Dalwhinnie is well into its fourth decade of icon Australian Shiraz. Their parched soils atop the inhospitable climes of the Pyrenees yield restricted harvests of parched berries with aromatic, mouth filling spice characters and intense tannins. Just four kilometres along Taltarni Road on the Moonambel valley floor, Dalwhinnie has been pampering younger plantings at the Forest Hut Vineyard established in the 1990s. Now fully mature, these unirrigated and dry farmed, well canopied, vertically shoot positioned vines are producing intensely flavoured Shiraz.

Crafted from parcels of Shiraz grown to the cooler, slower ripening Forest Hut site. The climes are three to four degrees cooler than Dalwhinnie, all year round, so vintage arrives some three weeks later. Vines make the most of the extra time on offer to ripen grapes fully and develop vibrant fruit characters. The Dalwhinnie team know that great Shiraz can only come from a healthy, well pruned vine which has the proper balance of fruit to foliage for even ripening. Grapes are harvested and gently crushed, destemmed and pumped to fermentation tank for two weeks vinification, followed by transfer to a selection of old, well seasoned French oak barriques for maturation.
 
Purple black in colour with a lustre and sheen. Freshly ground black pepper, rosemary, bay leaf and dark plum bouquet with a hint of cinnamon. A big, rich savoury wine, well textured with massive tannin structure. A complex, long and lingering finish.
Dalwhinnie Moonambel Shiraz

Excellent Langtons Classification. The Dalwhinnie vineyard is situated on the 37th parallel, within a unique amphitheatre which has its own unique mesoclime. The poor fragile soils left over from alluvial mining projects in the early 1800s are some of the hardest and hungriest anywhere. The first Shiraz vines, planted to the Grand Piano Block, were rootlings from the eminent Sunraysia Nurseries at Mildura. The site is totally frost free and harvests achieve complete physiological ripeness nine out of ten years, all vintage releases must surpass expectations.

Full bodied, single block Shiraz of controlled power and amazing grace, crafted from a small parcel of precious fruit, picked off a rare clone, transplanted to Moonambel from an ancient Barossa vineyard in 1997. An opaque, masculine wine treated to an extended term of age in an extravagant choice of medium toast Allier French oak, its virile bouquet of musky jube aromas and seasoned sandalwood precedes a voluminious palate of dark berries, bramble and cassis, a wine of intense concentration supported by the splendour of masculine, savoury tannins.

From a single precious block, planted to an inhospitable reef outcrop, dynamited for levelling and planted to the eminent Concongella clone of Shiraz in 1995. The dry and bony soils yield meagre harvests of the most amazing concentration, parched little berries bursting with flavour and lined with velvet tannins. Grampians Shiraz of the highest order and most distinguished peerage, its amazingly rich perfumes and bridled elegance, black fruit characters throughout, black cherries, black raspberries and black roses, salacious yet refined.

Dandelion are proven plantings of worldly vines which have stood the test of time. The Lionheart of Dandelion is a very old Barossa site, named for seminal Barossa grower Carl Lindner. Within this ancient parcel, gnarled vines, many over a hundred years of age, are not only surviving but thriving on their own roots, planted to some of the oldest soils on the planet. The hand picked grapes of this noble garden are crafted into a powerful yet approachable wine, which articulates beautifully, the dignity, generosity and grace of old vines Barossa Shiraz.

Dandelion take great care to nurture the unique character of their vineyards and express the terroir in their wines. To capture varietal expression, vintage and character of the vineyard requires an enlightened approach. Whole bunches of fully ripe, intensely flavoured Shiraz grapes are hand harvested and gently crushed. Juices are treated to a natural vinification in open fermenters for eight days, hand plunged twice daily, before careful basket pressing into a selection of new and older French oak barriques for completion of ferments. After eighteen months and a course of racking, Lionheart is bottled without any fining or filtration, to retain and preserve the unaltered essence of the vineyard.
 
Intense crimson with youthful purple hues. Lifted blue fruits, blood plum, ripe blackberries and Christmas pudding spice flow out of the glass with spicy pepper, and hints of bramble and dark chocolate. Generous mouth filling sweet blackberry, raspberry and plums cover the palate with lashings of sweet spice. Firm but fine tannins and dark chocolaty nuances continue throughout the lengthy palate with youthful finish.

