Australia can lay claim to this style as its own, completely unique, it has become Great Western's most profound contribution to the world of wine.

Sparkling Shiraz is synonymous with Great Western, and contemporary tastes have presented a great opportunity for Great Western to refine the style. The winemaking team discovered that certain blocks yielded fruit which would lend themselves exceptionally well to sparkling Shiraz, forming a wine that spoke of place and was characteristic of Great Western. Grapes are picked early, inoculated and vinified in traditional fermenting vats, without receiving any oak treatment whatsoeverl, achieving a wine with medium body which retains freshness and intensity even as it ages. The goal is to ensure that the finished wine defines Great Western, retains good balance, elegance and refinement.
 
Brick red to dark red with crimson hues. Great cool climate perfume, spicy fruit and lifted floral aromas. Red fruits and spice on the palate, a well integrated medium bodied Shiraz, balance and texture are the endearing qualities of this essential Aussie style. Bests Thomson Family Shiraz

Outstanding Langton's Classification. Thomson Family Shiraz is produced from Henry Best's original 1866 plantings, only ever made in exceptional years, on average about six times a decade. The vines are cropped at less than two tonnes per acre and are meticulously hand harvested, selected and sorted. Thomson Family Shiraz was first made in 1993, one hundred years after the Thomson family settled in the area. It is produced predominantly from the fifteen rows of vines planted by Henry Best, referred to as Hermitage by Henry in his daily journal.

This very special planting of Shiraz is referred to by the CSIRO as the Concongella clone, the mother of all subsequent Shiraz stock at Best's Great Western. The property, established 1866, takes its name from the picturesque creek which runs beside the vineyard. Climatically cold to very cold winters and frequently dry and cool summers, with occasional bursts of hot weather, are the norm. A little stress concentrates grape flavour, at Concongella it happens naturally. Despite these natural adversities, Concongella consistently produces high quality grapes of intense flavour. Hand harvested, hand plunged and vinified in small open fermenters, produced only in years when the quality is second to none.
 
Inky garnet, vermillion hues. A heady mixture of black fruits, bitter chocolate, dried flowers, white pepper and innumerable secondary aromas including leather, liquorice and tobacco. Very intense rich front to mid palate, lush and plush, ultra rich tightly structured liquored fruits, seductive, oak balance persists, supporting acid and tannins arrive late, long and detailed finish. Long, powerful, unsurpassably fine, elegant.

From vines up to forty years of age grown to the Schrapel Vineyards, with the inclusion of parcels from neighbour's blocks in the Barossa foothills. The cornerstone wine of the Schrapel family reds, in a style which has made Barossa famous for Shiraz the world over. Parcels of perfectly ripened grapes are treated to traditional old world techniques which date back to early settlement, followed by extended maturation in fine oak. Decant for three hours then savour the spiced fruit aromas and plush plum palate alongside roast or steak.

The Schrapel property is hand pruned to seventy buds per vine, traditional viticulture limits the yield to 6.25t/hectare. The healthy old vines sprout a superb harvest and there is very low incidence of disease. Fruit is crushed and de stemmed on skins in open top fermenters for eight days at 15C to 18C. Ferments are racked and pumped over skin caps for optimal colour and tannin extraction. Upon completion, batches are pressed and left to settle for malolactic, followed by transfer to a selection of seasoned and new French oak barrels for an extravagant twenty two months maturation, enhancing the sublime old vineyard fruit character and building fine palate structure.
 
Deep garnet, almost black colour. Aromas of ripe berries leap from the glass, followed by the rich, ripe blackberry and plum fragrances of Barossa Shiraz. A generous palae of mellow fruit flavours, showing excellent acid balance and restrained, supportive tannins. A finish that's full of Barossa chocolate plum fruit characters, gritty fruit tannins and crispy cherry acidity, silky soft, lingering and long.

