One of Bendigo's salient marques, a wine of extraordinary personality, built around the prominent tannins of Cabernet Sauvignon, cushioned by the plummy softness from a smaller component of resplendent Merlot. The philosophy at Blackjack is to not interfere with the vinification, in a sense, to let the grapes and vintage do the talking. The overall character is determined by a unique combination of season and environment. A medium weighted, complex dry red with essential varietal definition and seamless fusion between fruit, tannins and oak.

Blackjack vineyards are just south of Bendigo at the foothills of Mt Alexander, within the renowned orchard pastorals of Harcourt Valley. The climes are fortuitously cool, perfect for slow ripening and the complete development of intense flavour in wine grapes. Traditional open top fermenters and good old fashioned hand plunging are essential, making wine at Blackjack is hard yakka but it's a labour of love. American oak is the material of choice, fruit is vinified in traditional open fermenters, hand plunged and aged in the best 225L barriques for two years, no finings and minimal filtration are applied at bottling.
 
Garnet colour. Fully fragrant with blackberries and dusty cigarbox aromas, black olive and dried herbs alongside blackcurrant and red berry. A medium weight palate with sweet, clear cassis fruit, concentrated over a muscular framework and substantial tannin length, before a firm, fleshy finish. A fist of fruit inside a velvet glove, perfect alongside succulent roasts or tender pink lamb.

Blackjack Majors Line Shiraz

Major Thomas Mitchell surveyed the area around Bendigo in 1836, excited about his discovery of bountiful pastorals, initiating a migration of squatters and settlers into the august terroirs of Harcourt Valley. Renowned for its arcadian splendour and largess of orchard fruit, Harcourt is wine country, home to some of the most outstanding Victorian vineyards. Major's Line brings the fruit of Harcourt together with choice Blackjack parcels from Heathcote and Bendigo, plum, allspice and juicy black fruits over a trundle of succulent, toothy tannins.

Blackjack Shiraz

Black Jack was a yankee sailor who jumped ship and joined the Castlemaine goldrush of the1850s. He remains a part of local follore. The McKenzie and Pollock families named their property after the adjacent road which commemorates the legend of Mr. Jack, planting vines on the site of an old apple orchard in the 1980s. Redolent of spice and savoury fruits, sweet and juicy on the palate, filled of plums and ripe dark berries over a backbone of fine, sweet and toasty American oak, opulent and lingering, the defining articulation of Bendigo Shiraz.

Blue Pyrenees were established through a no expense spared approach, by two of the wine world's most revered, accomplished and resourced estates. A superior standard of viticulture and exacting vinification techniques were the priority, they remain at the very core of the Blue Pyrenees raison d'etre. An assemblage of exclusively estate grown Cabernet Sauvignon and Merlot, Malbec and Shiraz, artfully crafted into a seamless style of vigorously perfumed fruit, finely polished tannins and fragrant, flattering oak.

Deep ruby red, purple hues. Fragrant red berries, forest floor complexity, classy cedar oak and Shiraz spice. A generous mouthful of mulberry fruit up front, complimented by forest flavours of mint leaves, mushroom and cedary oak, the rich yet seamless palate is framed by abundant, yet fully integrated fine grain tannins, all wrapped up in a traditional old world style, lingering on a length of fresh berry leaf notes.

The production of Methode traditionelle has been an essential part of the winemaking at Blue Pyrenees for many years, the original raison d'être. Established 1963 by the Champagne houses of Charles Heidsieck and Krug, an adherence to the transcendent French influence of the founders is central. In 1992, the Blue Pyrenees team decided to experiment with hand picking their fruit, under floodlights, in the middle of the night. The results were amazing, a most memorable vintage of outstanding quality, Midnight Cuvée was born.

Although hand picked fruit is often most desirable for the production of premium quality juices, day time temperatures in Australia can mean that the grapes will often be quite warm when received into the press after a day's picking. Nowadays the Blue Pyrenees team select the best fruit parcels, whilst still on the vine, to be separated out from the rest and picked at night by hand to generate the juices which will become Midnight Cuvee. Although very laborious and time consuming, the rewards are evident in the glass. Midnight Cuvée is made entirely from estate grown fruit, predominantly Chardonnay for elegance and refinement, with a touch of Pinot Noir. Alcohol 12.5%
 
Brilliant pale straw hues, a fine gentle bead. The aroma is delicate and complex, yeast autolysis characters of freshly baked bread complimented by citrus fruits and hazelnut. The bright, green apple flavoured palate exhibits a fine acid backbone which enhances the fresh doughy yeast notes and fine refreshing effervescence. A wine of great elegance, balance and finesse, a long and clean, lingering finish.
