Mollydooker take a highly scientific yet artisanal approach to winemaking and viticulture, employing a patented Marquis Vineyard Watering Programmeâ„¢ and Marquis Fruit Weightâ„¢ system. Fruit is treated to a week of ferment at temperatures as low as 14C, closely cap managed and imperatively tasted thrice daily. Batches are pressed while still sweet at five degrees of baume sugar level, into oak barrel for completion and a course of malolactic, an extravagant process which infuses and optimally consolidates the wine. Oak treatment is taken very seriously, working closely with World Cooperage and Heinrich, to develop barrels which are unique to the Mollydooker style.
 
Dark scarlet red. Red currants and licorice spice nose, intense black fruit notes, syrup, pitch and fertile loam. A double punch of fruit to the palate, cherry, red berries and plum flavours develop beautifully into spices and licorice, chocolates and cream. The soft tannins and underlining structure contribute amazing depth and lusciousness.

Shiraz was one of the first varieties planted by Carlo Monichino in the 1960s, he recognized the suitability of Goulburn Valley for viticulture and set out to make wines as he did, while growing up amongst the undulating vineyards of Italy's Piemonte. Monichino remains a largely family run operation, neighbours and the extended relations all join in at vintage. A splendid Shiraz, crafted exclusively from estate grown fruit and treated to an extended maturation, for a thoroughly charming wine of engaging complexity and exquisite balance.

Parcels of Shiraz are treated to a crush and cold soak, vinified in a combination of fermenters, followed by transfer to a selection of seasoned and new American oak barrels for a year or more of maturation.
 
Dark red, purple robes. Blackberry and dark currant nose, milled pepper complexity and charred oak. A decidedly berry drenched palate, layered with dark fruit, bramble and spice, supported by ripe firm tannins and supple cinnamon oak. A match to charcoal grills and kebabs, mediterranean vegetables or roasts.

Moppity are all about good wine from good fruit, selection of site is paramount and uncompromising standards of viticulture are essential. Lock & Key have embarrassed some pretty big names at conspicuous national wine show competitions, establishing Hilltops as the rising star growing appellation for Australian Shiraz. A rich, totally mouth filling wine with a deep, dark colour that's characteristic of Hilltops Shiraz. The palate is intense and concentrated, with loads of ripe dark berry, pepper and spiced cherry plum flavours.

Moppity Vineyard is a noteworthy producer of superfine Hilltops Shiraz and contributed fruit for the 2009 Jimmy Watson winner. Moppity's 170 acre property sits at the highest elevation in the Hilltops region and it's vines are among the eldest. There are multiple clones of each variety, including five clones of Shiraz, all featuring their own distinct characteristics. The advantage is a tremendous diversity in wine style depending on site, aspect, soil type and clone. Shiraz grapes are treated to a cold soak for the extraction of tannin, colours and flavour, followed by several days of ferment and a term of maturation in a selection of seasoned French oak hogsheads and barriques.
 
Deep, dark purple/ red in colour. Aromatic, perfumed, spicy with sweet red berry and cherry nuances. A soft and seamless, medium bodied, savoury expression of graphite and dark cherry, blackberry and a little briar, the palate is followed by fine acidity and drive, the freshness of fruit being a standout trait of this stylish, eminently drinkable Shiraz.
