Hay Shed Hill was planted way back in the 1970s to the varietal grapes which have put Margaret River on the map, Semillon and Sauvignon Blanc. The mesoclimes which rejuvenate the vines at Hay Shed Hil in Willyabrup are generally excellent with generally favourable temperatures and ample sunshine, simply superb grape growing conditions. Sauvignon Blanc typically displays lovely tropical aromatics, the Semillon grapes are endowed with sweetly scented grassy, fresh fruit characters. Pitchfork is completely unwooded and bottled promptly after vinification. A low temperature, protective regime is adopted throughout the process, preserving the finer fruit characters of the crisp and aromatic varietals.
 
Pale straw/ green hues. Lifted Semillon/ Sauvignon aromas, lemon/ lime, gooseberry and pine, green mango and passionfruit with a distinctive grassy edge. Intensely flavoured, clean and zippy, offering fresh flavours of lemon, passionfruit and pineapple, before a clean linear finish. A match to Chinese scallops, gujons and quick fried fish.
Redbank Long Paddock Pinot Gris

Redbank keep the folklore of brave local pioneers alive, by accessing fruit from vineyards in the high country which gave birth to the nineteenth century tradition of droving the Long Paddock. Through the hard work of growers and diligence of the Redbank viticultural team, the very healthiest vines have been established and trained to yield parcels of the finest Pinot Gris. A vigorous wine with revitalizingly fresh fruit characters and the exquisite tang of tropical acids, to accompany freshly grilled fishes, dainty nibbles or the finest tasty cheese.

Fruit is selected from a number of viticultural precincts, which provide a diversity of vineyard resources to construct a wine which defines the uniqueness of Pinot Gris. The aim is to include parcels which have achieved full flavour development whilst still retaining vibrant aromatics. Grapes are hand picked and held in a cold room for eighteen hours, before being whole bunch pressed to ensure minimal colour pick up from the slightly pink skins. Juices are clarified before a cool fermentation which captures the fresh flavours of this stylish and exotic grape. Unwooded and unoaked, bottled promptly after vinification to retain and express the defining elements of pure, varietal Pinot Gris.
 
A bright clean, pale straw colour. Complex aromas of stonefruits and grapefruit, citrus and spiced pears, herbs and nashi pears and lifted fresh florals of white flowers. Crisp, with nuts and citrus, a medium bodied wine, very soft and juicy, with a nutty, complex textured middle palate finishing on a note of sweetness and minerality. Just great by itself, goes perfectly with tempura and any other seafood or white meat.

Redbank have long been at the fore of Victorian high country viticulture, having established labels that continue to produce some of notheast Victoria's most enduring wines. Redbank selects most of it's fruit for the Long Paddock from high altitude sites and across Victoria's finest viticultural precincts. The winemaking team spend long hours in the vineyard carefully selecting each parcel of fruit at different levels of flavour development, time well spent, which contributes to the complexity and texture of the finished wine. Sauvignon Blanc from choice vineyards is handled in separate batches with varying time on skins, depending on the attributes and flavour profile. Juices are pressed off skins, free run and pressings kept separate, chilled and racked to fermentation. Vinified at cool temperatures to maximise the aromatics and retain freshness.
 
A very pale straw with green gold tints. Lifted aromas of passionfruit rind, nougat and custard apple with underlying grassy notes of nettle and fresh green herb. Zesty citrus acidity upfront leads into generous green tropical fruit flavours on the middle palate. This round viscosity lingers onto a fresh grapefruit pith finish. Sandalford Margaret River Classic Dry White

Sandalford is designed to be fully fruit driven, completely Margaret River, refreshingly unoaked, classic and dry. The winemaking story goes back, way back to the 1840s as the second land title in all of Western Australia. In 1972 Sandalford broke out of their Swan Valley environs and established an estate vineyard along Margaret River, today it is one of the oldest and most salubrious. The exclusively free run juices of Semillon and Sauvignon Blanc are treated to a cool ferment on low solids, achieving an articulate expression of the enduring Classic Dry White.

