Following the harvest, grapes are inoculated and vinified in twenty tonnes rotary fermenters, which periodically mix the fruit and keep skins wet, maintaining temperatures at 20C to 25C. A natural culture is employed, selected for its capacity to preserve attractive berry aromas while keeping wild yeasts in check. Regular tasting twice daily throughout a week of vinification is followed by a term of maceration on skins for optimal extraction. Batches are pressed, assembled and racked to a selection of pre loved oak barrels for a brief but judicious course of maturation, aimed at integrating all components and taming the tannins, while retaining fresh Coonawarra fruit character.

Deep purple, magenta hues. Dark cherries and plum notes, blackberry and fruit compotes, liquorice, vanilla and cedar box oak. The fruits carry on to the palate, vibrant, generous and round, supported by soft tannins, following through with a subtle spiciness on the finish. Yearling has been fashioned to enjoy today around the dinner table alongside a crackling roast lamb.
Sanguine dOrsa Shiraz
Heathcote
Available in cartons of six
Pietro D’orsa found work in Australia as a winegrower circa 1868, quenching the thirst of miners during the Victorian gold rush. Several generations later, Pietro's progeny returned to viticulture. They DNA tested some heirloom vines established by Pietro in the 1880s, replanting the rootstock to sire a unique block which is destined to yield some spectacular vintages. The most exceptional barrels of Sanguine's annual harvest are set aside for a separate term of aging and assemblage into a superior Heathcote flagship, an opulent, dark crimson homage to the estate's noble patriarch.

Scarpantoni pride themselves on making wine from fruit grown to their own vineyards. The sites are scattered around McLaren Vale, all enjoy their own soil profiles, aspects and exposure, factors which influence the grapes, ultimately defining the character of the finished wines. Scarpantoni's vineyards were planted by the family themselves, except for one. Block 3 was established in the 1940s, now source to a pure, single vineyard wine. Block 3 runs along the right hand side of the Scarpantoni wineworks, on a patch of sandy soil which retains moisture at lower depths, ensuring natural nourishment for the deep rooted vines throughout the most severe of droughts. It yields a harvest of the most remarkable quality Shiraz.
