Moss Wood are endowed with the most splendid vineyards. Each block has particular traits which come together in the final assemblage to construct the definitive Moss Wood style. The blocks are literally only metres apart but there are sufficient differences in soil, aspect and altitude for them to show unique flavours. Every section, row by row, of each block is picked separately as it comes into maturity. The youthful generosity of Margaret River Merlot is very appealing and there will be a temptation to consume it young.

Bright, deep brick red. Powerful black fruits of blackberry and mulberry, backed up by Merlot’s complex notes, lots of mushroom, tar and earth. Planted atop the highest ridge dissecting the vineyard, the defining visual impact of Norfolk Rise is a hundred Norfolk Island Pines planted along a five hundred metre length of ridge. Lying in the lee of the trees under Mount Benson, are parcels of Merlot vines uncompromisingly husbanded to the most wholistic viticultural practices. The dark blue berries ripen slowly into voluptuous Merlot grapes with distinctive primary fruit characters.

Merlot is selectively harvested from the Norfolk Rise vineyards at Mount Benson at the southern end of the Limestone Coast. The vines are planted on near perfect Terra Rossa soils, providing an ideal level of nutrient and water retention. Grapes are picked, immediately de-stemmed and crushed. Inoculation ensues in a combination of small static and ganimede fermenters following a brief cold soak. Juices are vinified for several days at temperatures below 28C, followed by a year's maturation in a selection of seasoned French and American oak barriques, followed by a light filtration before bottling.
 
Medium crimson red colour. Fragrant violets and sweet cherry, dark chocolates, a hint of dried herb and lightly spiced cedar. Cherry, plum and forest fruit flavours balanced by chocolate and vanilla oak notes, finishing with good length and soft fine tannins. To accompany gilled lamb chops or rabbit casserole, ravioli or veal.

Pennys Hill Malpas Road Merlot

The Malpas family planted four scant acres of clone D3V14 Merlot vines to an auspicious block of dark, dry Bay of Biscay soils in 1991. The fissures which occur as the soils crack, sever the roots and diminish vigor in the vines, culminating in vintages of the extraordinary intensity and concentration of fruit. Bunches are destemmed, crushed and vinified on skins for a week, followed by a press into seasoned French oak for malolactic and eighteen months maturation. Bright cherry and blueberry fruit, red licorice and savoury spice, supple tannins and soft, lengthy finish.

Wrattonbully makes Merlot of exceptional character and flavour, arguably the finest and most consistent annual yields in Australia. The wines are distinctive for their blueberry, plum and mint character, sound structure and velvet tannins. Pepper Tree's Merlot vines are fortuitously planted to heavier clay soils at the toe of the main Wrattonbully dune, as heavy clays have proved to be the best soils for Merlot in its traditional home of Bordeaux. A soft and rich, profoundly fruit driven Merlot wine with more power and weight of varietal flavour than most.

The prominent viticultural feature of Wrattonbully is a series of ancient beach ridges and dunes which run north/ south, made of soft crumbly limestone which weather to produce the red and brown Terra rossa clay loam soils that are so highly prized for growing outstanding quality wine grapes. The higher elevation brings the advantage cold air drainage which reduces the risk of frost throughout the colder months of the growing season. Harvests of Merlot from choice Wrattonbully vineyards are treated to a fortnight on skins in static fermenters, pressed off skins and racked to a selection of fine French oak barrels for eighteen months before assembling into the final wine.
 
Deep purple red colour. An aromatic Merlot nose of black and red fruits with spicy lift and subtle oak. A fully ripe, classically medium bodied palate, packed with sweet berry fruits and spice, balanced by subtle French oak and fine, long velvet tannins, before a lingering complex finish. Enjoy with polpette e papardelle or coq au vin.

Both these mature sites yield a precious harvest of the most outstanding fruit. The palate is full, luscious and rich with loads of black fruits and cedar oak. Bunches of grapes are all hand picked, transported to the Petaluma Piccadilly wineworks, destemmed and partially crushed. Juices are inoculated to a choice Petaluma strains of yeast, once a day the ferments are drained off and gently pumped back. After three weeks on skins, batches are drained, the skins are gently pressed and the wine is gravity fed to a selection of new Alliers and Nevers oak barriques. A course of secondery malolactic is followed by two years of rest, regularly rack and returned for clarification, gravity settled and bottled without filtration.

Vineyards at Pizzini are researched and operated with a great emphasis placed on clonal management regimes and vine trellising. The aim is to strike better balance between number of vines per hectare, type of trellising, soil types and land aspect so that the vineyard is better able to produce quality fruit with a concentration of flavour. Vines are planted to the gentle undulating slopes of King Valley as well as the second terrace flats leading down to King River. The relationship between Merlot, climate and conditions of the vineyard are very complex, Pizzini have found the right combination and have honed their vines to produce a mouthfilling Tuscan style of Merlot.
 
Rich plum red in colour. The nose has lovely hints of plums and savoury spice, mulberries and anise with leather notes and earthy undertones, evolving fragrances of dried herbs and dark chocolate. The palate is soft, round and very generous. Tightly structured with good length on the back palate and a fleshy, juicy middle. A rich, round but firm tannin structure, good oak and finally, excellent length towards the finish.
