On a highland farm, the array of barns, stables and outbuildings is known as a steading. Steading GSM has long been David Powell's favourite wine within the Torbreck stable because of the old, gnarled bush vines that produce its core. Grenache, Mataro and Shiraz grown to ancient sites at Moppa and Marananga, Seppeltsfield and Ebenezer, Gomersal and Greenock, perform brilliantly in their own right. When assembled however, their strengths coalesce into a wine of remarkable structure and bucolic grace.

There are still ancient Barossa vineyards planted to Grenache, Mataro and Shiraz, brought over from Europe on original pre-phyloxera rootstock. Share farming agreements with the Barossa's best growers ensures access to these precious sites. There are over forty different parcels, all vinified and matured separately. Grapes are destemmed into open top wooden and concrete vats, gently pumped over for a week, basket pressed and treated to malolactic, racked into seasoned French oak hogsheads for two years maturation, followed by assemblage and bottling without fining or filtration.

Deep ruby red, violet hues. Delicate aromas of truffle, five spice and spring flowers, supported by a rich core of licorice, saddle leather and herbes de Provence. Burgundian in style, the palate is elegant and pure with subtle notes of crushed cherries, cedar and earth, all neatly wound by a taut spine of acidity over a length of ripe supple tannins. A wine of amazing complexity and integration, which will continue to evolve and unfold.

In the early 1980s, due to lack of demand, the government paid incentives to growers to rip out their vines and gut some of Australia's most precious old vineyards. The movement to cool climate viticulture made the Barossa, of all places, look rather irrelevant. The Factor is Torbreck's salutation to those dedicated growers who stood by their vines and continue to painstakingly produce small harvests of the most splendid Shiraz. A wine of immense concentration and great purity of fruit that only the most meticulous husbanding of vines can achieve.

David Powell took an interest and nursed them back to health, he was rewarded by the proprietors with small parcels of fruit which he made into wine. The formula has served to produce profound efforts which are recognized as some of Australia's most distinguished wines. Parcels of Shiraz on old dry grown vineyards at Gomersal and Kalimna, Rowland Flat, Ebenezer and Marananga are selected for their quality and individual charm, separately vinified and matured up to two years in a selection of new and seasoned French oak barriques, followed by assemblage and bottling without fining or filtration.

Deep scarlet with robes of tawny red. Delicate scents of wild blackberries, pipe smoke and pepper are supported by a dark core of espresso roast, black currants and coal. The nose expresses soil, earth and vinuous tones of vibrant black jelly fruit. The palate offers tremendous texture and combines great richness with subtle notes of olive tapenade, saddle leather and mineral. Brooding and densely packed, this majestic wine continues to slowly unravel its extravagant riches.

Before David Powell took on the task of raiding Barossa vineyards, he spent several years on the Scottish Highlands as a lumberjack in the Torbreck forest. Woodcutter Shiraz is a highly approachable introduction to the Torbreck range, featuring fruit from some of the up and coming vineyards, rather than the battle hardened old warriors which make up the heart and soul of the Torbreck winelist. This is the kind of red the winemaker himself liked to drink with a hearty meal after a hard day's work in the wood, but you don't have to be a woodcutter to enjoy it.

Low yielding, old, dry grown vines are the cornerstone of Torbreck. Manual winemaking methods and minimal intervention are combined o produce a profound style. The growers have been selected for the uniqueness of their site and spartan approach to viticulture. The focus at Torbreck wines is on the vineyards, not the winery. Woodcutter is fermented in steel, wood and cement vats over the course of a week, basket pressed to well seasoned hogsheads and French oak foudres for a year, bottled without fining or filtration.

Dark scarlet colour. Sweet boysenberry and candied plum, floral oils and cured meat on the nose, a refreshing mineral tone. Blackberry and raspberry, cherry and licorice, peppery aromas soar from the glass of this opulent, voluptuously textured Shiraz. Boasting superb purity, intensity and length, juicy and nicely balanced with an attractive interplay of red and dark berry flavours given focus by crisp but not strident acidity.

Established 1847 by Johann August Frederick Fiedler, much of the credit for the finest Shiraz in the world is due to old vines such as Turkey Flat. Dry grown and gnarled, their roots extend metres into the soil in search of moisture. That they still exist is largely due to a far sighted quarantine scheme, as South Australia was spared the phylloxera outbreak which devastated vineyards around the world in the late 1800s. After five generations of stewardship by the Schulz family, a small parcel of fruit from the original 1847 vines is bottled as a superior vintage release.

$19799each $2375DOZEN EACH DOZEN The historic Turkey Flat property, located within Section One of the Hundred of Moorooroo, is planted to rich, alluvial soils, adjacent to Bethany Creek at Tanunda. The site was sold to Gottlieb Ernst Schulz in 1865, a successful butcher who established a thriving retail business among the vines. Butchering developed into dairying, but the vineyards were always kept, until Peter and Christie Schulz made the transition from fruit growing to winemaking. The distinctive script on the Ancestor label is drafted from the 1888 Schulz family butchers ledger, discovered while restoring the Turkey Flat property in 1992.

The Turkey Flat vineyards are unique, in that the estate can trace their first plantings back to early settlement in the 1840s. The site was acquired by Gottlieb Ernst Schulz in 1865, a successful butcher who established a thriving business. His descendants are still there to this day, working amongst the vines. Butchers Block is fashioned to a crowd pleasing style, Mourvèdre provides the backbone, Shiraz adds flavour, Grenache brings rustic spice and dark morello fruit. Balance is essential, each grape plays a role, yet nothing competes for your attention.

