The Adelaide Hills hamlet of Paracombe, settled circa 1840 and now booming with a population of 365, was named after the headwaters of Little Para River. Initially a successful sheep station, the site of Paracombe Vineyard was destroyed by Ash Wednesday's Fire before being established to vine. Hand picked grapes from the Drogemuller property in Adelaide Hill, are vinfied alongside choice parcels harvested by neighbouring, specialist local family growers. Fashioned predominately around a backbone of six different clones Cabernet Sauvignon, the assembled Reuben is matured eighteen months in a selection of seasoned and new French oak hogsheads and barriques.
 
Intense colour, deep ruby tones, bright robes in the glass. Lifted aromas of poached rhubarb and plum, delicate hints of oak, leatherwood and licorice spice. The palate is generous, finely structured with rich, sweet fruit driven flavours, fresh raspberries and loganberry, interspersed by savoury, spicy notes.

The relationship between Penfolds and the cool climate, higher altitudes of the Adelaide Hills goes back to the company's origins. Dr Penfold established his winemaking venture at Mackgill in 1844 to make Grenache wines which he would prescribe to patients. Exclusively hand picked grapes, with the inclusion of some whole bunches for complexity, are cold soaked and crushed before the free run juices, to the exception of any pressings, are naturally fermented followed by a single racking off gross lees. The finished wine is matured eight months in a combination of new and seasoned French oak barriques, before bottling, filtered but unfined.
 
Dark cherry red. Cherries and dark bramble fruits abound with attractive forest notes and lingering warm spice Subtle charry oak adds additional complexity in a discreet manner, leaving the bright fruit nuances to remain at centre stage. Strawberry and red berry fruits coat the mouth on a bed of soft tannins. A long and persistent finish that lingers and lingers, the wine's silky texture leaves the palate yearning for more. An exciting trio of Adelaide Hills, Penfolds and Pinot Noir.

Riposte Cutlass Shiraz

One of the highest Shiraz vineyards near Lobethal in Adelaide Hills, planted to a gentle north facing slope for maximum sunlight exposure. Grapes are treated to a slightly artisanal winemaking, parts of the harvest are separately vinified as a mixture of whole bunches, crushed berries and whole fruit, moved to a selection of French oak barriques for a timely course of age before assembling into the final cuvée. An attractive carbonic lift and soft, textural palate, laden with red berry flavours and juicy dark plum fruits, redolent with the whole bunch derived perfumes and lithe tannin spice.

Riposte Dagger Pinot Noir

From Pinot Noir picked off choice vines at Charleston and Gumeracha on the Adelaide Hills. Riposte means a quick comeback, reply or retort, in the sport of fencing it is the term for a swift counter stroke. After more than a decade of confusion about the Tim Knappstein name and eponymous wineworks, Riposte was chosen as the appropriate moniker for Knappstein's comeback label. Pinot Noir clones are treated to a minimalist, hands on vinification in the traditional old world way. The Dagger has been finished to a vibrant and rich, earlier drinking style of Adelaide Hills Pinot Noir.

En garde! The illustrious Tim Knappstein has returned with the cut and thrust of Adelaide Hills Pinot Noir. Knappstein hails from a long lineage of great winemakers, he was the first to plant vines at Lenswood in 1981. He still lives amongst the undulating aspects of Adelaide Hills and works with the most dedicated growers. Knappstein has accumulated the experience and skill to put all his efforts to bear on any style of his choosing. Pinot Noir is sourced from some of the eldest and most distinguished sites in the premiere precincts of Lenswood and Piccadilly.

Of great interest to Knappstein is the spread of ripening between newer clones Pinot Noir, 777, 114 & 115, as opposed to the established MV6, D4V2 and D5V12. The newer clones ripen earlier and are better suited to the cooler, higher aspects of Adelaide Hills. The Knappstein team work closely with growers to produce moderate yields of superior quality fruit, well exposed to sunlight for optimal development of colour, flavour and tannins. The Sabre is made in small batches, all parcels are cold soaked and hand plunged in traditional open fermenters, treated to full malolactic and ten months maturation in a mix of seasoned and new French oak barriques, followed by a minimal filtration.
 
Scarlet purple colour. A substantive nose of ripe red berry fragrances, garden vegetable, barnyard and game. An opulent palate of earthy dark fruit flavours, currants and black cherry, tomato leaf and piquant bucolic characters, supported by a fine length of firm yet malleable tannins, sheathed within a an inseparable frame of sassafras oak, all providing balance and structure.

A predominantly Syrah wine with a de rigueur inclusion of good Viognier, all picked off a superior low yielding Adelaide Hills vineyard. An outstanding and engaging new world articulation of the timeless Rhone Valley style, elegant and refined, an underlying sense of power and depth of flavour, a delight to share alongside appropriately five star cuisine.

From a choice site in Adelaide Hills near Echunga, off vines planted to well drained, granitic soils, 410 metres above sea level. Fruit is completely hand harvested and placed into small, traditional open top fermenters. A component of whole bunches is introduced, vintage permitting, to initiate partial carbonic maceration, extract fine stem tannins and enhance complexity. Temperatures are kept between a wide range of 15C and 34C throughout a fortnight of vinification, while treating the ferments to cap management regimens of hand plunging and pumpovers. The finished wine is treated to a extended term in a selection of seasoned and new, large format French barrels and smaller oak puncheons.
 
Deep purple red colour. Highly perfumed, vibrant and complex, floral notes of violet and dried herb, red currants and hints of black liquorice. Juicy black fruits with a measure of peppery spice over gently integrated dry, earthy tannins.
