Pennys Hill Cracking Black Shiraz

Planted in 1991 and added to the Penny's Hill estate vineyard group in 1993, Malpas Road is named after the pioneering family who held lands in what was originally referred to as Bay of Biscay. A reference to the relatively infertile cracking, grey black soil upon which the hand tended Shiraz patch does its work. The fissures which occur as the black soils crack apart, sever surplus root structure, a process which lessens vine vigor and enhances the virtue of the grape. Unmistakably McLaren Vale, even more so Penny's Hill.

Shiraz is sourced from the Malpas Road site and the elevated aspects of Penny's Hill. Detailed canopy management, judicious irrigation and devoted viticultural practices contribute to the quality of these exceptional parcels of Shiraz. To best reflect the variations in terroir across the vineyards, harvest of individual parcels is conducted on different days. Fruit is crushed, de-stemmed and vinified on skins in static and open fermenters for a week. Some free run and pressings complete ferments and eighteen months maturation in a selection of new and seasoned French oak barrels. Parcels are kept separate throughout the process to preserve the individual character of site within the final assemblage.
 
Dark cherry red colour. Currant and blueberry fruit fragrances with a lifted violet perfume, followed by spice and lightly toasted French oak. Lovely primary forest fruits and red currants with traces of spice and silky milk chocolate tannins at the finish. Ready to drink alongside steak and vegetables.

McLaren Vale enjoys an unrivalled reputation in Australia and indeed the world, for Shiraz grapes with fully developed characters, translating into wines of excellent fruit and fine length. The original Penny’s Hill Vineyard is at the very foothills east of McLaren Vale, slightly cooler than the valley floor, a legacy of extremely low yielding vines which produce fruit of amazing richness and complexity. Only the most splendid rows are hand picked for inclusion into the icon Footprint Shiraz. Grapes are open fermented on skins for a fortnight, followed by pressing into an extravagantly high proportion of new French oak barriques for eighteen months maturation before the final assemblage.
 
Dark, black scarlet hues. Blackberry and dark plum fruit bouquets, black olives, cedarwood in support of underlying savouryness. Penny's Hill is an eighteen acre block, planted to Shiraz by proprietors Susie and Tony Parkinson in 1991. Narrow rows and high density plantings saw a move away from traditional viticultural practices and has contributed to the quality of harvest, year in and year out. Fruit is destemmed and treated to several days of open fermentation on skins prior to pressing. By keeping parcels separate throughout the vinification, a range of styles can be considered from which to assemble the ultimate McLaren Vale Shiraz. Choice batches, free run and pressings complete their ferments in a high proportion of new French oak barriques, followed by eighteen months maturation.
 
Deep, dark crimson red. Sweet red currant and blackberry fruit supported by vanillin spice and a perfumed lift. Rich, ripe dark berry fruit complemented by layers of spice, dried herbs and chocolate. Great length and intensity, all the defining characteristics of a big rich black wine, chocolate and earth combine to create a delicious persistence. Pepper Tree have strayed from their wineworks at Pokolbin to secure harvests of Terra Rossa Shiraz which are second to none. The team know from good fruit and have a good eye for terroir, their splendid vines planted to Wrattonbully's Gravels Block grow a superior quality of Shiraz, characterized by controlled power and stealthy tannins. Flavour maps which have been generated for the vineyard demonstrate considerable variance, assisting the team to isolate individual sections for the production of a wine exhibiting generosity and charm.

Pepper Tree's Wrattonbully vineyard covers a hundred hectares. Individual blocks are given separate canopy management, cropping structure and moisture control according to soil depth which can vary from a few centimetres to over a metre. Shiraz is grown on red soils with gravelly ironstone layers on the lower slopes of the dune. The extra elevation of the Wrattonbully dunes provides a fortuitous cold air drainage which reduces the risk of frost during the growing season. Shiraz grapes are crushed and vinified on skins at controlled temperatures of 18C to 20C for a week, followed by a year's maturation in a selection of choice French oak barrels.
 
