Kalleske Moppa Shiraz

The Moppa district was a flourishing settlement of pioneering farmers and gold miners. When the Kalleske vineyard was established in 1853, there were few schools in the region, so local parents established the Moppa Public School to provide their children with a formal education. Located right on the Kalleske property, generations attended this school until its closure in 1935. Sourced entirely off the Kalleske Certified Organic Moppa Vineyard, a trace of Viognier and Petit Verdot are added to Shiraz, achieving a stylish and contemporary edge.

Shiraz is harvested off low yielding vines planted to shallow, sandy loam over deep red clays. A component of Viognier is picked and set aside for co vinification. Petit Verdot is a late ripener and remains on the vine slightly longer. All batches are given a warm vinification in open top fermenters while being treated to a course of manual pumpovers twice daily. After a week or two on skins, ferments are traditionally pressed and transferred to a selection of new and seasoned French and American and Hungarian oak hogsheads. After thirteen months maturation, a small portion of Petit Verdot and Viognier are assembled into the final wine for added complexity before bottling without fining or filtration.
 
Dense purple indigo colour. Dark cherry niotes, blond tobacco, fruit cake and blueberry, anise and a hint of cinnamon. The palate is a burst of pure fruit complimented by subtle background oak. Dark, rich and full bodied yet elegant and sophisticated. Layers of fleshy red and black fruits together with floral notes, balanced by fine, slightly minerally tannins adding a seamless structured backbone. A very lengthy finish completes this generous wine.
Kalleske Rosina Grenache Shiraz Viognier

Anna Rosina, together with husband Karl Heinrich, established and farmed the Kalleske vineyard from 1853 until the 1880s. They were amongst the earliest pioneers in the salubrious Barossa winegrowing village of Greenock. Old vines still eclipse the property and a 1940s planting of Grenache forms the backbone of Rosina. A component of Shiraz and a dash of Viognier contribute wonderful complexity. A juicy, mouthwatering Rosé with plenty of fruit and a touch of restrained sweetness, from grapes harvested early in the season to capture vibrancy.

A completely hand crafted rose, vintaged and matured on the Kalleske property. All vines are hand pruned and planted to sandy loam soils over deep red clay. Grapes are harvested to a schedule specifically tailored for the creation of a Rose wine, as they begin to display vibrant refreshing qualities with crisp acidity and solid flavour intensity. Following the crush, juices remain in contact with skins for a few hours to infuse subtle hues prior to pressing. Juices are wild yeast vinified in a combination of fermenters and oak for added complexity. Following a spell of maturation on sedimentery lees, a small amount of unfermented juice is added to impart a touch of natural fruit sweetness.
 
Vivid rose petal colour. Lifted floral perfume, musk, strawberry and freshly crushed raspberry aromas. The juicy palate displays vibrant, fresh fruit characters with a balanced acidity complimented by restrained grape sweetness. A creamy textural richness adds depth and character to a deeply flavoursome Rose as it resolves on a generous lingering finish. Enjoy with slamon steak, weisswurst or vietnamese cuisine.

The key to making a great wine lies in the creation of a great vineyard that's managed by dedicated growers. Mount Camel Ridge was planned and executed in just such a manner, to establish a site which can yield controlled amounts of the most resplendent Shiraz wine. Yields are kept low and the property is farmed to sustainable land management techniques, the results are worth the painstaking efforts. Already integrated and drinking beautifully now, Mount Camel Ridge exudes a lively lifted nose due to the inclusion of a judicious amount of Viognier.

Mt Camel's vineyard is blessed by idyllic terrain and growing seasons. The grapes ripen evenly and in beautiful condition, a wholistically managed vineyard, there is never any adjustment of pH. All vines are cane pruned, the number of buds are kept to what is deemed appropriate for each, with low yields of exceptional fruit being the aim, a single tonne per acre. Mount Camel Ridge is a dryland vineyard and drippers have never been installed. The grapes are hand picked, fermented naturally in 500kg open vats, hand plunged, basket pressed and matured under a selection of seasoned and new French oak. Mt Camel is racked two to three times during fifteen to twenty months of maturation, lightly fined but unfiltered.
 
