From a canon of distinguished, ancient vine blocks of Shiraz in the Barossa hamlet of Ebenezer. The eye of Horus is represented as a figure of six parts, corresponding to the six senses, touch and taste, hearing and thought, sight and smell. Ben Glaetzer takes aim at balancing the extraction of all the elements into this flagship Barossa Shiraz, rather than endeavouring to maximize them. The fruit holds such powerful expression that focus must be brought to bear on preserving the characteristics of outstanding old vines Shiraz.

Amon-Ra is the king of all gods. The temple of Amon-Ra was the first in history to contain a monoculture vineyard. Rameses III lists over five hundred vineyards belonging to the temple of Amon-Ra. With minimal intervention, Ben Glaetzer makes elegant wines which are regarded as classics. From exclusively dry grown Barossa Shiraz vines, fifty to a hundred and thirty years of age, grown to prestigious Ebenezer sites. Vinified in one and two tonnes open top fermenters, hand plunged thrice daily. A portion completes ferments and malolactic under oak. The assemblage is matured sixteen months on lees in a combination of exclusively new, mostly French oak hogsheads.
 
Deeply saturated scarlet colour. Amon-Ra shows the hallmark richness of Glaetzer flagship Shiraz, exhibiting singular intensity and perfume, taking aromatic expression to another level. A wine of freshness and refinement, great purity of fruit and firm but fine tannin structure with ageability, a Shiraz of great structure and remarkable power.
Glaetzer Anaperenna

Anaperenna is the Roman goddess of New Year. She is also a seamless fusion of fruit from dry grown, low yielding, very old vines, some over a century of age, planted to ancient sites within the elite Ebeneezer appellation in the Barossa's north. A mostly Shiraz wine, the very low cropped Cabernet component contributes intense fruit flavours with a low extraction rate of smaller berries, large seeds and greater skin to flesh ratio. The savouryness of Cabernet combines with the generosity of Shiraz to give Anaperenna great texture and power, structure and finesse.

From vines trained to standard single wire, with permanent arm rod and spur. Many of the very old vines, 80-130 years old, have now been trained onto a trellis for ease of pruning, harvesting, disease and frost control. Scant vineyard yields of ½ to one ton per acre are central to the intense concentration. Vinified in one and two tonnes open top fermenters with hand plunges thrice daily. Completed primary on skins, a component finishes ferments in oak, matured on lees to maintain fruit profile and animation, minimal SO2, topped up every three weeks. Matured sixteen months in a selection of completely new, mostly French oak hogsheads, followed by unfiltered bottling.
 
Dark ruby colour. Nose of chocolates and crushed herb, blackberries, cedar and smoke. A tightly focused palate with fine grained tannin and incredible density, savouryness and crushed herbs, fresh black fruits and espresso spice. A wine of great purity and expression, the finish is fresh and lively with flavours that linger and linger.
Glaetzer Bishop Shiraz

Only ever made in the finest vintage years, the backbone of this substantive Shiraz is exceptional old vine fruit from a qabal of famed, gnarled and dry grown Barossa vineyards at Ebenezer. Bishop is assembled from components which are up front and generous, showing animated, youthful characters, as opposed to the more restrained and structured components of the sibling Glaetzers. These old veterans are young at heart, a coterie of old, very old and ancient blocks, up to a hundred and thirty years of age, are called upon to make a contribution towards the Bishop.

Bishop is the maiden name of the estate matriarch. The Bishops hail from Mount Gambier, whence Judith's mother was the first female mayor in Australian political history. From vines up to 120 years of age and averaging 60, grown to the Glaetzer estate's Ebenezer parcels, vinified and assembled into the final wine alongside batches of very old vine fruit from distinguished growers. Vinified in 1½ to 2 tonne open fermenters, hand plunged two to three times daily. Extended maceration achieves good tannin development which makes the wine soft and approachable. Selected batches are treated to barrel fermentation, followed by sixteen months in a high proportion of new French oak hogsheads.
 
Deep garnet colour. Aromas of liquorice, violets and clove, mulberries and cassis. Opulent flavours on the palate, dark fruits and freshly cut plum are beautifully balanced by firm, velvety tannins from ageing in French and American oak. Refinement, elegance and solid structure, Bishop is rich voluptuous and mouth filling, with spicey fruit characters and a long elegant finish.
Glaetzer Wallace Shiraz Grenache

Wallace is the ancestral name of Colin Gaetzer's wife, whose family hail from the old market town of Cupar in Fife. Judith's Celtic ancestry is reflected in the three elements of the Wallace label, a thistle, the cross and the arcane Celtic knot. Wallace takes on the traditional Barossa mix of Shiraz and Grenache in a thoroughly modern way. Few winemakers understand old vines fruit as well as Barons of the Barossa Ben and Colin Glaetzer, as they fashion Wallace into a comforting and indulgent mix of old world charm, dark forest fruits, cigarbox and spice.

