What Spinifex choose to do best is discover isolate parcels of old vine, sometimes overlooked or underloved, at the Cotes du Rhône end of the varietal spectrum. This is no flight of fancy, as the background of the husband and wife team includes many growing seasons in France. Papillon is bottled towards the end of vintage year. Crafted from very old material Grenache, Cinsualt and Mataro, Spinifex hand select the vines and pick grapes, vinifying the parcels with an aim of creating a wine that's all about freshness, fruit and spice, a wine that's bright and alive.

Spinifex make small quantities of unique hand crafted regional wines from the Barossa and Eden Valleys. Spinifex wines are fashioned into a more complete and complex, unique and characterful wine, always assembled from components that are the result of an interaction between variety, soil and mesoclime. Peter Schell vinifies everything at his estate wineworks in Bethany, Tanunda, where he also runs his own winemaking consultancy company. Over many years, Schell and his girl Magali Gely have worked for prominent Barossa brands, including tours of duty at the highly distinguished Mountadam and Turkey Flat, whilst also finding the time to work vintages in the south of France.
 
Bright and brilliant, ruby red. Very aromatic and bright, lifted cherry, red currant and spicy raspberry fruit are overlaid by pot pouri and exotic herb. With time in the glass reveals subtle warm earthy notes of beetroot, subtle white pepper and caraway spice. Distinctly medium weight on the palate with a lovely line of acidity and light, slightly sappy, fresh tannin dryness. Savoury spice and dried herbs building towards the end of palate.

Many of Barossa's most splendid vineyards are planted to heavy black alluvial soils, terroirs of cracking black Biscay clays, highly prized by canny viticulturalists as the source of the most exquisite fruit, redolent of berry compote perfumes, brimming with summer pudding flavours and sheathed in luscious velvety tannins. Deep scarlet. A fresh, lifted nose of dark berries and festive pudding notes, summer preserves, cocoa and allspice. Black cherry and stone fruit flavours drive a dense, brooding palate of considerable length and fine textural richness, smooth velvetine tannins and creamy supportive oak, before a lingering, juicy, bramble berry filled finish.

Blackwell is sourced exclusively from sloped vineyards around the north and west of Barossa Valley, precincts which yield small harvests of exceptionally concentrated Shiraz grapes. The focus is on preserving freshness and purity of these extraordinarily intense, dark fruit expressions, while retaining perfect tannin balance in the finished wine. The northern hamlets of Kalimna and Ebenezer contribute juicy dark fruit and rich mocha flavours, while parcels from western districts such as Seppeltsfield give Blackwell it's muscular, brooding structure.

Established 1944 at the very heart of Barossa Valley, the St Hallett wineworks, one of the region's most formidable labels, attracts fruit from the most distinguished growers in the ancient winegrowing hamlets of Kalimna and Ebenezer, Krondorf and Gomersal, Seppeltsfield and Marananga. Shiraz is picked at full ripeness to capture concentration of flavour, vibrant tannin structure and a dense, inky colour. Each parcel is individually crushed and vinified in a collection of old, traditional open fermenters. Upon completion, batches are matched to one of a selection of American oak barrels for two years maturation, gaining considerable texture and power prior to release.
 
Garnet red colour. Bouquet speaks volumes, dark fruits of brooding intensity, elegant blueberry and mint perfumes, pure opulence expressing the intensity and inky density of the wine. St Hallett Butchers Cart Shiraz

St Hallett are an auspicious commune of ancient Barossa grower families and leading, accomplished winemakers. Established by the Lindner family during the closing days of the second world war, industrious pastoralists who would fill a horse drawn cart with daily cuts of meat for the local markets. Sourced from a coterie of superior Barossa vineyards, the Butcher's opaque purple hues hint at the generosity within, a solid and tightly structured wine, much adored for its distinctive mint and blueberry aromaticness.

Shiraz is sourced from some of the finest Barossa vineyards, sited to superior appellations such as Lyndoch in the south, Koonunga to the north and Valley Eden towards the west. Grapes are harvested throughout the warmth of day, brought to the winery, crushed into fermenters and inoculated with neutral strains of yeast. Following a regime of several pumpovers daily, batches are lightly racked, retaining a measure of the fluffier lees which add weight, texture and savouryness. Following completion of malolactic, components are assembled and treated to extended maturation in a selection of seasoned and new French and American oak barrels.

An inspiring varietal mix of Shiraz and Grenache with Touriga Nacional, the traditional vintage port grape. A suite of yeast strains, each suited to a different parcel of fruit, serves to highlight the fresh berry, floral, spicy, earthy aromas contributed by Touriga and Grenache, while the richness and pepper spice of Shiraz builds palate weight and structure. Completely unoaked, Gamekeeper embraces the spectrum of ripe and savoury Barossa fruit, delivering a wine which is so much greater than the sum of parts.

Shiraz primarily from elevated well drained vineyard sites around the cooler southern and central sections of the Barossa. The Grenache from low vielding west and north western areas of Gomersal and Greenock where the vines truly struggle to survive, producing intensely flavoured low yielding crops. St Hallett have carried out extensive trial work to find yeast strains that suit this wine. The aim is to highlight the fresh berry, floral, spicy, earthy aromas contributed by the Grenache and Touriga, while the richness and pepper spice of the Shiraz builds palate weight and structure. Contact with yeast lees post ferment, gives the wine an appealing texture and earthiness, completely fruit driven.
 
Vibrant cherry red colour. Highly floral bouquets. A pot pourri of lively cherry and raspberry with a spicy rose petal-like infusion from the Touriga Nacional makes this a kaleidoscopic sensory experience. Old world European subtle savoury earthiness meets the new world vibrant fresh array of raspberry cherry fruits. Finishing with soft yet sanguine tannins, a very food friendly wine.

The attention to detail and strong relationships with the Barossa's best growers gives Bruno Tait access to high quality fruit which he fashions into a wine that reflects his own personality, generous and affable. A traditionally crafted, small batch wine, assembled from parcels of Barossa fruit that have been earmarked on the basis of opulence, exuberant tannins and refreshing acids, treated to the most adroit vinification techniques.

All fruit is picked at complete physiological ripeness, to obtain optimal balance of natural sugar and flavour development. Grapes are destemmed into open fermenters, pH is adjusted and vinification takes place over the course of a week at 24C. The ferments are treated to hand plunging thrice daily until completion and basket pressed by hand in the old world style, a component is transferred to seasoned oak barrels for malolactic and maturation. A mostly Shiraz wine with inclusions of Merlot and Cabernet Sauvignon, all parts are racked and returned to barrel two or three times throughout a term of twelve months, achieving a clarified wine that does not need any fining or filtration prior to bottling.
 
Deep red colour. Lifted aromas of ripe plums and spice, violets, vanillan and cardamon coffee grounds, cigarbox and creamy oak. An intense palate of dark fruit flavours, red currants and black bramble characters are supported by the most gripping tannins. A full bodied wine to accompany char grilled ribeye or ripe, pungent hard cheese.
