The Yarra Ridge team have captured the distinct expression of Yarra Valley Pinot Noir. Upper Valley fruit, known for it's aromaticness and delicacy, has been combined with components of richer and riper grapes picked off vineyards lower down the valley floor at close proximities to the Yarra Ridge wineworks. Standards for inclusion into Yarra Ridge Pinot Noir are set to the most exacting specifications. Fruit must express luscious berry characters and distinctive varietal flavours while displaying ripe tannins and favourable acid profiles. Grapes are cold soaked to extract the maximum colour and flavour. Inoculation and vinification is followed by small parcels completing their fermentations in French oak. All parcels underwent full malolactic which softened any harsh acids. Each vineyard parcel is kept separate throughout the winemaking process and reviewed prior to the final assemblage. Yarra Ridge was treated to an extended maturation in a combination of tight grained French oak barrels.
 
Dark cherry red in colour. Lifted aromas of strawberry and spice, a touch of cranberry, earthiness and hints of subtle oak, leafyness and whisps of cedar. Ripe plums and subtle five spice flavours on the tongue, the palate is soft and generous with doses of sweet and sour red and black cherries, the smoothest tannins are fully integrated with background oak.

Grapes are predominantly sourced from good vineyards in the Yarra Valley. Yarra Ridge retains a large inventory of reliable growers, ensuring the highest quality of fruit. Many viticultural innovations have been introduced, among them are trellising systems such as the geneva double curtain, Scott Henry and Lyre. A combination of relatively low yields and limited rainfalls translate into smaller harvests of higher quality Sauvignon Blanc. A cool vinification takes place in refrigerated fermenters with choice yeasts. Juices are kept separate from skins to reduce phenolics and ensure clean varietal flavours are preserved. A prompt and early bottling retains all the fresh fruit characters.
 
Pale straw with green hues. The nose displays bright, fresh aromas of snow pea and green bean, fragrances of honey and spice, hints of nettle, lifted citrus and fresh cut grass, followed by rich tropical nuances. The exciting bouquet leads onto a refreshing palate, showing citrus and gooseberry, flavours of lychee combined with a zesty acidity to produce a refreshing and elegant wine. Yarra Ridge is always outstanding as a food wine, easily mated to Al fresco cuisine, just perfect on it's own or with good company.
Yarra Yering Agincourt Cabernet Malbec

Agincourt is one of the more sheltered blocks at Yarra Yering, vines were established circa 1990 and yield the finest harvests of Malbec anywhere in the nation. Mostly Cabernet Sauvignon with a quarter of the gentle Malbec, grapes are all hand picked, crushed and destemmed into good old fashioned, half tonne open top fermenters, manually plunged twice daily and treated to extended time on skins for a softening of tannins. Batches are delicately basket pressed into seasoned French oak barriques for malolactic and twenty months maturation.

Dark scarlet red. Perfumed nose of cherries and bramble, dark currants and varietal leaf, a distinct herbaceousness which speaks of terroir. The classic Cabernet black and blue berry palate, black cherry and robust plum, cassis and leafy herbal notes, Malbec playing its part with inky robust fruit, vibrancy and ample tannins, exquisitely balanced.

Excellent Langton's Classification. The timeless Claret style of red wine, this is the bespoke blend on which Yarra Yering's reputation was built and continues to endure. Almost deceptively, they drink well in their youth, yet are known to evolve for decades. Half Cabernet, a fifth of Merlot, the balance in Malbec and Petit Verdot, all harvested off the original 1969 unirrigated estate plantings at Gruyere in Yarra Valley. Beautifully balanced and integrated, the fruit of an iconic vineyard, such delicacy within a sleeping powerhouse of precision.

Eighty acres are planted to noble varietals and port wine grapes. The dry grown vines are pruned to yield no more than two tons per acre. No.1 Dry red is dominated by Cabernet Sauvignon, with Malbec, Merlot and Petit Verdot. Grapes are hand picked into specially designed stackable plastic buckets. Crushing takes place within two hours of picking through the old Amos crusher/ destemmer, then poured into Dr. Carrodus' extraordinary fermenters, which are essentially stainless steel lined tea chests on wheels. Should cooling be necessary, ice blocks are used. A third of this wine is left on skins for three weeks before being transferred to barrel. Dry Red No.1 is matured for up to two years in completely new French oak.
 
Deep, bright ruby coloured wine. isplays a concentrated essence of red berry fruits and blackcurrant with an olive and mint background. Has a deep, structured palate that is interwoven with cedary, French oak characters. The ripe fruit and tannins run in unison along the entire palate.