The Sandalford team train their vines to yield Semillon and Sauvignon that's perfectly ripened and disease free, achieving marvelous sugar/ acid profiles. Viticulture is state of the art and only the vagaries of the growing season are left to chance, the quality of fruit from each vintage is second to none. Canopy management is either vertical shoot positioned or modified ballerina. Harvested throughout the cool of night and early morning, fruit is immediately processed, inoculated with choice strains of yeast and treated to a long, slow vinification. Ferments are stopped at the desired level of sweetness prior to the base wines being assembled, unwooded and unoaked, stabilised, filtered and bottled.
 
Pale lime in colour. Lovely, elegant, perfumed bouquet of fresh cape gooseberry and manage tout. A light bodied wine which is just so easy to drink. A real minerality to the palate, flavours seen on the nose translate beautifully to the palate. Acidity is perfectly judged, the wine finishes with a zesty crispness and harmonious balance.

The unique tapestry of Schild's vineyards allows the team to craft wines which are honesty and satisfying. Three Springs Farm is where the original Schild homestead is located. Situated on Steingarten Road at Rowland Flat, Three Springs sits at 380 metres above sea level. Vineyards at this altitude are traditionally much lower yielding than the Barossa Valley floor, producing higher quality fruit. Parcels of Chardonnay are fermented at low temperatures in tank to preserve fresh varietal expression and to achieve a bright fruit forward style, supported by a complex structure and full flavour development derived from extended lees contact post fermentation, bottled completely unoaked.
 
Pale gold with green hues. Lifted notes of banana and tropical fruit, guavas and a touch of lemongrass. Traces of stone fruit, apricots and young rock melon combine over a solid palate and fine taut structure, providing clear direction and balance. Ample flavours and good weight of fruit on the mid palate, fresh, crisp and extremely varietal without the use of any oak.

Established in 1982, Scotchmans Hill has become a producer of some of Australia's most complex, elegant and consistent wines. The vineyards are located on Mt Bellarine which was named by the Scottish immigrants who settled the area in the 1840s. Sauvignon Blanc clones F4V6 and H5V10 from vines up to twenty five years of age planted to sandy loam and volcanic clays over broken basalt subsoils, trellised to vertical shoot positioning, yielding 3.0kg per vine and 3.0tn per acre. Grapes are crushed, de-stemmed and pressed into temperature controlled tanks, inoculated and vinified at 13C for a fortnight, followed by lees contact without any exposure to oak.
 
Pale straw with green hues. Lifted and perfumed bouquet of tropical fruits, gooseberries, passionfruit with nettle notes. A tight, mineral palate showing tropical fruits, with passionfruit, gooseberry flavours and a hint of nettles on the mid-palate. This is balanced by clean fresh acid with a lingering aftertaste. Scotchmans Hill should be enjoyed in its youth while best displaying its fresh varietal character.

Mark Lane found his way to Margaret River in a roundabout way. For a while he made cheese and wine in Victoria with the likes of Tarrawarra and Eyton-on-Yarra before taking the trek west to take up position as chief winemaker with Deep Woods and Flying Fish Cove. Having earned a reputation as one of Margaret River's most talented winemakers, Lane pulled together a young and enthusiastic team to establish Swings & Roundabouts. Drawing the highest quality Sauvignon Blanc and Semillon from estate vineyards, the fruit is gently processed to achieve maximum flavour profiles and aromaticness. Early bottling is a key element to ensuring that the wine retains freshness and vivacity.
 