Deep scarlet purple hue. Complex nose of dark berry fruits, a heady mix of lifted spice notes integrate well with subtle French oak. Rich and concentrated palate, displaying sweet mid palate fruit seasoned by complex spice flavours. The nicely structured finish is finely balanced and well supported by subtle ripe tannins. The dominant characters of the wine are its spicy white pepper flavours and exceptional palate length.

Pepperjack are designed from the vineyard to the bottle, to be rich, bold red wines. Choice parcels of Shiraz exhibiting a concentration of flavour are assembled, red berries and rich plums, savoury notes and ripe tannins. Crafted to a combination of traditional old world winemaking methods and modern vinification techniques, fruit is treated to a course of maceration for optimal extraction of tannins and colour, followed by a week or two of ferment and transfer to a selection of French and American oak barrels for malolactic and fifteen months maturation. The individual components are separately aged and the candidate barrels are determined through a staged selection process.
 
Rich red colour with dark purple rim. Nose of rich concentrated red and blue fruits, dark chocolate and rich mocha notes with hints of spice and cedary oak. The palate is rich and plush with good structure, a concentrated layer of berry fruit flavours and judicious oak, balanced by fine tannins to give length and power while finishing soft and full of flavour.

Choice McLaren Vale vineyards, some of which carry great distinction, are source of the opulent Shiraz grapes which are at the core of Pepperjack. Traditional winemaking works hand in hand with the most sophisticated techniques, as applied by the Barossa's most accomplished team of Shiraz specialists. Maximum use is made of soaking and plunging to extract intense colours and firm tannins. All parcels are treated to a separate vinification for up to a fortnight in traditional open top fermenters, before being gently pressed and transferred to a combination of new and prior use French and American oak barrels for fifteen months maturation prior to assemblage.

Undercover is a reference to the McLaren Vale tradition in supplying other regions with bespoke parcels of fruit, ultimately to be vinified into some of Australia's most favourite wines. Undercover is an old vine Shiraz, selected from Pertaringa's five decade old vineyard, hand crafted by winemaking supremos Geoff Hardy and Ben Riggs. Undercover is the essence of McLaren Vale Shiraz.

Pertaringa is surrounded by magnificent stands of native gum trees. All vines are pruned to control vigor and crop levels using a combination of regimens. In the summer the vines are topped and trimmed cutting the shoot tips off to encourage lateral growth and make the vines easier to access. Ironically, Pertaringa's Shiraz was initially sold off to Hardy Wines, proprietor Geoff Hardy's family company, to make port and to exchange for other wines as payment. Today Pertaringa's old Shiraz vines make the finest full bodied reds of the region and are highly sought by leading companies for their flagship wines. The most superior parcels of estate fruit are set aside for the Pertaringa label.
 
Deep plum ruby colour. Exuberant fragrances, aromas of dark cherries and blackberry. A complex array of lifted fruit flavours, an inky concentration, the palate delivers waves of vibrant satsuma plum, black cherries and beetroot that interplay with freshly laid asphalt and earth. Egerton E S Dennis settled on ninety acres of vineyard at McLaren Flat after serving in the RAAF. Ege pioneered the production of Mead and sold his crop of wine grapes to some of Australia's most eminent brands before founding his own label in 1971, with the object of converting the high quality fruit into pure, estate made wines. Since establishment, Dennis Wines have collected hundreds of medals and accolades at national and international taste offs, twice claiming the revered Bushing King awards for best wine at the McLaren Vale Winemakers Exhibition.

Grapes are harvested throughout the cool of early morning and vinified at 24C in open fermenters, treated to a continuous gentle agitation of the cap and twice daily pumpovers. After several days of ferment on skins, juices are run off to a basket press and returned to the free runs. Following completion of malolactic, Peter Dennis is matured for a year in a selection of American and French oak hogsheads.
 
Bright, dark scarlet colour. Luscious nose of coffee, cherries and plum, pepper, tarry earth and baking spice. Big, full bodied and soft to the palate, characterised by fresh fruit flavours of blackberry and plums, laced with black pepper, supported by a lean firm acid/ tannin structure helping to round out the finish. The ideal accompaniment to roast meats, grilled steak and hard cheese.
