Moppity are in full embrace of the philosophy that great wines are made in the vineyard. There's also nothing generic about Moppity's Lock & Key efforts, they reflect their unique geographic origins, the ultimate expression of soil and microclime. Every effort is made in the vineyard to achieve quality fruit. Minimal irrigation, bunch thinning and careful pruning ensure low yields of concentrated grapes, providing wines of compelling regional and varietal distinction. Parcels of Tumbarumba Chardonnay are isolated on the basis of pure varietal expression and intensity of flavour. Exclusively free run juices are treated to lees battonage and partially barrel fermented in a selection of fine French oak barriques.
 
Brilliant, clean, pale yellow colour. Bright and lifted with citrus, fig and nutty complexity. Best described as a new world Chablis, the palate is long and lean with citrus, white peach and excellent minerality before a spicy, nutty finish. Although partially fermented in French hogsheads, the oak plays a subtle background role, allowing the fruit to do the talking.

Moss Wood Chardonnay

Moss Wood include parcels of exposed grapes with no leaves, others without leaf removal. The former is a more complex style of Chardonnay with accentuated malty and roasted nut characters while the latter tends to retain citrus, honeysuckle and peach blossom aromatics whilst looking prettier. Before assembling, there are extensive tastings to check on the choice of barrel and to compare the different levels of exposure. The results are fascinating, a grand total of just a few hundred cases are made each year, Moss Wood Chardonnay is always beaut.

Chardonnay is hand picked and whole bunch pressed, the free run juice and pressings are kept separate, cold settled for a couple of days and fined to remove excess phenolics. Batches are transferred to fermenters, a small percentage of lighter settling solids is included, warmed and inoculated with pure yeast cultures. After a day of activity, the ferments are racked to a selection of seasoned and new 225 litre French oak barriques, vinified to dryness, assembled and treated to full malolactic. The winery air conditioning system is adjusted to keep ferments at lower temperatures between 8âÂC and 20âÂC. A total of twenty months in oak is followed by bentonite fining and sterile filtration.
 
Medium straw hue. Lifted and complex, nectarine and blossoms, lemon marmalade and lime, long term barrel aging adds malt, roast nut and cinnamon notes. The front palate shows generous ripe fruits, full body and smooth texture. Generous peach, marmalade and roast almond flavours, a balanced astringency that builds the mouthfeel but doesn't impinge on the texture, giving a long, sweet, round feel.

Mount Pleasant Leontine Chardonnay

Leontine O'Shea was intrumental in the establishment of Mount Pleasant wines, she sent her son Maurice to France for an education in viticulture right at the outbreak of World War I, acquiring his first Hunter Valley vineyard in 1921. Hand picked bunches of clone I10V5 Chardonnay are pressed into a selection of seasoned and new French oak puncheons for a wild, indigenous yeast ferment and nine months maturation. An intensely articulate Chardonnay of melon and peach, ripe fig and bakers brioche opulence, a lingering palate of persistence and flavour.

Established 1972, with a view to being one of the nation's pre eminent Chardonnay specialists, Mountadam was founded by the great David Wynn, one of the most significant contributors to the Australian wine industry and an important part of the Mountadam story. Mountadam today enjoy extensive resources for the production of Chardonnay through varied clones, ages and aspects. In assembling the finished wine, a balance of the most intense fruit aromas and flavours is sought, capturing the exquisite characteristics of fine Chardonnay without the influence of oak.

Fully mature vines, cooler sites and access to crucial water gives Mountadam the edge. Chardonnay is sourced from the Mountadam estate property near the historic Boehm Springs Reserve, a nesting ground for Wedge Tail Eagles, the Mountadam logo. Sitting at an altitude of over 400 metres above sea level the vines grow in quartz rich sandy loams formed from the underlying schist bedrock. Picking grapes throughout the cool of early morning followed by a gentle pressing and a long cool four weeks of fermentation with natural cultured yeast helps retain maximum grape flavours. Parcels are selected which can best display the intensity of Chardonnay within the context of a vibrantly unoaked wine.
 
A pale green colour. Aromas of tropical fruit, rich apricot and ripe nectarine, layered with the complexity associated from a traditional vinification. Intense lively aromas of ripe peach and melon carry through on the palate with distinctly fresh acidity typical of cool climate Chardonnay. A long finish with lingering fruit characters and racy acidity. To accompany chicken caesar or grilled fresh water fishes.
Mountadam High Eden Chardonnay

From the best parcels of fruit grown to the High Eden Ridge Estate vineyard, these are the earliest plantings of Chardonnay in South Austraia and some of the oldest in the country. The east facing escarpment rises 550 metres above sea level and separates the dramatically cooler Eden Valley, providing a myriad of interesting mesoclimates and vineyards which have been refined over time, along with the winemaking. The vines are painstakingly pruned by hand and yields are methodically thinned to ensure grapes develop the requisite intensity of flavour.

Mountadam vineyards were re-established as part of a deeply personal project by one of Australia's most entrepreneurial winemaking dynasties. The cool climes of High Eden Ridge, the large clonal variation and the very different aspects of the Mountadam blocks necessitate careful attention to the ripening of fruit. Fruit is harvested throughout the chill of night and gently pressed, juice are fermented in an extravagantly high proportion of new French oak barriques and treated to the occasional lees stirring battonage, completion of malolactic, racked and returned, followed by a year's maturation and final racking before assemblage.
 
Light golden hue. Classic Chardonnay fruit aromas of peach, nectarine and nashi pear. A rich barrel ferment palate of grilled nuts with clove and nutmeg spice supported by a citrus grapefruit core, all contributing to the immense flavour and length. Match with fried whiting fillets, camembert or recipes which call for white truffle.
Mountadam Marble Hill Chardonnay

Marble Hill was a stately old manor in the Adelaide Hills, the colonial Governor’s summer residence. Planted to a unique clone of Burgundy Chardonuet in the 1860s, the ancient vines came to the attention of the legendery David Wynn, who removed cuttings back to Mountadam, the oldest cool climate Chardonnay vines on the continent. The original stocks in Burgundy were wiped out by phylloxera and Marble Hill was destroyed by fire in the 1950s. There truly is no Chardonnay in the world like Marble Hill.
