Villa Maria Cellar Selection Pinot Gris

Villa Maria selects clones of Pinot Gris that produce lower yields with smaller bunches, which translates into more concentrated flavours. The viticulturists spend a great deal of time monitoring and adjusting the crop levels to make sure the vines are carrying the right amount of grapes. Low yields of two to three kilos per vine, timely leaf plucking and canopy management activities concentrate the flavours in the grapes. Although this leads to a smaller harvest, the emphasis is placed on quality not quantity, culminating in a fully opulent Pinot Gris wine.

Close attention is paid to vine health and fruit development, crop loading and fruit exposure. Parcels of Pinot Gris grapes, most of them picked by hand, are gently pressed to render a pure concentrated juice, lightly settled for twelve hours before transfer to a mix of fermenters and old oak barriques. Neutral yeasts and a cool vinification are employed to preserve the natural purity of fruit. Warmer barrel ferments by indigenous yeasts add complexity. Upon completion, parcels are kept on yeast lees for three months while being treated to a weekly battonage, building palate texture and richness. This wine is then assembled, lightly fined and filtered to bottle.

Templar Vineyard occupies two gently sloping terraces above Awatere River, each picked to optimal flavour ripeness and processed separately to provide a number of blending options. All parcels spend time on skin contact to enhance the intensity, followed by a gentle press, cold settling and racking. Cool fermentations are employed to retain purity of flavour and aromatics. Upon completion, batches remain on yeast lees for several months to build richness and mouthfeel. Components are racked and assembled, gently fined, filtered and immediately bottled, preserving the purity of flavour, freshness and superb palate richness.

Chardonnay is harvested throughout the cool of early morning, parcels are crushed and gently pressed. To ensure a soft and intensely flavoured wine, pressings are kept apart and separately handled. Juices are treated to a long cool vinification in controlled fermenters to retain vitality and crisp fruit characters. An occasional lees stirring and course of malolactic serve to enrich the palate. A select component is filled to a selection of French oak barriques for an extravagant old world style of barrel ferments, adding complexity and infusing textural richness. Upon completion, batches are held on gross lees for several months before assemblage and filtration into the finished wine.
 
Pale straw hues. Ripe tropical fruits, peach and kernel aromas dominate the bouquet, pear notes with underlying citrus and fig characters. A big palate of stonefruit flavours, crisp apple notes and creamy, mealy textures are supported by well integrated nougat oak. Fruit is sourced from vineyards across a range of mesoclimes, a spectrum of flavour profiles to maintain continuity of style. The majority of sites are trained to vertical shoot position, special care is taken to maintain vine health, clean fruit and balance. Parcels are harvested over several weeks at varying levels of ripeness. Fruit is crushed, pressed and cold settled before being racked clean off lees for vinification. Neutral and aromatic yeast strains are employed to inoculate the clear juice. Fermentations are conducted at cooler temperatures, to retain delicate flavour and preserve aromatics.

The Nelson River region, at the top northwest corner of New zealand's South Island, is blessed by high sunshine hours which stimulate the vines into yielding the ripest fruit, followed by cool evenings which contribute a fresh natural acidity. One of the higher profile Nelson wineries, Waimea Estates has grown quickly in size and stature since its first vineyards were planted in 1993. From parcels of fruit grown to the stony alluvial soils of Waimea Plains, a pretty and stimulating Pinot Gris wine, endowed with varietal textures and brimming with Nelson River charm.

Pinot Gris is harvested throughout the cool of early morning and gently pressed while still icy cold, to preserve aromatics and minimise phenolic pick up. After three days of cold settle, the clear juices are racked off solids and inoculated to Alsation yeasts chosen for their ability to enhance body, texture and varietal aromas. A cool vinification at 13° to 15° in chilled fermenters preserves freshness of fruit, contributing elegance and finesse. Ferments are arrested, retaining some residual sugar, to balance the mineral and fine phenolic structure. A course of lees stirring batonnage, enhances texture and contributes to the depth of palate, to be followed by assemblage into the finished wine. Alcohol 13.5%
 
Light straw peach hue. This lovely example of Nelson Pinot Gris has aromas of pear drops, candied apple, fresh figs and Mirabelle plums. An off-dry entry leads into a textured mid-palate, with nice acidity on the sides, the wine ends with a soft, non-bitter finish. Good concentration of fruit weight gives the wine real presence on the palate and with the balanced palate architecture creates an elegant wine that is very versatile with food.

Waimea Estate Sauvignon Blanc
Nelson
Nelson River in general, and Waimea in particular, have a reputation for highly aromatic wines. Sauvignon Blanc is hand picked from a range of choice vineyards, including the Wells and Robertson blocks, grown to the stony alluvial soils of the Waimea Plains. Waimea Estate has garnered significant interest due to the fruit driven purity, beautifully textured palate, admirable balance and polish. Treated to whole bunch pressing and bâtonnage, achieving a multi dimensional wine, with pure varietal expression, underpinned by subtle texture.

Grapes are harvested and destemmed without any crushing, protecting the aromatic freshness naturally found in Sauvignon Blanc. Some portions were given up to six hours skin contact for added complexity and impact. After pressing the juices are cold settled for three days to achieve low solids prior to ferment. To attain vital aromatic definition, the fermentations are carried out in tank, the musts are inoculated with a range of aromatic yeasts and fermentation temperatures are kept low. For a textural component, some of the ferments underwent frequent lees-stirring for over a month after vinification was complete. Following assemblage, the wine was lightly fined, stabilised and filtered.
 
Brilliant, light straw in colour. Zesty and racy, this lovely example of Nelson Sauvignon has aromas of gooseberries, green apple and citrus combined with a flinty, mineral complexity. Waimea has become a popular alternative to the Marlborough style, exhibiting the essential gooseberry, lime and capsicum aromas, with a flinty palate adding to the wine's appeal. The acidity tends to be toned down and palate interest is enhanced through skin contact, yeast selection, a range of fermentation temperatures and time spent on lees. Waimea is balanced by a full and textured palate, giving the wine depth and concentration. The wine of choice to accompany the freshest seafood.
