Chrismont excel in the vinification of pure, high altitude varietal wines, into the most articulate expression of terroir and growing season as it influences the character of grape, through a synergy of traditional and modern techniques. The variations from one vintage to the next are particularly relevant in a higher altitude, cool climate growing region such as King Valley. Parcels from premiere estate vineyards at Whitfield and Valley King, are assembled into a juicily fragrant Muscat wine of generous palate length, sound structure and winsome varietal charm.

$2199each $263DOZEN EACH DOZEN Very low disease pressure and perfect slow ripening conditions are the norm around the Chrismont vineyards. Fruit is harvested during the early hours of morning and directly transported to the winery. Grapes are loaded into a membrane press where the delicate free run juice is allowed to drain using low pressures with minimal movement to reduce phenolic extraction. The juices are allowed to settle over forty eight hours to clarify before being racked for fermentation. With a meagre amount of sugar remaining, the vinification is arrested and the wine allowed to clarify. Individual batches are selected to achieve the right balance of texture and flavours before assembling into the final wine.

Light straw with greenish hues. Honeysuckle, lemon and lime on the bouquet. Citrus and tropical fruit on the palate are carried by a great acid structure giving good flavour length, an attractive wine while young, will continue to develop subtle toast and honey complexity. An exquisite white wine, perfect as the most congenial aperitif, a delight alongside dover sole.

The major force behind the vigor of Chrismont wines are the healthy soils, extended growing seasons and slow ripening climes of the vineyards, which are positioned optimally at the heart of spectacular King Valley. With climates and landscape so similar to those of Piemonte, Tuscany and Alsace, the King Valley's long summer days enable Pinot Grigio to achieve complete flavour ripeness, infusing La Zona with the richness of baked apple flavours, citrus perfumes and warming marzipan characters. $2399each $287DOZEN EACH DOZEN In the days when wine production was rapidly expanding and tobacco was in decline, contracts were offered to grow grapes. The first blocks of Chrismont were transformed from tobacco to grape vine in the 1980s. As a mutation of the deep purple Pinot Noir and the greenish yellow Pinot Blanc, Pinot Grigio runs a spectrum of fruit characters that vary according to terroir and clime. Fruit is vinified in chilled fermenters to maintain varietal freshness, upon completion and following a term of repose for clarification, components are assembled along with a small percentage of reserve wine for added complexity and extra interest.

Straw hues, copper highlights. The nose carries lifted aromas of pawpaw and white peach with an underlying layer of spiced custard and cream. Ripe pear and melon are predominant with subtleties of quince and cooked apple. A luscious rounded front palate with flavours of quince, custard apple and toasted almond, acid is firm and structured before a dry and lasting finish.

Chrismont have been growing the King Valley's finest fruit and crafting exceptional wines for over three decades. Somewhat of a specialist at the high altitude styles, Chrismont have fashioned an immensely popular sparkler with pleasingly drying palate in the delightfully food friendly, fruit forward character of Proseccos from the Friuli region of northeastern Italy.

With a similar climate and landscape to Piemonte and Tuscany in Italy, long summer days enable the grapes to achieve genuine flavour ripeness which gives lovely fruit richness to the wines, while cool nights allow elegant cool climate characters to emerge. La Zona are designed to drink any day, at any time, for any occasion. Crafted to the true Methode traditionelle which ensures richness of palate and fullness of texture, La Zona has been treated to a second fermentation within it's own bottle.

Pale straw coloured with green hues, a lovely bead and fine mousse. Nose of melons and citrus, green apples, almond and honey. The front palate bursts with dry, delicately flavoured bubbles. A crisp but not overly acid palate supports the bubbles through to the finish. A great aperitivo and ideal accompaniment to oysters, scallops, and crab. Drink young and fresh.

A luscious candy hued wine, unlike any other, by virtue of a unique cépage Tempranillo and Sangiovese. La Zona may be pink but she's no frivolous lightweight. Grapes are all picked by hand off fully mature vines, fifteen years of age, grown to labour intensive trellising at an altitude of 260 metres. The juicy strawberryness of Tempranillo and savoury cherry charm of Sangiovese, make a comely coloured wine with captivating ripe fruit flavours and exciting berry perfumes, bring La Zona along for a soiree with good friends and a feast of tantalizing nibbles.

$1999each $239DOZEN EACH DOZEN The beautifully undulating Pizzini property lies at the heart of the agriculturally rich and diverse King Valley. The site was transitioned from tobacco farming to viticulture in the late 1970s and has since become synonymous with the highest quality wines. Rosato wines are made from red grapes with a minimal controlled contact on skins. Traditionally, old world winemakers would wake at dawn to begin picking fruit, by noon, the grapes had been crushed and juices treated to maceration on skins. The red hued batches would be drained after twelve hours of exposure, right around midnight, thus Rosato came to be referred to as vino della notte, the wine of the night.

Vibrant cherry lipstick. Bouquet is lively, lifted berry fruit and jam with hints of rose petal, violet and confectionary. A palate of bright berry fruit, lingering cranberry and strawberry characters, a full flavoured pink wine offering a powerful mid palate with crisp acidity and a persistent finish. Enjoy whilst young and chilled alongside duck salad or garlic prawns.

