Tumbarumba is one of Australia's most exciting cool climate, high altitude viticultural districts. Penfolds has worked with Chardonnay here since the early 1990s. Attractive ripe citrus flavours develop in the grapes, while hanging onto delicate acidity, translating into a wine with excellent balance and finesse. The Bin 311 style typically expresses a mineral acid backbone, complemented by barrel fermentation and maturation in seasoned oak. The hand harvested grapes are brought to the winery in pristine condition. Minimal filtration is employed, preserving the elegant fruit flavours. The finished wine is matured several months in a selection of prior use French oak barriques.
 
Pale golden hue. Immediately, delicate aromas of spring flowers and lemon blossom abound, underpinned by nuances of nougat/ biscuity lees derived complexity, concluding with traces of freshly squeezed lemon drops. A fine and elegant palate showcasing white peach and nectarine stonefruit, finishing with a lovely wet river stone minerality providing wonderful persistence of flavour.

The development of Bin 51 Eden Valley Riesling marks a new chapter in a long history of Penfolds trail blazing endeavours in white winemaking. Penfolds has established and fostered Eden Valley vineyards which are entirely specialized for the yielding of world class Riesling grapes, suitable for flagship wines with the capacity for long term, elegant ageing. A subregion of the Barossa, Eden Valley is approximately 450 metres above sea level. The Penfolds vineyards are located on particularly lean soil structures. The higher altitudes mean a cooler growing season, ideal for the aromatic varietals, Riesling in particular. Bin 51 spends three months at rest before being bottled early to retain varietal elegance.

The modern style of Australian Chardonnay, drawing on Penfolds extensive vineyard resources, Max's guarantees the drinker a thoroughly enjoyable taste of Adelaide Hills Chardonnay at its very finest. From an almost perfect Riesling vineyard, careful pruning, sorting and selection, ensures that only the healthiest grapes are included. One of Australia's perennially feted Riesling, from fruit picked off old vines on Petaluma's Hanlin Hill Vineyard, planted in 1968 to the most easterly slope and highest aspects in all of Valley Clare. Late picked for optimal flavour development, yet paradoxically elegant and dry, the ideal choice to accompany grilled whiting, cornish hen or the traditional Coquilles St Jacques.

Established by Brian Croser in 1976, Petaluma are one of Australia's most eminent labels and artisanal crafters of flagship white wines. Hand picked grapes are transported to the Petaluma winery in Piccadilly Valley and processed immediately. Bunches are de-stemmed, the berries gently crushed, chilled to less than 5C and treated to a Willmes tank press. The free run juices are cold settled in tank and clarified without filtration. This bright, clear juice is then racked into fermenters and inoculated to a choice Petaluma yeast. A cool fermentation at 10C to 13C ensues over the next several weeks, at sugar dryness, the finished Hanlin Hill is chilled before a gentle filtration to bottle.
 
Light, pale straw in colour. Lovely bright floral aromas of lemon blossom and passionfruit are backed up on the palate by pristine, intense lemon/ limes, with some crunchy apple thrown in. Slatey minerality, a hallmark of the Hanlin Hill Vineyard for three decades, combined with high natural acidity to produce a wine that is very drinkable in its youth, while offering all the qualities of a great, long lived Clare Valley Riesling.

Hand picked Riesling is delivered to Petaluma for immediate processing. The bunches are de-stemmed, crushed and chilled to less than 5C then treated to Willmes tank presses. The free run juice is cold settled for a natural clarification then racked to fermentation tanks and inoculated. Fermentation is monitored over several weeks at temperatures of 10C to 13C rising to 17C over the last few grams of sugar. The wine is chilled to below 0C and the yeast allowed to settle. A gentle filtration retains all the fruit, dulcet aromas and lavish flavours.
 
Pale golden straw. A delicate, floral wine displaying minerality and lemon lime perfumes. Forward, mouth filling and generous, exceptional depth of layered fruit and distinctive characters abound, a seductive mouthful of bosc pear and white peaches, lime and green tea flavours. The passionfruit, pear and apple expressions are backed up by lovely intense lemon-limes with a slatey, minerality that lingers long and dry upon a highly polished finish.

Petaluma assembles Chardonnay from an archive of superior blocks in Piccadilly Valley, all are fortuitious microclimes, blessed by slow ripening conditions, very similar to Chardonnay's ancestral home in La Bourgogne. These splendid sites are closely planted and fastidiously managed through strict regimens of shoot and fruit thinning, to achieve the most meagre yields of peerless quality Chardonnay.