Yarra Yering's Dry Reds are national flagships, based around complex varietal blends. Assigning the mercurial cepage of grapes a unique bin number, has liberated the winemaker to modify the mix as styles evolve. No.2 Dry Red is a perfumed, mostly Shiraz wine, rich and generous, co fermented with inclusions of Mourvedre, Viognier and Marsanne for vibrancy, suppleness and an extra dimension to the range of expression. Feminine and seductive, beguiling yet elegant, with long, lingering impressions of violets and eucalypt, cherries and spiced plum.

Dark garnet colour. Sweet ripe and plummy nose, vanilla spice and tobacco oak. Yarra Yering Dry White No1

Three quarters Semillon, the balance in Sauvignon Blanc, from fruit selectively hand picked and sorted off dry grown estate vines at Gruyere. Grapes are gently crushed to encourage skin contact and infuse flavour, batches are manually basket pressed with minimal settling time before filling to seasoned French oak barriques for primary ferments and a rich course of malolactic, followed by eleven months maturation. A generously proportioned Semillon Sauvignon of ample palate weight and profound generosity of oak developed fruit.

Straw yellow hues. A fruit salad of aromas, crisp green apple and tangy pineapple. The palate dominated by a citrus backbone and fleshed out with the texture of oak barrel ferments and malolactic. Yarra Yering Light Dry Red Pinot Shiraz

Inspired by the complex and eclectic diversity of noble French styles, intriguingly binding two distinct genres from Burgundy and the Valley Rhone, all done in a very Yarra Valley way. Dry Red No.3 is an elegant accord of hand selected fruit, picked off the 1981 Pinot paddock and 1995 Waterloo block. Half the Cuvée is Shiraz, treated to a whole bunch vinification and interrupted by a laborious destemming until completion of ferments. Components are filled to French oak barriques for nine months of age before assemblage into the final wine.

Sourced exclusively off the unirrigated eight acre block, established 1973 at the western extremity of Yarra Yering. Cool climate new world Shiraz starts here. A high inclusion of stalks and whole bunches are added back to the traditional half tonne open tea chest fermenters to lend juiciness plus extra cut and persistent tannins to the sweeping finish. Basket pressed and aged eighteen months in a high proportion of new French oak. A slight westerly aspect and propitious clay soils yield a wine that's a perfect foil for the feminine Dry Red No.2

Deep garnet red. Heady plum fruits and pretty violet aromatics interlaced with liquorice spice and hint of cracked pepper. Blood plums and cigar oak with a violet floral lift from the inclusion of stalk during fermentation. A joint venture between Champagne Veuve A. Devaux and Yering Station, vinified to complete Methode traditionelle, Yarrabank are one of Australia's most distinguished houses of fine sparkling wine. Fully bunch pressed as per traditional methods specialized for the purpose of crafting the finest sparkling wines. A complex and rigorous regimen of procedures takes at least three years to complete. Each bottle is treated individually from the time of tirage to release. The extravagant use of lees ageing, extended period of at least three years resting on it's own sediments in bottle before disgorgement, has contributed marvelous complexity and heightened flavour profiles to the finished wine.

After extended bottle development on yeast lees, Yarrabank is finally released from beneath the Yering cellars, the progeny of an ongoing joint venture between Champagne Veuve A. Devaux and Yering Station. Made to strict Methode traditionnelle, Yarrabank is widely recognised as one of Australia's flagship sparkling wines. No expense is spared and a number of rigorous measures are taken throughout every step of vinification. Taking at least three years to complete, each bottle is treated individually from the time of tirage until release.

A roughly equal cepage of Chardonnay and Pinot Noir from the best vineyards in Upper Yarra Valley. The Devaux winemaking team bring with them generations of experience in the production of fine Champagne. Clones P58, I10v3, I10v5 and Mendoza are hand picked off vines aged twenty five years, yielding 2½ tonnes hectare, into small baskets, before whole bunch pressing using only the first 500 litres/ tonne of fruit. The must is inoculated to yeast type DV10 and followed by Methode traditionelle vinification. Disgorged on demand after four years on lees and treated to liqueur dosage, a component of reserve wines aged in 5,000 litre foudres is added to the cuvee for consistency and complexity.
 
Pale wheat straw hue. Lovely gala apple and lemon meringue nose. Cracked yeast with a great freshness. An incredible line of intensity, grapefruit and lime provide a wonderful backbone of minerality balanced by a really fine mousse. A creamy middle palate thats persistent, clean and focused before a refreshing, zesty mineral finish. The acidity is delicate and delineated, a hallmark of the Yarrabank style.
