Parcels of Cabernet and Merlot are collated on the basis of slow, even ripening, clean and expressive, optimal flavour development without disease pressure. Fruit is harvested at optimum ripeness and held for a term of cold maceration. Twelve days of ferment are treated to daily pumpovers and juice aeration, extracting excellent colour and tannin. Batches are pressed off skins for malolactic and a year's maturation in a selection of seasoned and new French oak, to be followed by assemblage into the final wine, with a view to achieving a soft and elegant style of Great Southern Cabernet Merlot.
 
Dark, rich plum colour, vibrant purple hue. Intense berry fruits, lifted spice and savoury oak. An initial burst of dense, dark ripe berries, subtle plum characters carry through the palate, combining subtle toasted oak, powdery tannins and a long, rich, fruit filled finish. Perfect with lamb, fusions of pork and veal medleys or piquant eggplant recipes.
Capel Vale Debut Cabernet Merlot

West coast Cabernet Merlot has evolved into a discernible regional style and established an international reputation, a new genre of wine that's unique and very special indeed. Debut is drawn from harvests of the finest fruit, grown to good vineyards across the eminent winegrowing precincts of Western Australia. The aim is to fashion a profoundly fruit driven wine, that's supported by supple tannins and a supple veneer of oak, to match tomato meat pastas, gourmandise sausage or juicy cut of lamb.

Grapes are destemmed but not crushed for a maximum whole berry inclusion. The musts are chilled and cold soaked for several days, followed by traditional fermentation. Musts are pressed, settled and racked off lees for completion of malolactic and a year's maturation in a selection of older oak barrels.
 
Rich red hues. The Classic Cab Merlot nose of mulberries and cassis, black fruits, capsicum and sweetly aromatic leaf. A supply structured palate exhibiting sweet fruit flavours, currants blackberry and plums. Barrel ferments infuse the wine with a delicious mouthful of chocolate/ cedar notes. Will complement many cuisine, the wine of choice to accompany roast leg of lamb or penne with chunky tomato and pork salsiccia.

The propitious vines are enthused by the scents of lofty karri tree blossoms, to yield harvests of the ripest, most flavourful grapes, intense with ripe brambleberry characters and redolent with the piquant cologne of local gums. Castelli make a Cabernet Merlot accord which expresses the magnificence of the Great Southern mesoclime, its lifted bush fruit aromaticness, velvet tannins and divine French oak, make a match to the finest gourmandise, game bird recipes, pate, pork and veal terrines or emmentaler gratin.

Castelli's strict regimen of close canopy management achieves harvests brimming with fully ripenend flavours. Fruit is crushed and held for a term of cold soak, inoculated to yeast strains F15 and FX10, followed by a rather warm vinification for a fortnight on skins at temperatures of 25C to 30C. Ferments are treated to pump overs twice daily, gentle tannin extractions and a course or two of rack returns. Upon completion, batches are transferred to a selection of seasoned and new French oak barriques for a judicious spell of maturation.

Cabernet Sauvignon and Merlot are picked throughout the cool of night to retain freshness. Grapes are gently destemmed, cold soaked and vinified in static fermenters at 22C to 26C over the course of a week, pumped over thrice daily. Upon completion, batches are held on skins for several days to soften the tannins, batches are pressed and transferred to a combination of finely coopered oak barrels for a term of age to enhance the complexity, while being treated to a series of rackings over the course of a year. Catching Thieves is ultimately assembled with a view to creating a seamless Cabernet Merlot wine whilst retaining the ebullient Margaret River bramble berry opulence.
 
Brick crimson red colour. Leafy aromatics, redcurrants and wild black berry, spice over supple chocolate oak. A medium weight palate featuring delectable flavours of currant and mulberry, plums and lovely cassis notes, juicy acidity, persistence and length. A touch of cinnamon complements the fruit, as it rests upon a soft but supportive tannin structure.

