De Bortoli PHI Chardonnay

Lusatia Park is one of the most distinguished vineyards in Yarra Valley, choice clones of closely spaced vines were planted to the north facing Block A in 1995, they yield a spectacular harvest of intense, finely structured Chardonnay with each vintage. Fruit is hand sorted and whole bunch pressed, racked to barrel for a wild yeast ferment and completion of malolactic, followed by a course of intermittent lees stirring until the spring. A minerally, highly nuanced style of Chardonnay, creamy textured with a gentle acidity, mouthfilling and briny in the old world way, delicious.

De Bortoli PHI Pinot Noir

Stephen Shelmerdine never applies any pressure on his Pinot vines to perform. Handling fruit and wine by gravity, knowing when not to interfere, indigenous yeasts and a subdued use of oak, all help to render the style. The challenge is to preserve aromas and to let the palate form by itself. A pure, small batch Pinot wine, elegance and finesse are the defining characters, matched by fine texture and good structure. The result is subtlety over sunshine, terroir over intervention and delicacy over extraction, fashioned to be beautiful to drink.

Lusatia Park Block B is one of the more aromatic Pinot Noir sites in upper Yarra Valley. Pinot clone MV6 vines are cane pruned to twenty five buds and shoot thinned at the 10cm or 15cm stage to yield eighteen 80gm bunches each. All grapes are hand harvested, hand sorted and destemmed into six tonnes open fermenters, a portion of whole bunches are included. Natural vinification ensues as the cap recieves an occasional plunge toward the end of ferments. After two or three weeks on skins, batches are pressed, settled overnight and gravity filled to French oak casks for up to a year's maturation. Barrels are racked once again and filled to bottle without fining or filtration.
 
Full ruby colour. Intense Pinot nose with purity and fragrance, alluring wild red fruit aromatics. Complex varietal characters coalesce on a palate of superb concentration, a Pinot palate of texture, plumpness and softness. Elegant, minerally and fine, a finish of extended fruit, lingering silky tannins and the piquant sweetness of freshly pitted cherry.

Fruit from the superlative Dixons Creek property continues to be the focus for tremendous single vineyard efforts by De Bortoli. There is a common thread in the detail and texture of wine from these older sites, as influenced by the vagaries of growing season and clime. Some splendid blocks of vine were established decades ago, today they yield the finest harvests in Yarra Valley. Fashioned from the pick of fruit on Section A5 at Dixons Creek, an extraordinary Chardonnay of prominent peach, melon and fig characters, a wine of focus, power and restraint.

Vines are planted north to south, soils are highly mineral siltstones which produce a most interesting wine. Blocks which can enjoy less exposure contribute the greatest detail to the final wine. When optimum flavour in the ripening berries is achieved, grapes are hand picked, whole bunch crushed and pressed to extract some good phenolics for texture and minerality. Juices are cold settled for clarity, racked to a selection of seasoned French oak casks and treated to a wild indigenous yeast fermentation. Lees are stirred regularly from the late autumn until early spring. Components are matured for up to a year in a selection of prior use 225 Litres French oak barriques.
 
Light straw with green hues. White flowers and hazelnut, complex mineral notes, citrus and fig, flintyness and peach. Gently textured, slightly savoury palate of refined phenolics, hazel nuttynesss and crisp nervy acid, good drive and length. Long flavoured, textural, a bliss with John Dory or gnocchi and creamy sage sauce.
De Bortoli Section A7 Riesling

A wonderfully auspicious site for Riesling, Block A7 was planted to a propitious stretch of calcarous Humevale siltstone soils at Dixons Creek vineyard in 1987. Crafted to the timeless old world styling of its siblings along the Mosel and Valley Rhine, the fruit of Block 7 is all hand picked and treated to a long cool ferment, followed by a term on sediment lees to build delicate structure and infuse complexities. Elegant and fine, with a flourish of orange blossom and floral notes, its lithe, tightly focused palate is laden with mineral, defined by its balance and gentle lime acidity.

De Bortoli Section A8 Syrah

A detailed and defined, old world style of Syrah, eloquently perfumed and decidedly delicious, crafted from hand picked fruit grown to the original 1971 plantings at Dixons Creek in Yarra Valley. A striking wine of focus, excellence and concentration, articulating the opulence of a world class Shiraz. Meticulous hand sorting at harvest ensures that only grapes of the silkiest tannins and most refined fruit characters are included. A profound red wine to match with the finest gourmandise, red wine garlic braise or ripe Taleggio.

Vines at Section A8 of Dixons Creek are strategically planted in a north to south row orientation. All grapes are hand picked throughout the cool of morning into 8kg buckets and transported to the estate wineworks. Fruit is hand sorted as a combination of whole bunches and whole berries are gravity tipped into open fermenters. Fruit is vinified through the action of wild indigenous yeasts, while treated to a regimen of foot plunging and hand remontage to gently extract colour and flavour. After three weeks of maceration and ferment, musts are pressed and settled before gravity filling to a combination of 500L oak puncheons and larger format 2300L casks for malolactic and a year's maturation.
 
Medium garnet red colour. Fragrant and aromatic, brightly detailed, perfumed characters, wild strawberries and graphite, minerals and cherry spice. A fine, plump and structured palate, brimming with dark berry flavours, smokeyness and pepper spice, supported by a whisper of seasoned oak and textural, grainy tannins. The Syrah of choice to accompany piquant fennel pork sausages with lentils and maghrebi spice.
De Bortoli Section D4 Nebbiolo

Nebbiolo makes the most magnificent wines, complex and engaging, bold of tannin, effusive and eloquent, full of charm. De Bortoli have established a closely husbanded parcel of vine on a section of Dixons Creek vineyard, which emulates the fortuitous confluence of microclimes of Nebbiolo's spiritual home in Piedmont. Grapes are all hand picked and sorted into small open fermenters for three weeks of maceration, followed by fourteen months in 500 litres French oak butts. Brightly lit with graphite, mineral and spice, textural tannins in support of its plump, savoury fruits palate.

Delatite Dead Mans Hill Gewurztraminer

Gewurtztraminer was one of Delatite's first plantings, it has continued to deliver the most memorable, award winning vintages. Deadman's Hill is widely regarded as the benchmark in Australia, the first Traminer ever to be selected for Qantas International First Class. Deadman's Hill is a hundred metres higher than the other vineyards at Delatite and has been dry grown for most of it's life. It was the first part of the vineyard to be converted to Bio Dynamics and like all other blocks at Delatite, it is completely pruned and picked by hand.

The steep ironstone slopes and crisp mountain airs at Delatite provide an idyllic mesoclime for the spicey Gewurtztraminer, which demands slow ripening to develop fully. Hand pruned, hand picked and patiently sorted by the winemakers themselves, fruit is whole bunch pressed, the musts are chilled and left in the press for a term of cold soak. Some of the settling lees are retained within the clear juices as indigenous yeasts begin a wild ferment, slow and cool for a month. A component is treated to vinification in larger format oak vats for richness and complexity. Batches are held on lees for with periodic stirring to infuse yeast autolysis, bottled with minimum fuss for the retention of pure varietal charm.
 
A straw coloured wine. The aromas are a melange of cinnamon and clove, rose petal, lychee and musk which follow through to the richly flavoured palate. Flavours of hazelnut and toast, cardammon, lychee and ginger biscuit, clove and turkish delights. Decidedly Traminer, a wine which deserves to be appreciated today alongside crustacea, Asian recipes and all spiced faire.
