Ripening conditions provide the varietal definition and aromatic qualities which make Margaret River so unique. Grapes are picked to modest levels of sugar baume, capturing fine aromas, crisp primary fruit flavours and good, clean acid structure. The balance is is cold soaked and pressed early off skins to preserve soft luscious mouthfeel. Batches are handled to a traditional oxidative regimen, aimed at softening the palate and rounding out tannins, while infusing perfume richness and introducing layers of complexity. Upon completion of primary ferments and a course of malolactic, components are matured for a year in a selection of the finest, mostly well seasoned French oak barriques.

A pioneer of the region, Vasse Felix first released Cabernet in 1972. Intense and statuesque, yet elegantly structured, it is the single most enduring Margaret River wine. Cabernet Sauvignon is a robust varietal that consistently achieves a high quality wine when grown to the Margaret River's temperate ripening conditions and deep, well drained soils. All parcels are vinified separately before eighteen months maturation in a combination of new and older French oak barriques, followed by individual batch selection and the final assemblage.

Deep maroon colour, slight purple hue. Stunningly complex perfume, exhibiting a level of integration that makes the wine difficult to pull apart. The grapes are smaller than normal, sugar ripeness is accelerated, natural acid levels are always fortuitously favourable to the bright expressions of fruit. Grapes are all harvested by hand, chilled and gently whole bunch pressed, followed by an unclarified, wild fermentation through the action of natural indigenous yeasts in fine French oak barriques, a course of malolactic, battonage and lees stirring derive texture, richness and complexity. Components are treated to nine months in oak before the final assemblage.

All batches are fermented wild without any added yeasts or malolactic to retain splendid natural acidity, stirred throughout nine months maturation, allowing the lees to impart further complexity to the texture and palate weight. Small batch fermentation ensures the character of these precious old vines is preserved in the final wine. Grapes are crushed into fermentation vessels, vinification, macerations and aeration are combined in a way to ensure the gentlest extraction of colour, tannins and true expression of fruit. Each parcel is separately handled and matured. After sixteen months in a selection of new and seasoned French oak barriques, each barrel is rigorously appraised to identify the best of the best.