Walking the old vineyards and tasting grapes, Chester Osborn classifies and determines the ideal time to pick each row. Small batches are crushed and transferred to fermenters. When tannin extraction is just right the wine is basket pressed and filled to oak for completion. Ferments are aged with a view to keep the wine fresh while also reducing oak influence. Chester undertakes an extensive barrel tasting to determine the assemblage. Batches are matured eighteen months on gross sedimentery lees in a selection of new and seasoned French and American oak barriques. Dead Arm isbottled unfined and unfiltered, which may result in a harmless bottle deposit, decanting is advised.
 
Deep scarlet colour. Sweet fruits on the bouquet, the nose appears all about cedar, peat, fresh turned soil, ironstone, fennel and cured meats. A raft of black and purple fruits, blackberry, satsuma plum, blackcurrant, liquorice and sweet beetroot. Initially earthy and savoury, slowly giving way to sweeter and spicier fruits. The mouthfeel is very sleek and focused, it's all about style, savouriness and poise.

Joseph Rowe Osborn was born in 1852, he was a lay preacher, mining speculator, public servant, teetotaler and local politician. Osborn joined Thomas Hardy & Sons in 1881, eventually becoming a partner and director. He invested in a chestnut colt which won a fortune at the races and changed his life forever. Footbolt was the first wine in McLaren Vale to be labelled as Old Vine. When the moniker became common practice it was altered to commemorate the racehorse which played a pivotal role in the establishment of d'Arenberg.

Joseph Osborn purchased the nascent McLaren Vale Milton Vineyards in 1912. Components of today's Footbolt Shiraz are still sourced off the original vines acquired by Osborn a century ago. Small batches are passed through a gentle open roller crusher, some berries remain whole, followed by transfer to five tonnes headed down open fermenters. When tannin extraction is just right, the wine is basket pressed and filled to a mixture of new and older American and French oak barriques and large casks for completion of ferments and malolactic. Barrels are aged for a year on lees to keep the wine fresh and reduce influence of oak, remaining unracked until the final assemblage, unfiltered and unfined.
 
Deep bright scarlet colour. Enticing mix of red and black fruits, mulberries and ripe blackberry, exotic spice supports the fruit, nutmeg and cinnamon, anise and clove, it wouldn’t be Footbolt without that generous lick of d’Arenberg earth and game. On the palate the wine is rich, concentrated and generous, an intrinsic warmth, the dark plummy fruit, leather and cedar notes, soily tannins with a hint of chewiness, pulls it all together for a long, gratifying finish.
De Bortoli Estate Vineyard Shiraz

From the illustrious De Bortoli property at Dixon's Creek, established almost four decades ago on the cooler, elevated climes of Yarra Valley. The natural endowments of the land and consequence of closely hand managed vines, achieves a bounty of the most exquisite Shiraz, treated to a combination of old world vinification techniques, whole bunch inclusions and boot treading, aged in well seasoned, large format oak. The viticultural team take aim at harvests of Shiraz, showing excellent ripeness, fine tannins and an abundance of flavour. Grapes are hand picked and hand sorted over a triage table. A combination of whole bunch and whole berries are tipped into open fermenters and treated to a course of foot plunging, followed by rack and returns and more foot plunging toward the end of vinication. Batches are treated to three weeks of maceration and ferment through the action of wild indigenous yeasts. Components are pressed, settled overnight and gravity filled to a selection of 500 litre and 2300 litre oak casks for a year's maturation at optimal temperatures of 16C.
 
Garnet red colour. Brightly lit, detailed and perfumed bouquet, graphite and mineral notes. Medium bodied and dry, a finely aromatic, plump palate, seasoned by white pepper notes and exhibiting whole bunch ferment characters, supported by a length of grainy tannins and mere veneer of cedar oak. A match to spicy, country style pork bangers and root vegetable mash, drizzled with truffle oil.

Vines at Section A8 of Dixons Creek are strategically planted in a north to south row orientation. All grapes are hand picked throughout the cool of morning into 8kg buckets and transported to the estate wineworks. Fruit is hand sorted as a combination of whole bunches and whole berries are gravity tipped into open fermenters. Fruit is vinified through the action of wild indigenous yeasts, while treated to a regimen of foot plunging and hand remontage to gently extract colour and flavour. After three weeks of maceration and ferment, musts are pressed and settled before gravity filling to a combination of 500L oak puncheons and larger format 2300L casks for malolactic and a year's maturation.
 
Medium garnet red colour. Fragrant and aromatic, brightly detailed, perfumed characters, wild strawberries and graphite, minerals and cherry spice. A fine, plump and structured palate, brimming with dark berry flavours, smokeyness and pepper spice, supported by a whisper of seasoned oak and textural, grainy tannins. The Syrah of choice to accompany piquant fennel pork sausages with lentils and maghrebi spice.
