Sauvignon Blanc is planted on near perfect Terra rossa soils, providing an ideal level of nutrient and water retention. Vines are significantly influenced by the cooling sea breezes of the Southern Ocean and it's associated climate. Nearby plantings of Norfolk Island pine (Araucaria heterophylla) which grow to over 200 feet provide an impressive, dominating influence over the surrounding landscape and the vines. Grapes are selectively harvested, full protective handling is employed to avoid any oxidation or browning. Juices are clarified, inoculated and vinified at lower temperatures. Upon completion, components are assembled and bottled immediately to maximise retention of fresh fruit characters.
 
Pale yellow straw olour. Lifted, floral bouquet with fresh vibrant tropical fruits. Medium bodied palate, lush tropical characters, gooseberry and subtle herbaceous notes that are so distinctive of Sauvignon Blanc, balanced by a refreshing acid mineral spine and persistent chalky finish.

Palliser's vineyards in Martinborough are trained to achieve low canopy densities whilst exposing the fruit to maximum amounts of sun. Combined with judicious leaf plucking, this produces the distinctive fruit flavours in the wine. Reliable dry autumns increase the intense flavours, and low cropping levels are the result of cool windy spring weather. When the grapes are judged to be at their optimum maturity, they are harvested and vinified to retain the inherent fruity qualities of the finest Sauvignon Blanc. A backbone of estate grown fruit is vinified, partially to native yeasts, in chilled fermenters alongside parcels from good local growers, followed by four months on sedimentery lees to build complexity.
 
Brilliant pale straw with light green hues. The bouquet is full, open and voluminous with fresh and powerful passionfruit aromas along with gooseberries, lime fruit and flinty minerals that blossom. Dry to taste, the palate has layers of rich, pungent passionfruit and grapefruit flavours with ripe capsicums and fresh herbs that fill the mouth. A fine textural thread provides line and length, leading to a soft, richly nuanced finish.

Palliser Estate enjoys a microclimate and terrain like no other. Harvests of Sauvignon Blanc grown to warmer Martinborough terroirs are generally more fruit forward, round and silkier than the racier South Island siblings. Pale straw colour with youthful green hues. Full nose with voluminous aromas of pungent passionfruits, gooseberry and lime, lifted with some fermentation esters. Dry to taste, flavours of passionfruit, tropical fruits and English gooseberries, a little restrained and tight in expression. Bright and fresh, leading to a dry, minerally finish. Paracombe vineyard is nestled on a plateau 425 metres above sea level. Soil is lean with ironstone, buckshot gravel and quartz, an interesting remnant from an ancient riverbed. These characters along with minimal irrigation contribute a strong influence in wine style and flavour. Vines on the Paracombe estate are meticulously cared for, taking advantage of the morning sun for optimum fruit ripening, most are planted facing east. Fruit is harvested over four separate picks, predominately from the Drogemuller's Paracombe vineyard and specialist Adelaide Hills growers. Special aromatic yeasts achieve a wine of good flavour, balance and definition, with excellent natural acidity.

The vineyards of Pouilly are 200 kilometres south of Paris, on the right bank of River Loire. Domaine Pascal Jolivet operate eight hectares of Pouilly Fumé around the villages of Tracy and Les Loges. Soil types vary greatly, Les Loges is very chalky, contributing body and length to the wines, Tracy is rich in silica, adding fruit to the palate and bouquet. Grapes are sorted by hand and crushed, each vineyard parcel is separately handled. Juices are treated to a long and slow vinification through the action of wild native yeasts in temperature controlled fermenters. Upon completion, components are left on sedimentery lees for four to six months, infusing complexity while building structure and adding texture.
 
Light straw lime hue. A clean nose of nashi fruits, lemon and thyme enhanced by luscious mineral gunflint notes. Focussed, decidedly mineral palate over layers of piquantly ripe fruit, wet stone and quartz, before a penetrating, acid line finish, resurging minerality and whisp of smoke. Superb as aperitif, a delight alongside good food, crustacea or goat cheese recipes.

Pascal Jolivet are all about the refreshing wines of Valley Loire, from good vineyards in Sancerre and Pouilly Fume, the aim is to allow fruit to speak for itself, while encouraging the suppleness of Sauvignon Blanc to convey its eloquence. The vineyards of Sancerre are planted to hill countryside on the left bank of River Loire, right across the water from Pouilly Fume, where surrounding forests create a mild and favourable mesoclime. A delicious wine with revitalizingly dry fruit character and bracing minerality, to accompany shellfish and goat cheese soufflé.

The philosophy at Pascal Jolivet is to allow nature to take her course and permit the wine to make itself. The estate's three Sancerre vineyards are grown to three different terroirs, Les Caillottes is planted to very chalky soils, Les Terres Blanches is on calcareous soils, atop the highest hill in the west, the vines at Silex are grown to a mixture of limestone and flint. Every parcel from each vineyard is separately handled, wild natural yeasts initiate a long cool vinification in controlled fermenters, to enhance the character and charm of Loire Valley Sauvignon Blanc. Upon completion, components are held on sedimentery lees for several months, infusing complexity while building structure and adding texture.
 
Bright straw hue. Clean, crisp nose of citrus and lemon flower, brine, wet stone and flint. A powerful palate in perfect balance, smooth linear fruit characters are defined by splendid minerality. Pegasus Bay Sauvignon Semillon

Waipara River passes through a town of the same name on its course to Pegasus Bay, thirty minutes north of Christchurch. The vines enjoy a sheltered position near the sea, where warm days, cool nights and a dry autumn, result in a very prolonged ripening period. Pegasus Bay believe that patience and attention to detail are central to growing the most powerful fruit and vinifying the most compelling wines. Concentrated and rich, a backbone of tangy mineral and acid helps to dry out the palate all the way across to the zippy finish, lingering, spicey and dry.

Sauvignon Blanc is harvested in stages to provide a spectrum of flavours, while the Semillon is left on the vines as long as possible to develop ripe, fully mature characters. Grapes are gently pressed and the juices are naturally inoculated through the action of localised indigenous yeasts. Sauvignon Blanc is vinified in fermenters at lower temperatures to retain the vibrancy of fruit, Semillon is treated to a course in old oak barriques, enhancing structure, richness and length. Upon completion, components are rested on yeast lees (sue lie) for several months to add luxurious textures and flavours, before an assemblage determined by tastings, into the final wine.
 
Light straw hues. Exotic aromas, tropical spice and turkish musk, passionfruit and paw paw, supported by an array of citrus fruits and wild thyme. Good concentration in the mouth, refined and elegant with a spine of tingling minerality and crisp acidity. Semillon adds mid palate weight, the French add Semillon to Sauvignon Blanc for longevity, Pegasus Bay is designed to evolve engaging complexity.
Pertaringa Scarecrow Sauvignon Blanc

Sauvignon Blanc is the first grape variety of vintage to ripen. Local fauna have a naturally sweet tooth and find the juicy, sugar filled berries irresistible. Scarecrows are an old solution to a timeless problem but the delinquent criiters have never learned to distinguish the artfully stuffed rags from the real thing. Those grapes which survive the pilferage are crafted by the Pertaringa team into an engagingly aromatic wine with clean, crisp palate, the ideal choice for service alongside moreton bay bug tails dressed in paprika butter.