Pale green hue. Lifted fresh crystalline sharp fruit that's perfectly clean, succulent Sauvignon Blanc freshness with a dry Semillon background. The Apulian shoreline has been visited for millennia by raiders and traders who plundered for booty or traded for profit. The Greeks and returning Crusaders brought grapevines from the east, Chardonnay arrived much later as local growers imported plantings from Le vignoble de Bourgogne. Apulia is surrounded on three sides by sea, the maritime climes stimulate vines and infuse grapes with the prevailing brinyness of salty winds. Just perfect for Chardonnay. A crisp fruit forward Chardonnay that smells of Mediterranean and tastes like the fruit of paradise.

Salento Peninsula is the celebrated heel of the Italian boot, it enjoys a salubrious Mediterranean climate with mild winters and long, hot, dry summers. Chardonnay vines prefer warmer climes, hilly clay and limestone terrains cooled by prevailing breezes. These are the conditions of Salento Peninsula in a nutshell. Chardonnay grapes are picked at full physiological ripeness and softly pressed at the Tormaresca cellars. Musts are chilled to 10C and cold settled for a natural clarification, vinified in controlled fermenters at a moderate 16C for optimal extracion of rich fruit esters without any unnecessary uptake of phenolics. Batches are treated to a term of unoaked maturation before assembling into the finished wine.
 
Light yellow, greenish huets. Predominantly fruity nose with crisp apple characters, citrus fruit rinds, floral notes, acacia flowers and hawthorn. Mouthfilling palate of freshly cut orchard fruit flavours, peaches and applejack, mineral notes and savoury chalkiness, well balanced and lingering on a finish of oyster shell and light balsamic notes.

To make the best wine possible, one needs to control all aspects of grape and wine production. Totara is just such an operation, crafting wine to the most exacting standards, a complex assemblage of fruit from a number of good vineyards that lie within the subregions of Marlborough. Inoculated by a combination of yeasts and treated to a cool temperature controlled fermentation, with some extended lees contact to flesh out the palate. The final wine is vinified with as little intervention as possible, the aim being to preserve nature's own balance and vitality of fruit. Bottled unwooded and unoaked, Totara is fashioned to be a clean, refreshing wine with revitalizing fruit characters and well balanced acidity.

A new wine by one of the Riverina's leading estates, it'll excite those who are venturing out for a lighter style with less alcohol. Through early harvest and skilled vinification, the award winning Trentham team have fashioned a luscious young white with only 8.5% alcohol, two thirds the strength of a normal wine. Grapes are harvested early in the vintage from vines which are specially trained, throughout the cool of early morning, at the precise juncture where sugar levels are low and flavour development has peaked. Grapes are crushed, chilled and gently pressed, the juices are settled and fermented to dry. Young, vivacious and completely unoaked, Two Thirds is bottled early to retain freshness. Alcohol 8.5%

A generously flavoured Marlborough wine which has claimed highly coveted accolades at the Air New Zealand Wine Awards. Tylers Stream is a boutique operation which continues to grow from strength to strength. Completely unoaked, in easy drinking styling, it sings of kiwifruit and lychee. Many of the contributing vines surround the winery itself, whence the Tyler Stream flows closely by. Tylers Stream is vinified from grapes grown to the Wairau Valley, off vines planted to relatively young riverbed soils that generally are stony, well drained and quite silty. The long cool growing seasons of these highly favourable microclimes, as characterised by warm sunny days and cool nights, achieve fruit with good natural acidity and clean, fresh flavours. Soil profiles, vineyard practices and levels of fruit maturity at harvest all contribute complexity to the finished wine. Tylers Stream is crafted by Andrew Hedley from parcels of choice Sauvignon Blanc, fashioned into a clean and forward drinking, unwooded fruit driven styling without any exposure to oak.
 
Like it's namesake, Tyler's Stream gleams in the glass, a crystal clear pale straw. A deliciously vibrant, fruit packed entry with fresh, lifted, fully ripe aromas. Intensely pungent with asparagus, petulant characters of freshly cut grass and smacks of green vegetable. Lively palate of pineapple and gooseberry, ample citrus, tangy with lime before a clean, lingering finish.
