$2299each $275DOZEN EACH DOZEN Frustrated at not being in control of their own fruit as they watched it trucked away to other wineries, Norm Doole and Drew Dowie opened a bottle of red over breakfast and decided to form a partnership, the purpose of which was to take complete charge of their grapes and to make their own wines. Five tonnes parcels of McLaren Vale Shiraz are picked at healthy levels of ripeness and treated to a few days of cold soak, batches are crushed and vinified for up to three weeks in traditional fat boy fermenters. An extended term of skin contact is followed by pressing into French oak barrels for completion of malolactic and several rackings over the course of eighteen months maturation.

Bright, dark crimson hue. Spicy, sweet plum and black cherry fruits on the nose, some white pepper and cloves with hints of dark chocolate and fruitcake overlaying creamy, vanilla oak. The palate is rich and fulll with layers of flavours of dark plum, ripe black cherry, dark chocolate and spices before a long, rounded, sweet fruited, spicy finish. A match with rib eye and bone marrow sauce.

The most highly coke addled marketing executive couldn't have come up with a brand like Dowie Doole, but fast forward and the label now enjoys a growing reputation for profound Shiraz wines in Australia and overseas. Small crops of extraordinary quality fruit are grown to some enduring Mclaren Vale vines, to be fermented and matured at the Boar's Rock wineworks.

$8299each $995DOZEN EACH DOZEN The small 74 Block was the first parcel to be replanted on Norm Doole's California Road Vineyard in 1974, it produces fruit of unique concentration and complexity. Shiraz is harvested throughout the night to take advantage of cooler temperatures. Fruit is crushed into a small static fermenter for vinification on skins over a period of eight days while being treated to pumpovers thrice daily. At 2 baume the must is pressed straight to a selection of completely new French oak hogsheads for twenty four months maturation and a course of several rack and returns. Upon completion, the assembled Dowie Doole is given a coarse filtration before bottling.

Intense deep purple colour. A complex nose of dark fruits and leather, spices and dark chocolate. The full bodied palate is rich and generous, it follows on from the bouquet with blackberry and plums, spices and dark chocolate. A complex wine with excellent tannin structure, length and weight, marzipan and liquorice linger right through and onto the very long smooth aftertaste.

Dawn and Neil McCallum had been looking for a quality site since 1979, it became clear that Martinborough was the place. Beginning in 1986, the wines of Martinborough were given a seal of origin. Authentification is administered through Martinborough Terrace Appellation of Origin System. A mere 600 plantable hectares in size, the special soils are comprised almost completely of free draining gravels with the same meagre rainfall, aspects and temperatures, unique and homogenous from a viticultural point of view.

The aim at Eden Road is to take a highly exacting approach to the winemakers art, subjecting samples of candidate parcels to a scientific analysis, while endeavouring to work the fruit in a way that's gentle and unobtrusive, for the realization of articulate, high country wines.

$4599each $551DOZEN EACH DOZEN Shiraz is sourced from a single vineyard at Kingsvale south of Young, planted to wind swept altitudes at 500 metres above sea level. Red sands and cracking clays, basalt and decomposed granite soils, working in concert with the chilly continental climes, yield harvests of remarkable complexity and defined regionality, contributing intense, bright red fruit flavours and piquant black pepper notes to the wines. Grapes are completely de-stemmed, inoculated and treated to a very gentle regimen of pneumatic pumpovers throughout the vinification, allowing berries to remain whole and undamaged. Upon completion, components are filled to a selection of 225 litre French oak barrels for maturation.

Deep red with red hues. Spicy black pepper, whiff of dried herbs, blackberry aromas with floral notes. Sweet attack then concentrated dark berries, medium bodied with chewy tannins and persistent acidity. The support of profoundly integrated oak and seamless tannins keep the bold weight of fruit in check, finishing long, firm and savoury.