Grapes are all hand picked, a portion are whole bunch pressed, the balance are gently destemmed, chilled and crushed. Following several days days of cold settling, most of the partially clarified juices are filled to a high proportion of new Dargaud et Jaegle French Vosges oak barriques and hogsheads for vinification. Upon completion to sugar dryness, barrels are racked and inoculated through Petaluma's own native bacteria. The unique bugs present at malolactic impart a lovely creaminess and contribute textural mouthfeel. Batches are treated to regular lees stirring battonage over the course of several months, before being racked and rested for the final assemblage.
 
Bright, light straw colour. Abundant white peach and nectarine aromas, gentle toasty smoke. A creamy textured palate, refreshing acidity contributes zing to support the distinctive, nutty sweet fruit characters, leading to a dry finish without hardness. A very textured wine with lovely lingering acidity in a drink now style which will evolve beautifully, one of nature's wonders from Piccadilly Valley.

Peter Lehmann named Margaret after his wife, she is also an enthusiast of Semillon and outspoken advocate of all things Barossa. Small amounts are stored and matured at Lehmann's Tanunda Cellars for the discerning wine enthusiast who appreciates the delicious, rich, full flavoured characters of bottle aged Semillon. Margaret is crafted from the very best Semillon of vintage, precious parcels from a 1923 planting owned by the Fiebiger Family at Vine Vale and a 1936 planting owned by the Scholz family at Light Pass in the heart of the Barossa.

Peter Lehmann rightly espouses Barossa Semillon as a unique style, the estate is justly rewarded with a resource of the choicest vineyards. Lehmann has always had enormous faith in Barossa Semillon but it has been sorely challenged over the past thirty years. The commitment stands and some very old Semillon vines have been preserved. Released as a five year old, Margaret is a fruit driven, deliciously dry white which reflects Lehmann's passion. Grapes are picked early and vinified at lower temperatures for a fortnight, clarified and bottled immediately upon completion, unwooded and unoaked, followed by an extended cellaring.
 
Vibrant gold, tinges of green. Lively bouquet of lemon zest, lanolin and beeswax, lemongrass aromas and citrus acidity belie its age. Youthful and fresh, paradoxically shows remarkable complexity after five years in bottle, a zesty, tight mineral acidity, an effusive layered palate, pleasingly dry before an elongated, zesty finish. Peter Lehmann is an international sensation at Riesling, having been declared Best Riesling in the World no fewer than five times at the International Wine and Spirit Competition in London. Named for Andrew Wigan who has been the maker of every Riesling bottled under the Peter Lehmann label since the very beginning, Wigan is a testament to Andrew's success within Australia and the international show circuit. From low yielding Eden Valley Riesling vineyards, the grapes are picked early and chill fermented for a fortnight. Upon completion, Wigan is treated to clarification and bottled immediately, followed by five years ageing under the Peter Lehmann cellars.

The Pewsey Vale property was first planted to Riesling by Joseph Gilbert in 1847. The site was later purchased by well known grazier Geoff Angas Parsons, who in 1961 invited his friend Wyndham Hill Smith to jointly develop the historic vineyard. They believed the site could produce delicate Rieslings in the Germanic style. High in the Eden Valley's low fertility, grey and sandy loam soils, a prolonged ripening late into the cool autumn season develops recognizably consistent flavour profiles, today known as classic Pewsey Vale.

Over a century and a half of wines have flowed from the superlative Pewsey Vale vineyard. From a clone planted in the Eden Valley during the 1800s, traceable to some of the original vine cuttings brought into Australia by James Busby. Any new plantings are propagated from the original vines. Pewsey Vale is not an easy vineyard to manage. Lean and hungry soils which limit the vigour of the vines, the high altitude and the vineyard's specific microclimate have necessitated the adoption of specialised viticultural management. The property itself is an idyll of gently undulating hills, fifty hectares of which are under vine, nestled close to Pewsey Vale Peak, just west of Eden Valley town centre.
 
Pale straw, green hues. Intense fruit aromas of talcum, crushed stone and lemon lime fruit with a hint of overlaying dried herb. The palate shows great length and depth with lime, a hint of white flowers and fresh rosemary, finishing with a fresh natural acidity that balances the intensity and minerality. Flavours evolve elegantly, toast, orange blossom and honey can be expected, while retaining the classic fresh citrus lift and palate weight of Pewsey Vale.

The quality of fruit from Pewsey Vale Vineyard, higher up the contours of Eden Valley, is a reflection of altitude and low fertility, grey, sandy loam soils which prolong ripening late into the cool autumn. This longer season develops unique flavour profiles which are classic Pewsey Vale. Contours is Pewsey Vale's flagship, held back for five years under the estate cellars. The grapes themselves are picked from the oldest vines, established to contoured rows in 1962. This exceptional wine already shows signs of bottle development immediately upon release.
