A fully engaging Riesling with alluring perfumes and elegant structure, from sites in the Pipers Brook and Tamar Valley of northeast Tasmania, an inspiring interpretation of the steely, complex wines of Alsace. This style of Riesling bridges the gap between the traditional Aussie which proffers citrus, chalkiness and calico, as opposed to their French counterparts which exude floral scents and offer refined, fruity palate structures.

$3399each $407DOZEN EACH DOZEN The Pipers Brook vineyards are characterized by idyllic growing conditions. Grapes are encouraged to retain all the delicate but ripe, crisp varietal fruit flavours. Tasmania's cool climate when combined with close planting over gravely soil can yield a fine and delicate Riesling wine. Crop levels are maintained at low levels by bunch thinning to increase the intensity of flavours. Bunches are hand harvested throughout the early morning hours and cooled before an immediate processing to capture and retain the vivacious expression of the vineyard. Following the press, musts remain on skins to extract optimal flavours. A long cool ferment encourages retention of fresh fruit flavours while enhancing the bouquet.

Colour is a pale lemon. Lifted, perfumed nose with floral notes and traces of Asian tropical fruits. The palate is elegant and refined yet powerfully concentrated with traces of tangy citrus and tropical flavours, the overall balance is crisp and dry with a light skin tannin structure and soft mineral tones lifting the finish. In its youth the wine is superb, but this is a Riesling of substance which will develop beautifully.

From parcels of toothsome Tasi Traminer, selectively harvested off the pick of fully mature vines. Bunches are destemmed and treated to an overnight soak before a course of well chilled ferments on gross solids. A stretch of rest on fine sedimentery lees tightens the palate and softens the tangy white grape tannins. The adorable auras of rose petal, pot pourri and fragrant caravan spice, juicily ripe quinces, orange fruit gums and a beam of sunshine. It's the topical tryst of Traminer that's full of flesh and bedecked with oodles of more moreish Turkish delights.

The textural excitement and arcadian funk of a mostly whole bunch pressed Pinot Grigio. A minor part of the harvest is separately picked and destemmed for twenty days of ferment on skins, gently hand plunged every other day for a modicum of extraction. Batches are pressed off skins and assembled into the finshed wine before a requisite spell of maturation on fine lees. Nashis, pears and bright persimmon spice, her palate is plush and generously fleshed but held firm through fine grape tannins and lacy acids, mouthfilling of pears, applejack and aromatic white floral.

There are two places of the most profound provenance along Coal River Valley called Belmont and Richmond, just a short drive northeast of Hobart. Both are a part of the early Australian experience, places of great historical import, sites that were selected during first settlement on the basis of their fertile endowments and promise of pastoral opulence. The vineyards Cooinda Vale and Butchers Hill were trained to yield a restricted harvest of the most exclusive Tasmania Riesling. Its prominent nose of indulgent perfumes, white jasmines, lemon zest and peach, a mesmerisingly mandarin palate, moreish and mineral.

Port Phillip Estate builds on the superb cool ripening conditions of Mornington to craft beautifully flavoured Burgundian styles of wine. The viticultural program of Port Phillip at Red Hill on the Mornington peninsula produces low yields of high quality Chardonnay, which best display the flavour intensity of such an exceptional site. An exquisitely balanced and structured cool climate Chardonnay, with creamy grapefruit characters up front and supple oak very much in the background.

Parcels of Chardonnay are hand picked after reaching optimum ripeness, off vines aged an average of twenty years, trellised to vertical shoot positioning. Fruit is whole bunch pressed directly to a selection of new and seasoned French oak barriques, where it is treated to a natural vinification without the addition of any yeasts. Once fermentations have ceased, the parcels are sulphured to prevent malolactic, retaining all the freshness of natural acidity. This intense Chardonnay wine is matured one year on sedimentery yeast lees, for finer, more elegant structure and texture.

Bright light lemon hue. A delicate nose of grapefruit pith, green apple and lime leaf, hazelnuts and cream. The palate is mineral and dry, linear and pure, with savoury acid crunch defining the varietal character, excellent intensity and length, with an underlying hint of savouriness. Grapefruit and lime fruits persist, a subtle ginger spiciness leads to a focused, chalky saline finish.

The windsept climes around Portsea Estate are heaven sent for the production of stately Chardonnay, defined by their elegant structure and juicy, maritime minerality. The terroirs here are made so highly auspicious by a sub strata of extensive limestone deposits, overlaid by a legacy of free draining, calcareous humus soils. Delicate stone fruit aromatics and citrus spice, made savoury by slate mineral richness and a term of toasty French oak, Portsea's refreshing acidity carries the fruit with finesse, Mornington Chardonnay of wonderful length and fine silky textures.
