Attractive ripe citrus flavours develop in the grapes, while hanging onto delicate acidity, translating into a wine with excellent balance and finesse. The Bin 311 style typically expresses a mineral acid backbone, complemented by barrel fermentation and maturation in seasoned oak. The hand harvested grapes are brought to the winery in pristine condition. Minimal filtration is employed, preserving the elegant fruit flavours. The finished wine is matured several months in a selection of prior use French oak barriques.

Pale golden hue. Exacting standards of viticultural management throughout the growing season ensures the winemaking team receive a quality of fruit that's worthy of the Penfold label. Careful vinification techniques are employed to ensure the wine retains all the virtue of the vineyard, while adding a measure of complexity through a regimen of lees stirring and a term of maturation in a high proportion of new French oak barriques.

Quality new French oak, rich barrel ferments and partial lees stirring, all contribute to the style, the fruit flavour is not shrouded, but enhanced by the judicious use of oak, a key feature in all Penley wines.

Chardonnay is hand picked and whole bunch pressed, conserving the delicacy of fruit, adding rich soft textures and palate roundness, lingering flavours and superior length. Components are barrel fermented in new and seasoned French oak puncheons and hogsheads, essential for integrating the subtle flavours and textural tannins. Choice components are treated to wild indigenous yeast vinification and a course of malolactic. Barrels are matured several months on gross yeast lees, stirred regularly to maintain yeast in suspension, enriching the palate while protecting against oxidaization.

Medium yellow with hues of grapey green. Melon and fresh citrus bouquet, a hint of biscuit and nutty complexity achieved by aging on yeast lees in quality French oak. A finely layered palate of harmonious and sensuous flavours, grapefruits and melon. The subtle oak enhances bright varietal Chardonnay flavours without overpowering them, all leading to a silky soft finish.

Langtons Distinguished Classification. A powerful yet elegant wine, enriched by the extravagance of barrel ferments, new French oak and battonage. Petaluma assembles Chardonnay from an archive of superior blocks in Piccadilly Valley, all are fortuitious microclimes, blessed by slow ripening conditions, very similar to Chardonnay's ancestral home in La Bourgogne. These splendid sites are closely planted and fastidiously managed through strict regimens of shoot and fruit thinning, to achieve the most meagre yields of peerless quality Chardonnay.

$7499each $899DOZEN EACH DOZEN Grapes are all hand picked, a portion are whole bunch pressed, the balance are gently destemmed, chilled and crushed. Following several days days of cold settling, most of the partially clarified juices are filled to a high proportion of new Dargaud et Jaegle French Vosges oak barriques and hogsheads for vinification. Upon completion to sugar dryness, barrels are racked and inoculated through Petaluma's own native bacteria. The unique bugs present at malolactic impart a lovely creaminess and contribute textural mouthfeel. Batches are treated to regular lees stirring battonage over the course of several months, before being racked and rested for the final assemblage.

Bright, light straw colour. Abundant white peach and nectarine aromas, gentle toasty smoke. A creamy textured palate, refreshing acidity contributes zing to support the distinctive, nutty sweet fruit characters, leading to a dry finish without hardness. A very textured wine with lovely lingering acidity in a drink now style which will evolve beautifully, one of nature's wonders from Piccadilly Valley.

A splendid high altitude effort, expressing fully the uniqueness of Chardonnay grown to the lofty terroirs of Eden Valley. Grapes are sourced from choice independent grower vineyards, tucked way up high in the eastern Barossa ranges. The region is particularly cool, perched atop steep slopes and on lean rocky soils, planted to clones of Chardonnay which can thrive in the challenging mesoclimes. Yields here are normally low, producing outstanding white wines with a measure of delicacy and purity of fruit.

$2299each $275DOZEN EACH DOZEN An early harvest Chardonnay style, fashioned to a combination of old and new world winemaking techniques, followed by a term of cool barrel maturation, achieving a delicate wine with remarkable balance of fruit, preserving the divinely pristine persona of the vineyard. Determining the optimal date for picking is essential to constructing a wine of balance and finesse. Following harvest and the crush, batches are drained directly into French oak hogsheads set in a cool environment allowing natural yeasts present on the grapes to initiate ferment. Upon completion, the wines are treated to partial malolactic, barrels are topped up and stirred regularly for eight months prior to stabilisation and bottling.

Fine green/ gold tinge to the colour. Lovely nose of cut stonefruits and lemon preserve, hawthorn and ripe nashi. A lovely balance of fruit complexity on the palate has been derived from rich barrel ferments and battonage. H&V will acquire a deeper gold colour and become richer in flavour as it evolves. Today it represents a very ready to appreciate Chardonnay alongside chicken roast and rabbit terrines.