Such a substantial wine is Sangiovese, so named for it's kinship to the blood of ancient Gods, mythically speaking of course. La Zona engages you with its deep, vibrant red colour, redolence of black cherries and spice on the bouquet, followed by a brazen savouryness which makes it perfect with robust cuisine. The acidity balances well with the generous round, fleshy front palate and velvety tannin structure which carries through to a dry, firm finish. A perfect food match for La Zona would be a slowly cooked Tuscan recipe such as Stufato alla Fiorentina.

Deep red colour. The nose is rich with dark baked cherry and blackberry aromas, enhanced by toasted oak influence. Fruit filled and generous on the front palate, the finish is full of preserved plum/ berry characters and dry savoury tannins. Medium bodied with moderate acidity, La Zona is a perfect match for slow cooked pork belly, lamb shanks or cotechino.

Just like a scene out of the old world, you can see happy families amongst the picturesque landscape of King Valley, tending vines and sampling grapes. The annual Spring festival in November brings everyone together for a fantastic jubilee of events. Tempranillo grows magnificently here, yielding fine wines as fleshy and structured as the classics from Rioja and Ribero de Duero. Harvests of fruit, brimming with rich bramble favours and lined with gentle tannins are crafted into a delicious new world style, just perfect to match with flavoursome Mediterranean fare.

$2499each $299DOZEN EACH DOZEN Parcels are harvested throughout the cool of night from Chrismont's splendid King Valley vineyards and treated to a pre-ferment cold soak maceration. The crushed musts are inoculated with choice yeasts and vinified in controlled fermenters at temperatures peaking to 25C. Components are given a fortnight on skins for optimal extraction of good colour and tannin. The wines are aged in a selection of seasoned oak barriques for up to a year before assembling into the finished wine.

Deep red black colour, crimson hues. A touch of soft chocolate, dark plum and violets with a hint of confectionary and background cedar. Dark fruit richness of blackcurrant and mulberry, supported by velvety, plumy textures. A rich, ripe weighty palate in excellent balance over fine grain, dry tannins and an intense, rounded and persistent finish. Enjoy with duck breast, rissoles or lamb.

Hillcrest Road was established to one and a half hectares I10V clone Chardonnay in 1993, with a view to creating a limited release, flagship Mornington sparkling Cuvée. Over two decades later, the cosseted vines are yielding a harvest of the most exquisitely balanced fruit, intensely tropical in nature, invigorate by the most refined chalky acidity. Treated to the luxury of full Methode traditioneele, an extravagant three years bottle maturation and remuage on yeast lees, brimming with the finest mousse and articulating the opulence of autolysis richness.

The chilly early mists, exhilerating maritime breezes and undulating terroirs of Mornington are heaven sent for the realization of Burgundy styled Chardonnay wines. Half the plantings at Hillcrest Road are Chardonnay, one and a half acres of a single clone, originally intended for an elite sparkling Cuvee. Such is the quality of fruit, its remarkable concentration of flavour and flawless acidity, choice parcels are set aside for a pure varietal wine. Structured, seamless and intense, single vineyard block Mornington Chardonnay of the highest order.

$5199each $623DOZEN EACH DOZEN Painstakingly husbanded to excruciating standards of viticulture, Hillcrest Road Vineyard is dry grown and closely cropped at less than two tonnes per acre, for vintages of extremely limited yields. It is a small, pampered site which affords the Circe team a rare indulgement of attending to each vine as an individual, focusing on every detail and maintaining a meticulous vigil on the soils. The quality of fruit speaks for itself, as there are no substitutes for footprints in the vineyard. Those parcels of hand picked and hand sorted Chardonnay, which merit inclusion into a pure varietal wine, are treated to an old world style of vinification, extended exposure to gross sedimentery lees and luxurious French oak treatments.

Dan Buckle and Aaron Drummond are Mornington born and bred. They work at the illustrious Mt Langi Ghiran but find time to share the husbandry on a precious three acre vineyard on an elevated northeast ridge at Red Hill South. The Messrs Drummond and Buckle take a decidedly Burgundian approach to processing their Pinot Noir, ferments of exclusively whole bunches are foot stomped over the course of a week before filling to small oak casks. Structured and eloquent, pastoral and intense, small batch, superior vineyard Mornington Pinot at its finest.

$5199each $623DOZEN EACH DOZEN Vines were established on a chilly slope of deep red basalt volcanic soils along Hillcrest Road in 1993. Closely cropped at a little over one tonne per acre, the property yields a frugal harvest of awesome Pinot Noir. The tight, small bunches, physiological ripeness and immaculate skins are ideal for traditional whole bunch winemaking. The fully stemmed fruit is treated to a course of maceration, as ambient yeasts initiate a week of ferment, followed by several days of boots on pigeage. Batches are pressed into a selection of French oak barriques for completion of malolactic and a year's maturation on full gross lees without any racking, to preserve the integrity and eloquence of a tremendous site.

Purple scarlet red. Fragrant cherry ripe aromas, red apples and rhubarb notes, sasafras and anise spice. A multi layered palate of wild piquant raspberries, red licorice wick and frais de bois, dark anise tannins and sasafras oak in support of the textural, weight of fruit. Structured, dimensional and refined, its lifted finish resolves on a length of mineral and pebble pastoral complexity.