From a small sub region of the northern Barossa Valley called Ebenezer. The viticulture is standard single wire, with permanent arm and rod and spur. Plantings aged sixty to eighty years are trained onto a trellis for ease of pruning, harvest and disease/ frost control. Vines are subject to smart canopy management, daily monitoring of fruit quality and flavour development is essential. Parcels are harvested separately in short breaks. Glaetzer know that Grenache does not handle oak well, choosing to vinify and mature the Grenache in fermenters to retain freshness and animation of fruit. The Shiraz component is aged sixteen months in a selection of two to three year old French and American oak hogsheads.
 
Deep garnet red. Rich, peppery old vine Shiraz dominates, a hint of of dark cherry from the Grenache contributes an attractive floral lift to the nose. The palate is rich and full yet supple and fresh, Shiraz provides backbone, body and flesh, Grenache brings complex tannins and fresh acidity, while adding soft, vibrant juiciness. Textural tannin components are supported by lively notes of plum and hints of cassis.
Gomersal Barossa Reserve Shiraz

In 2000, a group of enthusiasts who shared a passion for making and imbibing in wine were inspired to breathe life into an old, run down operation in the small western district of Gomersal. The forty two acres of low yielding vines now deliver a limited yield of Shiraz each vintage, a precious harvest of grapes exhibiting remarkable concentration and intensity of flavour. Working amongst the vines and sampling berries as the growing season reaches climax, picking never commences until the team are completely satisfied that complete ripeness has been achieved.

The Gomersal philosophy is to make wines which are the purest and most honest reflection of the vineyard. Minimal intervention, judicious use of oak and maximum flavour are the goals. A range of soils vary dramatically throughout the property. Clay over calcerte and slate bedrock, moving to more weathered slate at the bottom of an ancient glacier. Over the hill, soils are deep, sandy loam and black clays. East to west slopes with predominantly north to south rows, bush vines grow east to west on a south facing slope. This tapestry of terroir infuses subtle complexities in the grapes, which are retained throughout the vinification process and ultimately contribute to the splendour of the finished wines.
 
Deep scarlet, purple hued. Mint and fennel characters to the bouquet, aniseed and mulberry, bitumen and soot. Chocolate and licorice aromas lead to a robust palate of blackberry, black olives and cherry heering. Gomersal finishes with lovely balanced tannins and firm acidity. Match with char grilled roo fillets, marinated backstrap or saltbush hogget.
Grant Burge 5th Generation Cabernet Merlot

Harvests of Merlot and Cabernet Sauvignon are picked at optimum ripeness, crushed and de-stemmd, the juices are vinified on skins for several days, to extract optimal colour and flavour. Upon completion, batches are transferred to a combination of French and American hogsheads for fifteen months, building complexity and structure while taming the tannins.
 
Deep crimson colour . Aromas of sweet ripe berry fruits, hints of herbal mint, subtle tobacco and spice. On the palate black cherry, bramble and liquorice flavours, blackcurrants and mulberry supported by elegant oak and soft approachable tannins. A fresh yet complex finish, well integrated and lingering.

Fruit is picked at complete ripeness from Burge's own estate vineyards and those of distinguished Barossa growers. Grapes are crushed and de-stemmed, inoculated and vinified in fermenters over the course of several days, pumped over thrice daily for optimal tannins and extraction. Free run and pressings are combined for added colour and structure, components are matured fourteen months in a combination of French and American oak hogsheads.

A third each of Grenache, Shiraz and Mourvedre, crafted from small parcels of intensely flavoured, hand picked grapes, grown to some seriously old Barossa vines. The backbone for this engaging accord is sourced off a canon of distinguished, dry grown Barossa parcels, generally a hundred years of age. The maturity of these gnarled old plantings translates into meagre yields of the most tremendous concentration and sublime elegance.

Grenache, Shiraz and Mourvedre are gently crushed and vinified on skins for a week, pressed and treated to an extended maceration over the course of a month for optimal etraction of colour, flavour and tannin. Upon completion, batches are transferred to a selection of seasoned larger format 2500 litres foudre vats and French oak 500 litres puncheons for an extended term of sixteen months maturation. The larger oak format retains freshness of fruit while softening tannins and building layers of complexity.

Grapes are crushed, de-stemmed and fermented over the course of a week, pumped over daily for optimal extractions. Free runs and pressing are racked and returned for deep colour and sound structure, followed by a term of age in a selection of the finest seasoned oak barrels.