Dark red colour. Fresh blueberry, blackberry and plum preserve aromas offer impressive precision before a slow mounting degree of aromatic spiciness before a solid, generously flavoured palate. Orange blossom and white pepper flavours, characters of chocolate and dark plum combine into a powerful yet beautifully balanced wine with a touch of sweetness, culminating in a clean dry finish, clean pomegranate acids and finely grained tannins. A Shiraz of beauty, individuality and finesse that reflects the terroir, grape variety and climes from which it came.

Margaret River is realizing it's potential as one of the world's great Shiraz producing regions. Sandalford have lead the way in premium Margaret River wines for over 150 years, fine tuning their regimens from vintage to vintage. The changes reflect modern practices, yet maintain the tradition and mystique behind the winemaking process. A mostly Shiraz wine with a portion of Viognier for aromaticness and complexity, Sandalford still practice small batch processing of all fruit, while insisting on maturation in nothing but the finest selection of oak.

Sandalford's vineyards go from strength to strength with each passing year. Shiraz is harvested throughout the cool of night, bunches are destemmed and crushed to ten and twenty- tonne static fermenters. Musts are inoculated with strains of yeast chosen for their excellent affinity to Viognier and Shiraz. Varietals are co fermented to a course of rack and returns with daily pumpovers for optimal extraction and cap management. Vinification proceeds at an even pace for a fortnight until complete dryness. Batches are pressed off skins to barrel for completion of malolactic and a term of age in a selection of French oak prior to assemblage and clarification.
 
Classic dark cherry red with solid magenta hue. Beautiful big, lifted perfumed nose filled with floral accents, spice and liquorice notes. All that is on the nose comes through to the palate. Dark cherry flavours reminiscent of black forest gateaux. Spices comes through the primary fruit character, the texture and structure are seamless. A powerfully fruit driven wine, complex enough to satisfy the most ardent Shiraz enthusiast.
Sanguine Progeny Shiraz

Several generations later, the progeny of estate patriarch Pietro d'Orsa have returned to the land with a consuming passion to create generously flavoured, impeccably balanced Heathcote wines. Sanguine employ traditional winemaking practices, Shiraz and a small component of Viognier, are hand picked and co-vinified, to achieve a marvelous expression of Heathcote, solid, seamless and exquisitely fragrant. The palate is richly laden with dark juicy fruit characters which roll through to the end, the mouthfeel is textural, the solid weight of fruit is supported by a firm length of balanced tannins.

Sanguine's vineyard is trained to vertical shoot positioning trellis system, thereby opening up the canopy, reducing the risk of disease and exposing the bunches to direct sunlight for ripening. The vines are cane pruned to a single fruiting wire with a maximum of twenty buds per vine. To conserve the natural balance within the soils and overall health of vines, Sanguine have managed the vineyard organically by utilizing organic fertilizers and mulching to control weed growth. Grapes are destemmed, lightly crushed and naturally vinified through the action of wild indigenous yeasts in small open fermenters. The wine is then transferred by gravity into predominantly French oak barriques for a year's maturation.

From a choice site in Adelaide Hills near Echunga, off vines planted to well drained, granitic soils, 410 metres above sea level. Fruit is completely hand harvested and placed into small, traditional open top fermenters. A component of whole bunches is introduced, vintage permitting, to initiate partial carbonic maceration, extract fine stem tannins and enhance complexity. Temperatures are kept between a wide range of 15C and 34C throughout a fortnight of vinification, while treating the ferments to cap management regimens of hand plunging and pumpovers. The finished wine is treated to a extended term in a selection of seasoned and new, large format French barrels and smaller oak puncheons.
 
Deep purple red colour. Highly perfumed, vibrant and complex, floral notes of violet and dried herb, red currants and hints of black liquorice. Juicy black fruits with a measure of peppery spice over gently integrated dry, earthy tannins.
Tahbilk Grenache Shiraz Mourvedre

Victorian accords of Grenache, Shiraz and Mourvedre are sufficiently rare, ideally, an estate must have a heritage which dates back to early settlement before they can consider crafting such a wine. The first nascent plantings at Tahbilk were sown with cuttings from Valley Rhone. Shiraz, Grenache and Mourvedre have taken to the local surrounds and today yield the finest harvests in Victoria. A deeply charismatic wine of provocative sweet and savoury fruit characters, exquisitely balanced over a length of elegant, tensile tannins.