It is a place where the Turkey Flat team, assemble to bring together the various components of a wine, they give each part an opportunity to speak, to articulate and define its contribution to the greater whole. Parcels of Shiraz, Grenache and Mourverdre are separately handled, crushed into a mix of seasoned oak vessels and treated to a term of cold soak for optimal extraction of flavour, colour and tannin. Upon completion of ferments, batches are rested for spontaneous malolactic, followed by a term of eighteen months in French oak hogsheads and larger format oak vats before the final assemblage.

Bright garnet red. Good fruit on the nose, black berries and plum, spiced olives, bay leaf and savouryness. A fully aromatic, subtly structured wine, Shiraz providing a backbone of solid tannins and luscious depth of flavour, Grenache contributes a dash of spice and cherry sweetness, whilst Mourvedre adds extra layers to the tannin, as well as a measure of fragrance and an element of funk. A match to braised game with herbs, olive and tomato.

Established in the 1840s and in continuous ownership by the Schulz family since 1870, Turkey Flat at Tanunda was a habitat of wild Australian Bustards, a favourite bush food of locals and early settlers. Younger parcels of Shiraz are selected for spice and lift, a fresher and more layered version of Barossa Valley, a component of whole bunches are added for structure and seasoned, sent to a selection of well seasoned, pre loved Turkey Flat casks, to encourage the vital fruit characters to sing.

Bright cherry red. Florals of violet, glace fruits, peppered plums and cherry ripe. Raspberries to the fore, a palate of blueberries and white pepper spice, a seamless finish of ripe fleshy stonefruits and dark currants on a length of lively licorice tannins. Simply a modern, fresh and fruit driven wine, a lighter, brighter style of Shiraz for forward drinking alongside grills and meaty Al fresco fare.

The hundred year old Turkey Flat Grenache parcels yield harvests of the most amazing concentration. Rows of traditionally spur pruned vines, husbanded in the goblet style of Vallée du Rhône, produce around two tonnes per acre, translating into intensely flavoured vintages of remarkable eloquence. Aged in a judiciously toasted selection of seasoned and new French oaks barrels, the wine achieves astonishing balance between tannin and fruit, herbaceousness and spice, all due to determining the ideal day of harvest, selective hand picking and careful sorting of the berries.

Encounters with pure Mataro wines are rare. Mataro thrives in the hot and dry conditions of summer, a very late comer in budbreak and ripening, Barossa is one of the few parts of Australia with a clime which allows a full and complete ripening of Mataro grapes. Barossa Valley can also be proud as the original Australian home of ancient Mataro vineyards, some of the oldest in the world, established by Lutheran pioneers during early settlement. Turkey Flat's vines were amongst the first ever planted in Barossa Valley.

$3499each $419DOZEN EACH DOZEN It is here at Turkey Flat, on the banks of Tanunda Creek in the Hundred of Moorooroo where wild bush turkeys once roamed, that Johann Friedrich August Fiedler planted his first vines in 1843. Grapes are macerated on skins over the course of a fortnight or more, inoculated to auspicious Mataro friendly yeasts and vinified at warmer temperatures. Treated to a spontaneous malolactic fermentation in barrel, followed by an extended term of maturation in a combination of new and prior use French oak hogsheads and puncheons.

Excellent Langtons Classification. It was at Turkey Flat, on the banks of Tanunda Creek whence bush turkeys once roamed, that pioneer Silesian settler Johann Friedrich August Fiedler planted the first Shiraz during the 1840s. The maturing vines on Section One, in the Hundred of Moorooroo, were bought in 1865 by Gottlieb Ernst Schulz, a successful butcher who established a thriving business among the vines. The Schulz family are still there and up to a fifth of the grapes in today's Turkey Flat Shiraz are picked off the gnarled old vines of 1847.

$5399each $647DOZEN EACH DOZEN Turkey Flat boasts some of the oldest Shiraz vines in the world. These living heirlooms yield wines that are floral, elegant and well structured. Grapes were harvested between March and April at complete ripeness and healthy levels of natural sugar concentration. Inoculated to bespoke strains of yeast and fermented at temperatures of 18C to 26C, juices remain on skins for up to three weeks. Cold soaking and extended macerations achieve a firm tannin structure, ensuring that the wine will continue to evolve handsomely. Turkey Flat completes full malolactic in barrel, followed by eighteen months maturation under a combination of new and prior use French oak hogsheads.

Deep purple colour. Black cherry, liquorice and savoury spice bouquet. Bright and generous, concentrated fruit, youthful yet restrained tannins in support, refreshed by lively acidity. French oak adds depth and length of flavour, supporting a palate of blackberries, cedar and nutmeg. A complex and restrained wine which benefits from decanting to reveal great purity of fruit.

Aerope is the Two Hands estate flagship, significantly a pure Grenache wine, representing the very finest old vines Barossa Grenache. Aerope is assembled annually from a chosen few of the most exceptional barrels, vinified from grapes that are hand picked off an eighty year old, dry grown vineyard on Radford Road, near the ancient Barossa winegrowing hamlet of Greenock.

$10099each $1211DOZEN EACH DOZEN Grapes are all hand picked, most are crushed and destemmed into five tonnes open top fermenters, a quarter of the fruit is processed as whole bunches. After several days of cold maceration the musts are allowed to warm for vinification. Throughout the peak of ferment, batches are pumped over a minimum four times daily to extract colour, flavour and tannin. After a fortnight on skins, each fermenter is drained off, skins are pressed and returned to the free run. Batches are then racked to a selection of well seasoned French oak hogsheads for malolactic and seventeen months maturation.

Bright red with subtle brick red hues. Fragrant and inviting, full of red berries, bright Asian spice, lavendar, savoury charcuterie and great steely minerality. The palate is highly refined, an extremely attractive entry of red berries, lavendar and creamy rosewater. The juicy mid palate tightens up to the late palate finishing with fine tannins and mouth watering charcuuterie and savoury mint notes.
