Made exclusively of Sauvignon Blanc, the trick is to set aside a few parcels of grape for extended skin maceration, infusing just the right amount of tannin complexity. Shiraz is a varietal with which Taltarni has excelled from the very start, no real mystery as it's grown to some of Victoria's best purpose built vineyards. By applying traditional winemaking with modern Australian viticulture, secure the pick of Heathcote's harvest to create an amazingly complex, profoundly flavoured and seriously structured wine. Just perfect with steak or old world style meat Ragu, its vibrant assortment of juicy, cool ripened plum and spiced fruit flavours, are framed by a length of supportive, amicable tannins and supple, integrated oak.

Heathcote is an outstanding winegrowing region recognized internationally for world class Shiraz. Warm days and cool nights mean Taltarni's vineyards enjoy a rare confluence of climatic conditions which enable production of robust reds, most notably the Shiraz. Grapes are gently crushed to extract a measure of fresh flavours while releasing softer tannins, a component of whole bunches are included for complexity, musts are treated to a term of cold soak for optimal extraction of colour and tannin. Fruit is vinified for a week or more on skins to a small batch style in traditional open top fermenters, followed by completion of malolactic and a year or more in a selection of French and American oak.
 
Deep plum red hue. Luscious bramble, plum and white pepper fragrances are complimented by spices and mocha oak notes. The palate is well structured, layered with soft plummy fruit flavours, raspberry and a hint of toasty cigar box from the oak, seasoned by cool climate spice. A truly varietal Shiraz wine supported by fine tannins and brimming with the fine complexity for which Taltarni are renowned.

Taltarni's great legacy is deeply rooted in the unique combination of low yielding gravelly loam soils of its vineyards and the temperate climate of the Pyrenees, producing wines hallmarked by eloquent regional charm. Crafted exclusively from harvests of estate grown fruit, picked off a canon of western districts sites, where the vines are old and ruddy, precious and parched. Bunches are destemmed into small open top fermenters for eight days vinification. Upon completion, batches are treated to a traditional basket pressing into a selection of seasoned and new French oak barriques for malolactic and eighteen months maturation.

Identifying the right proportions for each wine and assembling the finest parcels are a labour of love for the Taltarni team. The final wine represents flawless balance and impeccable structure while delivering the requisite voluptuousness, richness and full bodied profile that is distinctly Pyrenees. Grapes are harvested to optimal flavour development and balance of ripe tannins. Batches are kept separate, destemmed and crushed to fermenters for vinification on skins over the course of two or three weeks, followed by an old fashioned basket press into a high proportion of new French oak barriques. After completion of malolactic, components are assembled and returned to barrel for eighteen months.
 
Deep brick red colour, darkened robes. Intense blackcurrant bouquets and distinctive Pyrenees mint notes, integrated toasty, mocha and cigar box of oak. A superb balance of fruit freshness, blackberries and spiced plum, cocoa and carob notes over a length of firm but silky tannins which are recognizably Taltarn. Sauvignon Blanc is harvested throughout the chill of early morning hours to preserve optimal freshness. Harvested early for the zesty citrus characters and slightly later for blackcurrant passionfruit flavours. Fruit is whole bunch pressed to optimal skin contact, batches are fermented at lower temperatures to retain fragrant aromatics. Components are aged on sedimentery yeast lees while treated to regular battonage, infusing elegance and subtle complexity. A short term of age is followed by assemblage into the finished wine.
 
Pale straw, bright green hues. Fresh and lively nose of lemon and passionfruit notes, guavas, herbaceousness and straw. The refreshingly zesty natural acidity is perfectly accompanied by persistent, sweet fruit flavours, grapefruits and lime, a textural mid-palate from lees contact. An outstanding combination of vibrant tropical fruit and green vegetable characters, before a refreshingly crisp finish.

Taltarni Sparkling Shiraz

There are few marques, better placed than Taltarni to create the ultimate indulgence in sparkling burgundy. Shiraz is crushed into small open top fermenters for a week of vinification, hand plunged, regularly pumped over and gently pressed into French oak barriques for a term of age. Its fragrant blackcurrant mousse precedes an edifying spice and chocolate palate, muscular Pyrenees tannins and a sheath of dusky oak balance the indulgent sweetness of fruit. A moreish purple wine to match with fruit dressed poultry, cherry duckling or the traditional festive pud.

The noble cépage of Chardonnay, Pinot Noir and Meunier, finished with the inclusion of parcels from Tasmania's prestigious Clover Hill vineyard, a vintage sparkling of amazing textures and immeasurable palate length. Since inaugural release in 1978, each bottle of Taltarni Brut has been fermented and matured on yeast lees according to Methode traditionelle. Taltarni were one of the founding wineries in the new age of the Pyrenees. The original sixty acres of vines were planted by David Hohnen, who later went on to found Cape Mentelle. John Goelet selected Taltarni Vineyards after a worldwide search of the finest winegrowing regions. The chosen site, with its red clay, quartz and sandy loam soils and cool continental climate is idyllic for the production of premium quality sparkling wines. The aim within the vineyard is to increase fruit concentration and flavour intensity whilst retaining superb length and balance of natural acidity. Taltarni is fermented in its own bottle and matured on yeast lees, achieving a final complex and sophisticated sparkling wine style.
 
Pale straw hues, fine mousse and persistent bead. A creamy, delicate and refreshing sparkling wine with a lifted bouquet of lemon, honeydew and nougat. The time on yeast lees has achieved a lovely, textured mid palate and a smooth lingering finish, the ideal aperitif, refreshing and clean. A joy with hors d'oeuvres and smart canapes.
Taltarni Vintage Rose

Tache is a French word meaning stained, the rare method used by Taltarni to fashion their sparkling Rose. The moniker Brut Tache can also be read as a metaphor for hard yakka, a reference to the effort required to grow quality grapes and make good wine. Taltarni assemble their finest fruit, picked off vineyards dedicated to yielding grapes exclusively for superior sparkling wines. Cuvée Rosé's pretty pink hue and elegant complexity are achieved by adding a dash of red liqueur to the tirage wine at disgorgement.

Taltarni became known for producing extraordinary sparkling wines very early on in their history. The estate's highly specialised vineyards in the Pyrenees contribute the backbone of fruit for Brut Tache. An assemblage of the holy trinity varietals, Chardonnay, Pinot Noir and Meunier, are drawn from mature vineyards, mainly in the premiere viticultural precincts of Victoria and Tasmania. Taltarni focus on encouraging full development of fruit, good varietal definition and refreshing natural acidity. Fermented in its own bottle and matured on yeast lees according to true Methode traditionalle, Cuvée Rosé is a sophisticated wine with mouth filling berry flavours that's simply beautiful to behold.
