choice yeasts. Upon completion of ferments, batches are treated to a term of cold settling before assemblage into the final wine, bottled immediately whilst vital and fresh.
