Wines are meant to complement life's experiences, to express the quality of good fruit without being overworked by the maker. To this end, Pitchfork is fashioned to an approachable modern styling. Cabernet and Merlot grapes are destemmed and fermented separately in open vessels with extensive pump over cap management to aid colour and flavour extraction, as well as optimize tannin development. The aim is to construct a wine with loads of fruit flavours and background tannin, providing structure without astringency. Components are pressed off skins and matured in a selection of new and seasoned French oak barriques, developing complexity and softening the tannins without dominating the fruit.
 
Youthful red hue, excellent depth of colour. The bouquet speaks of ripe berry fruits and chocolate mints which are the hallmark of Margaret River Cabernet. Good concentration of ripe plum, mocha and licorice with elements of blackberry, violets and cherry, all serving to form an impressive, fruit filled, fleshy middle palate. A soft round mouthfeel with ripe tannins to complete the finish.

The Hay Shed Hill Vineyards were established in the 1970s, to be eventually acquired by Madfish and Howard Park winemaker Michael Kerrigan, just before Christmas 2006. He was already familiar with the Hay Shed Hill property and its potential. Kerrigan could not pass up the opportunity to redevelop one of the region's finest sites, to make wine that's as good or better than any in Margaret River. Choice parcels of estate grown Chardonnay are treated to a chilled vinification in controlled fermenters, bottled promptly upon completion, unwooded without exposure to oak. A low temperature, protective regimen is employed throughout the process, preserving the exquisite Margaret River character.
 
Pale straw with green hues. The full array of Margaret River Chardonnay aromaticness without the influence of oak or lees, a bright, clean tropical fruit bouquet of stonefruits and nectarine. Hay Shed Hill was planted way back in the 1970s to the varietal grapes which have put Margaret River on the map, Semillon and Sauvignon Blanc. The mesoclimes which rejuvenate the vines at Hay Shed Hil in Willyabrup are generally excellent with generally favourable temperatures and ample sunshine, simply superb grape growing conditions. Sauvignon Blanc typically displays lovely tropical aromatics, the Semillon grapes are endowed with sweetly scented grassy, fresh fruit characters. Pitchfork is completely unwooded and bottled promptly after vinification. A low temperature, protective regime is adopted throughout the process, preserving the finer fruit characters of the crisp and aromatic varietals.
 
Pale straw/ green hues. Lifted Semillon/ Sauvignon aromas, lemon/ lime, gooseberry and pine, green mango and passionfruit with a distinctive grassy edge. Intensely flavoured, clean and zippy, offering fresh flavours of lemon, passionfruit and pineapple, before a clean linear finish. A match to Chinese scallops, gujons and quick fried fish.

If you want to make good wine you must start with good fruit from a good vineyard. The right varieties need to be planted in the right place. Shiraz is selected from premier Margaret River sites selected on the basis of quality and consistency, the objective being to produce an elegant wine with complex aromas and characters, fine textures and a solid structure. Fruit is vinified in open fermenters and pumped over twice daily, aiding the extraction of varietal expression and tannin development. Maturation in a combination of new and seasoned French oak barriques for a year has achieved a wine of sophistication, completely integrating the fruit, oak and tannins while contributing structure and complexity.
 
Vibrant, youthful appearance, a good depth of colour. Ripe cherry and plum fruits with chocolatey notes and exciting spice the bouquet. The palate displays good depth of fruit concentration, ripe, sweet fleshiness in the middle palate and an extension of good varietal flavours. Redgate Bin 588 Cabernet Merlot

The Redgate property is one of the southernmost vineyards on Margaret River, situated just three kilometres from the Indian Ocean. The family owned and operated wineworks at Redgate create impressive red wines endowed with the characteristic nose and flavour of Margaret River. Bin 588 was first made in 1988 and has always included harvests of grapes sourced from good local vineyards. This stylish cepage of Merlot with Cabernet Sauvignon is medium bodied with a delicious burst of of ripe dark fruits, plum and blackberry aromas.

Redgate was planted in 1977 by the Ullinger family, it remains family owned and operated to this day. Redgate's vines are grown on a ridge of ancient soils less than three kilometres from the Indian Ocean. This unique combination of soil and maritime clime enable Redgate to nurture fifty acres of vine for the production of true boutique wines. Crafted around a backbone of estate grown fruit, components of Bin 588 are vinified separately to drynesss, followed by transfer to a mix of one and two year old French and American oak barrels for completion of malolactic and a year's maturation. Barrels are treated to rigorous fining trials to achieve the finest balance and determine the final assemblage.
 
Deep ruby colour with purple hues. Black fruits and plum, blueberries and sweet spice dominate the nose, a delicious burst of ripe dark fruits and mulbery seasoned by subtle spice. Blackcurrant, jubes and fruit pastilles drive a palate that's framed by savoury oak and soft velvety tannins. There's plenty of action to Bin 588, a combination of fine texture and fresh bright fruits, worthy of ageing while ultimately fashioned for immediate drinking.
Redgate Sauvignon Blanc Semillon

A fresh and vibrant blend of grapes which has become the signature of stylish Margaret River white wine. Redgate grow six blocks of Sauvignon Blanc and five of Semillon on gravelly loam clays less than three kilometres from the Indian Ocean. Each is nurtured from budburst until harvest to maximise flavour development, the vines are encouraged to yield fruit that's worthy of Margaret River's elder wineries. A vigorous bouquet of lively citrus fruit and freshly cut grass precedes an effusive palate of passionfruit and lime sherbet flavours, all competing for attention.

Sauvignon Blanc and Semillon are harvested block by block throughout the cool of night, as optimal flavour character, sugar levels and acid are achieved. Fruit is crushed and pressed, juices are transferred to tank and chilled below 10C for settling. Each parcel is processed individually and transferred again to leave sediments behind. Juices are warmed to 13C and inoculated with a specially select yeast. Fermentations can last up to a fortnight before chilling and permitting yeast and other grape solids to settle. Parcels are then ajudicated for assemblage following a series of trials to identify those components most compatible for inclusion, filtered and clarified for bottling.