A decidedly cold climate style of Shiraz from some of the chilliest terroirs in the land. Its piquantly spiced black pepper nose, blackberry bouquets and winsome floral notes, waft on to a palate of sweetly dark berry flavours, medium bodied Rhone style of delightfully chewy tannins and persistent brambleberry acidity, resolving on a long savoury finish.

The batches are tasted thrice daily and the temperatures are adjusted at each tasting to maximise flavour, keeping the tannin in balance with the intensity of fruit. When the tannin and fruit balance are extracted to the desired level, the wines are basket pressed, settled and racked into a combination of the finest 225L French oak barriques. Components are tasted regularly throughout maturation, racked and returned as required. After twenty months, the very finest barrels are set aside for inclusion into the final assemblage.

Vivid garnet, deep purple hues. Highly complex aromas of allspice, chocolate, olive, fresh blueberry and persimmon flesh complemented by underlying spicy French oak and savoury, smoky notes. $11999each $1439DOZEN EACH DOZEN A pure, single vineyard wine, from an unknown clone of Shiraz, picked off ancient vines, still growing on the original own roots, planted circa 1894, auspiciously classified as a centenarian block by Barossa Old Vine Charter. Following the initial budburst of a good spring, ample subsoil moisture allowed the old vines to flourish throughout the warm, dry summer. A cool February delaying ripening until late March, encouraging more blueberry and mulberry characters than is normal for Command Shiraz, very soft, pliable tannins adding structure and finesse. The finished wine was treated to an extravagant three years maturation in a mix of completely new American and French oak barrels.

Very dark purple with bright magenta hues. A radiant bouquet exhibiting a symbiosis of perfumes, savoury elements complexed by virile berry fruit and vanilla/cashew oak derived influences. Growing on rich river silt soils and red brown earth over limestone, blessed by a Mediterranean climate, with cropping levels maintained to less than four tonnes per hectare. The strength and resilience of these vines shines effortlessly in the quality of what is in the bottle. Grapes are hand picked, chilled and vinified in open top concrete fermenters, treated to hand pump overs and cap submerging with oak header boards for eight days, followed by transfer to oak for completion of ferments, malolactic and thirty months in exclusively new French and American oak puncheons.

From blocks of old, estate grown Shiraz vines planted to the banks of North Para River at Nuriootpa. Elderton was transformed from a vineyard supplying quality fruit to other wineries into an internationally renowned estate, having won much acclaim for Shiraz. There are twelve blocks of Shiraz at Elderton, some as old as a hundred years, planted to deep alluvial soils over limestone. Combined with a Mediterranean climate and minimal supplemented irrigation, this creates what savant Robert Parker describes as the perfect Shiraz vineyard.

$2999each $359DOZEN EACH DOZEN Samuel Elderton Tolley established the Elderton vineyards in the early 1900s. Under the stewardship of the Ashmead family, the vines are now source of world class Shiraz wines. Grapes are harvested throughout the cool of night, at an optimum ripeness and maturity between 14 and 15 baume. This allows a quick delivery to the winery for crushing before any spoilage can occur. Grapes are crushed, inoculated to a choice strain of yeast and vinified in concrete open top fermenters at 20C to 28C for several days, mostly headed down under oak boards. The finished wine is matured two years in a selection of seasoned 500 litres American oak puncheons.

A rich and vibrant dark purple colour. Pronounced nose of chocolate and vanilla, plums and toasty, cedar oak. An engaging palate showing exceptional length with amazing purity of fruit, offering generous helpings of of plum, chocolate, and blackberry flavours with a meaty edge, and a fleshy rounded mouth feel, followed by fine, lingering and integrated tannins. From an invaluable parcel of vine at Greenock, planted by the Helbig family in 1915. Hand picked grapes are gently crushed into two large 1500 litres barrels, sealed for six weeks of maceration and fermentation on skins, followed by a press to a luxurious selection of finely coopered French oak for two years maturation. A stunning wine in true, old vine Barossa blockbuster styling, densely figured with black and blueberries, cinnamon and clove spice, its voluptuous, opulent palate unravelling layers of complexity and splendour as it lingers on a finish of immeasurable length.