Bethany's Reserves are wines of evolution rather than creation. GR has achieved the prestigious Trust Mark as one of the Barossa's most eminent Shiraz, but it's not every year that one is made. Parcels of the most exquisite grapes are picked from splendid sites and treated to an exacting vinification. With each vintage, harvests are assessed and a decision is made to determine if there is a parcel of GR quality. A formidable, full bodied classic with an enormous palate and undeniable ageing potential, only a few hundred cases are ever bottled.

The work remains very hands on, the choicest parcels are set aside for a course of traditional open ferments, malolactic and pressing to a slection of exclusively new French oak barrels for a year's maturation. Its big, vibrant bouquet of fragrant wild berries, oake clove and spice, precede an opulent palate of blueberries, bramble and plum, supported fine grain tannins and juicy fruit acidity.

Andrew Nugent grew up next door to the historic Penfold wineworks at Magill, his formative wine years were spent amongst the vines. He established his own vineyard and olive grove on a hundred acres of land along Bird in Hand Road at Woodside. His efforts have since claimed a staggering list of awards for excellence on the international wine show circuit. Hand crafted from the finest parcels of Adelaide Hills Shiraz, grapes are crushed into small open fermenters and pumped over twice daily throughout vinification over the course of a week, to maximise flavour and tannin extractions. Batches are pressed off skins into a selection of French oak barriques for sixteen months maturation.
 
Dark red colour with bright purple hue. This elegant wine exudes rich and vibrant aromas of complex dark berries, plums and white pepper. The pick of crop Adelaide Hills Shiraz, albeit in a very Cote du Rhone kind of way. Hand picked and gently destemmed into small open top vats, a fifth of the harvest remains as whole bunches, tipped over top of the ferments and treated to a minimalist, long, cool temperature vinification, minimal pump overs and gentle pigeage, followed by eighteen months in a mix of seasoned and new French oak barriques. Vivid purple, lifted aromatics, blackberry, violets and herb, juicy fruit weight, silky, slightly chalky tannins underpinning the bright acidity, Syrah of structure and superior length.

The Galvanized Wine Group's collective approach to strategic viticulture, stratification of style and triangulated approach to vinification, includes the highly successful Woop Woop (out there from out there) and its sibling Black Chook label, all are wines of charm and character. The multi vintage Black Chook sparkles to the tune of an effusive, opulent persona, predominantly three to five year old Shiraz wines, aged in a combination of seasoned French oak barrels, where they develop layers of smooth integrated fruit and a rich weighty texture across the palate. These are assembled with a touch of younger Shiraz wines contributing ripe juicy fruit characters. Alcohol 13.0%

Blackjack has claimed the eminent M.Chapoutier Trophy for Best Shiraz at the prestigious Le Concours des Vinson on no fewer than three occasions. Block 6 is a superior parcel of distinguished vines, renowned within the Bendigo district for producing a very high quality, intensely fruit driven Shiraz. Whilst directly adjacent to the original Blackjack plantings, Block 6 features a unique soil profile and a different clone. Block 6 always displays savoury Rhone structure and style, as opposed to the identifiably Aussie genre of Shiraz produced by Blackjack Vineyard.

Blackjack are just south of Bendigo, on an easterly slope, in the old fruit growing district of Harcourt Valley at the foothills of Mt. Alexander. The microclimate of this small boutique winery is considerably cooler than other vineyards, ablessed by Indian summers, cool nights and warm clear days, allowing the grapes to slowly ripen. Soils are very old, unfertile granites, although part of Block 6 is on richer sandstone gravels. The hand husbanded, hand picked vines on Block 6 were planted in 1998 and are a different clone to the original Shiraz stock. Vinified in traditional open fermenters, hand plunged and aged in French oak barriques for twenty two months, bottled unfined after minimal filtration.
 
Ruby red, purple hues. Dark berry and cherry aromas, black currants, nutmeg and mixed spice, complex festive pudding notes. In grand central Victorian styling, the palate shows abundant spice and pepper as well as fully ripe berry fruits, lovely rounded mouthfeel and texture, subtle oak in support. Superb balance of crisp peppery acids and fine oak tannins, a very persistent, remarkably long and lingering finish.
