Robin Brockett Amphora Syrah
Bellarine
Robin Brockett has been chief winemaker at Scotchmans Hill since the 1980s, he knows Bellarine's best growers and is completely conversant with every microclime around the greater Geelong. Amphora is the Tete de Cuvee, the top cut of Shiraz from the most superior vineyards, a cull so strict, that only a hundred cases are made. Its dulcetly sweet perfumes of peppery plum are unlocked by a measure of the fragrant Viognier, underpinned by silky chocoate tannins, lingering on a velvet length of raspberries, rose petal and turkish delight.

Vinified in two large terracotta Amphoras, imported from the Brunello producing commune of Montalcino Tuscany. These old world clay vessels are essential to the balance, texture and integrity of the finished wine. Shiraz and Viognier grapes are all hand picked off the most superior rows at Fenwick Vineyard, a portion are added to the ferments as whole bunches. Several days of cold soak are followed by three weeks of wild indigenous yeast vinification, hand plunged daily until completion, a course of malolactic and eight months age on gross sediments, pressed and returned to the Tuscan Amphorae for the balance of a year's maturation.

Half Shiraz from the estate Stephanie vineyard, just adjacent the Rolf Binder wineworks. A third of Mourvedre, picked off a precious block of bush vine planted in the 1880s. The balance in Grenache from old Binder vines at Gomersal and Light Pass. A moreish medley of blue bramble, raspberries and chocolate box allsorts, underpinned by the savoury of smoked meats and simmering stockpot. Open fermented in the traditional old world style to deliciously dry, a salutory measure of subtle oak and kindly tannins in support of a lingering, chewy liquorice finish.

From a choice site in Adelaide Hills near Echunga, off vines planted to well drained, granitic soils, 410 metres above sea level. Fruit is completely hand harvested and placed into small, traditional open top fermenters. A component of whole bunches is introduced, vintage permitting, to initiate partial carbonic maceration, extract fine stem tannins and enhance complexity. Temperatures are kept between a wide range of 15C and 34C throughout a fortnight of vinification, while treating the ferments to cap management regimens of hand plunging and pumpovers. The finished wine is treated to a extended term in a selection of seasoned and new, large format French barrels and smaller oak puncheons.
 
Deep purple red colour. Highly perfumed, vibrant and complex, floral notes of violet and dried herb, red currants and hints of black liquorice. Juicy black fruits with a measure of peppery spice over gently integrated dry, earthy tannins.

After thirty years of pioneer farming in the harsh South Australian Mallee, Ben Schild had a vision of settling down to a property which was better suited to viticulture. Schild purchased Three Springs Farm in the 1950s, a promising site which already included a block of productive vines. Hand harvested to exacting timetables and at optimum ripeness, batches of Grenache, Mourvèdre and Shiraz are picked off the heirloom Three Springs, Kleemans and Angus Brae vineyards at Lyndoch in Rowland Flat. Batches are pressed and treated to a traditional course of open fermentations, bottled early with minimal filtration but without any exposure to oak, achieving a wine that's complex and beguiling yet fresh.
 
Bright crimson purple. Intense spiced red cherry compote bouquet. Old vine Grenache fruit presents itself on the front palate with a juicy red berry intensity, Mourvèdre and Shiraz add blueberries, ripe lush tannins and a vibrant mineral structure. Hints of white pepper and spice over a soft tannin framework, followed by a long and supple, dynamic finish.

Giovanni Maglieri worked at Pirramimma in the late 1950s. He was joined by 17 year old Serafino in 1963, the father and son team bought forty hectares of scrub and set about the task of clearing it for vines. After founding one of McLaren Vale's most eminent wineries, Serafino embarked upon his own label, cultivating a lineage of the most memorable vintages in McLaren Vale viticulture. The idyllic growing seasons and pristine soils along historic Kangarilla Road contribute to the creation of outstanding wines which express the uniqueness of terroir, sunshine and clime.

Serafino Maglieri came to McLaren Vale in 1968 and devoted his life to wine. From picking to pruning to cellarhand, he worked his way up to plant his own vines and build his first winery. He was twice crowned McLaren Vale Bushing King and claimed Trophy for Best Shiraz at the 1997 Great Australian Wine Challenge. He gained international renown after winning Trophy for Best Shiraz and Red Wine of the Year at the prestigious London International.

Terremoto vineyard is planted north west to red loam over limestone, just on the western side of McLaren Vale township. Vines are trained to a single cordon with a foliage wire controlling the canopy so light can penetrate to evenly ripen the fruit. Hand picked parcels of Terremoto vineyard Syrah are destemmed, leaving a high proportion of whole berries in the must, cold soaked for two days and inoculated with dried yeast culture. Batches are vinified in five tonnes open top fermenters for a week, pumped over twice daily, macerated on skins for a further ten days before pressing to a selection new and one year old oak French and American 300L oak hogsheads.
 
Black purple colour. Mulberries and chocolate bouquet, spices and satsuma plum, vibrant rich dark fruit intertwined with French and American oak characters of chocolate and spice harmonise with fine subtle tannins. The generosity of fruit character and the seamless integration of oak and tannin ensures the finish is fine, elegant and long.

Soul Growers source fruit across the Barossa Valley floor, out to the high country of eastern Eden Valley ranges, from vineyards which are living history. The sacred cépage of Shiraz, Mourvedre and Grenache, has always been an essential tradition of Barossa winemaking, assembling the fruit of some glorious old vines into a seamless experience of heady perfumes, succulent fruit and gently undulating tannins.