Shiraz and Viognier, the modern Australian classic, Terra Felix can construct a complex palate of rare integration. A collation of parcels from the finest vineyards are essential, all harvested at optimal ripeness. Crops are kept to levels which can sustain grapes with a concentration and intensity flavour. The excellent growing conditions lead to even flowering and a good fruit set. Shiraz must exhibit deep colour and fine tannin development, Viognier vines are nurtured to yield berries with attractive perfumes. The Torbreck endeavour is based around precious Barossa vineyards and a love for the classics of Rhone Valley. In 1995 Dave Powell crushed three tonnes of grapes and fermented wine in a shed on his Marananga property. He named his wine Torbreck after a forest in Scotland where he worked as a lumberjack. The deep red clay soils at Marananga produce fruit which is savoury and rich, a satin texture and glorious perfume. Shiraz is crushed straight on top of Viognier grapes which have been lightly pressed for RunRig. The mixture is co fermented and treated to twenty two months maturation in seasoned French oak barrels which have previously been used for the ageing of RunRig.
 
Completely black/ purple with healthy, vibrant magenta hues. A pure, wild, powerful nose of blackberry and tar is complimented by a gentle floral lift of lavender and violets. Full bodied with great concentration, lavish layers of dense blueberry fruit are perfectly interwoven with nuances of cinnamon, tar, exotic spice, pepper and dark cherry. Silky tannins and perfectly judged extract, a vigorous, lengthy finish.

Shiraz is harvested off low yielding vines to the most appropriate schedules, ensuring optimum balance, ripeness and intensity of flavour. Grapes are destemmed but not crushed or pumped, to preserve their physical integrity. Berries are transferred to a mix of open 4000 litres wooden and steel 5000 litres vats, the Viognier is co-fermented with Shiraz in vat to preserve fruit flavour intensity. A majority of the batches are naturally vinified and treated to a combination of different maceration times, mainly pumped over, from fifteen to thirty days on skins. Turners Crossing is aged in a combination of finely coopered, seasoned French oak barrels for eighteen months.
 
Very deep red colour. The aroma has intense ripe red and black fruits with no overt jammy elements, complex spiciness, savoury elements and florid Viognier aromatics. The palate complements the bouquet, rich, round and full in weight with intense fruit flavours, savoury notes and earthyness, all framed by spicy persistent tannins and finishing with lingering balanced mineral acidity.

The late, great Greg Trott, patriarch of Wirra Wirra, saw many of his unusual dreams realised, such as the construction of a cyclopean fence which girts the entrance of the wineworks. One consuming vision however continued to elude him, the building of a medieval siege machine called a trebuchet. Why? To use as a catapult for bombing neighbouring properties with bottles of wine in the hope they would retaliate! A splendid, opulent rendering of Shiraz, brimming with intense fruit, a hint of varietal spice and a touch of Viognier to be different, just like Trotty.

The Catapult style is bright and juicy with textural tannins and plump fruit. A mostly Shiraz wine with a dollop of the aromatic Viognier, grown to superlative sites at Blewitt Springs, McLaren Flat and Seaview. A small inclusion of Viognier is crushed, de-stemmed and cold soaked along with Shiraz for two or three days, extracting maximum colour and flavour without the influence of alcohol. Each ferment is tasted daily throughout vinification. Once the desired level of colour, flavour and tannin are extracted, ferments are pressed into a combination of French oak hogsheads and barriques. Upon completion of malolactic, wines are rack and returned every four months, bottled after a year to fifteen months maturation.
 
Vivid red, brilliant purple edge. Lifted bouquet of musk, ginger spice and bright blueberry fruits with notes of ripe cherry and raspberry. Touches of cedary oak and some complex pine needle and herbal nuances add to the appeal of the bouquet. Juicy sweet fruit floods the palate with plum and blueberry dominating. The soft silkyness is enhanced by fine tannins, flavoursome with wonderful joie de vivre, a wine of vibrant character.