Directly across the top of Corsica on the Tuscan coast, the tourist town of Maremma hosts some of the most picturesque, sun drenched vineyards along the Tyrrhenian Sea. The region's sandy granite soils produce a lovely mineral style of wine, the dominant fruit characters Cabernet and Merlot are enriched by the influence of terroir. Treated to a short term of age in well seasoned oak, its supple savouryness and toothsome market garden flavours make an exquisitely structured wine of affable tannins and conspicuously universal appeal.

The two hands on the label represent the people who have lived and cultivated soils which lie along the banks of Murrumbidgee River, transforming it into the salubrious property it is today.

The Nugan estate property has been called Cookoothama since the 1800s. The vineyard is protected from rainfall variation by a fully integrated drip irrigation system, which includes four bores and five licences to pump from the Murrumbidgee River flowing along the southern border of the property. Cabernet Sauvignon and Merlot are harvested from Cookoothama Vineyard throughout the cool of night and delivered in small batches to the winery. Grapes are crushed, inoculated and pumped over in traditional style to avoid the extraction of bitter tannins. Components are then transferred to a combination of seasoned and new French and American oak barrels for maturation prior to the final assemblage.
 
Deep red with youthful purple hue. Aromas of plum and blackberry, infused by hints of spice, herbs and dark chocolate. Concentrated flavours of red berry fruits, mocha and spice over ripe silky tannins and well integrated oak. Cookoothama makes a great food wine that's versatile enough to compliment a wide range of cuisines, casseroles and meats.
Coriole Mary Kathleen Cabernet Merlot

Coriole was first developed by Geoffrey Kay, a distant relative of the Amery Vineyard Kays. Dr Hugh Lloyd GP sewed the vines which produce Mary Kathleen during a period when the fashion was to plant in contours around the local Seaview highlands. Named after the estate's matriarch, Mary Kathleen is crafted from three small blocks, originally planted in the 1960s. Perennially lauded and famously received, Mary Kathleen is generously mouthfilling with sweet fruit, earthy regional hints and complex spice.

The Seaview subregion of McLaren Vale generally has shallow soils which are red and brown earths with limestone and ironstone. This contrasts with deeper clays, sand and black biscay soils in other parts of McLaren Vale. Because the soils are shallow, controlled irrigation is critical for good flavour and colour by avoiding extreme stress. The soils at Coriole are about 80% terra rosa, that is red brown earths over limestone. Often this limestone has a capped shiny surface. Another area contails red earth with ironstone, and the oldest vineyard planted in 1920 is on deep clays. Two thirds or more of Cuvee Mary Kathleen is Cabernet Sauvignon, the balance in Merlot.
 
Deep plummy red colour. Aromatics of redcurrant, ripe mint and perfumed rose petals. With breathing, polished wood and a smokey cigar box aromas become evident. The palate shows bright fruit, lifted berries and blackcurrant supported by creamy textures. A brooding wine with structural tannin and good length, full of fruit and lovely soft tannins.

Fraser Gallop have successfully tamed the assertive tannins of sanguine Margaret River Cabernet with the inherent palate richness of the gentler Merlot. From unirrigated blocks yielding concentrated fruit, treated to the latest Turbo pigeur technologie from France, a lavish process which can pump whole intact grapes without grinding pulp and skins, leading to better homogenisation and extraction, translating into a wine of great vigor. Hand picked fruit is destemmed with minimal crushing to keep the berries whole. Chilled to 8C for cold soaking into closed fermenters, designed with a one-to-one ratio of height and length, just great for colour and flavour extraction. The ferments are pumped over daily using a turbopiguer. On skins for ten days, tasted regularly to monitor tannin, before pressing off skins through an airbag tank press. Pumped to French oak barriques from a number of Bordeaux cooperages for malolactic, barrels are racked twice over ten months maturation and development. Treated to fining trials for essessment of the final balance, Fraser Gallop is bottled unfined after a cross flow filtration.
 
Bright crimson, ruby hues. A nose of red fruits and plum, mulberry and cranberry, floral notes and violet, the trademark Wilyabrup Cabernet dustiness over subtle oak adds complexity. The palate is soft and approachable with juicy plum and pomegranate flavours. Consistent, grainy tannins not unlike the astringency of cranberry juice. Background oak allows the fruit to shine, acidity and alcohol levels are in balance.
